Abstract
PURPOSE: To prepare a jelly substance without heating, etc., only by leaving to stand a mixture obtained by adding a calcium salt to an aqueous solution of polysaccharides produced by Alcaligenes faecalis.
CONSTITUTION: Alcaligenes faecalis is clutured in a liquid medium under aerobic conditions, and the produced polysaccharides are recovered from the medium and dissolved in water to a concentration of about ≥0.01wt%. The solution is converted to a jelly substance by adding a soluble calcium salt thereto. Any water-soluble calcium salt can be used as the salt. Presence of other compounds such as sugars, amino acids, or natural substance such as fruit juice, in the polysaccharide solution does not affect the jellifying tendency of the solution.
