CONSISTE EN INTERACCIONAR A UN PIGMENTO CON UN CATION POLIVALENTE INORGANICO Y UN HIDROCOLOIDE QUE TIENE GRUPOS CARBOXILO, EN UN MEDIO ACUOSO ALCALINO Y ENTRE 5 Y 80GC, PARA FORMAR UN COMPLEJO ESTABILIZANTE DEL PIGMENTO. EL PIGMENTO SE ELIGE ENTRE VULGANXANTINA, BIXINA Y HORBIXINA; EL CATION POLIVALENTE INORGANICO SE INTRODUCE EN EL MEDIO ACUOSO MEDIANTE LA AGREGACION DE UNA SAL ELEGIDA ENTRE SALES DE CALCIO, MAGNESIO Y ZINC Y EL HIDROCOLOIDE SE SELECCIONA ENTRE GELATINAS, GOMAS Y CELULOSA.
