Definitions

  • the present invention relates to a transport and / or Sales packaging for and with food / n, which for Eat hot and are intended in the packaging should be heated according to the preamble of expression 1.
  • the invention also relates to a method for cooking at least partially raw food in a container in one Microwave oven, the water content of Food as well as the construction of the vessel during the Heating a steam jam situation with overpressure in the vessel formed.
  • the cooking bag for dry and in this condition to mention raw foods that have a relatively long shelf life, which, such as Rice, usually in water before consumption be cooked. So that the brewing water comes with the food cook bags are usually with a variety small holes or otherwise porous.
  • the idea can be taken from NL-A-93 01 592, food in raw-fresh Condition in a heat-resistant transport and / or sales package on the Bring market which the consumer in the stove or a microwave oven can put to prepare the food. Information on training the However, packaging is not made.
  • EP-A-0 462 767 describes a microwave-compatible packaging for Food, in which a cover film with an adhesive on the edge of a Shell is glued.
  • Column 1, lines 55-57 mentions that the Adhesive connection withstands a temperature up to 204.4 ° C.
  • packaging that is at such a temperature be heated up, develop a significant internal vapor pressure, and that therefore means must be provided which limit the pressure.
  • the packaging in a pressure chamber External pressure equalization is heated up to 140 ° C to the food to make it more durable.
  • the packaging is subjected to pressure from the inside not at all on the outside. For the actual warming to eat the Food is only mentioned a maximum temperature of 93 ° C.
  • US-A-4 987 280 relates to packaging for food with a Moisture content less than 5%, especially for salted, baked in fat or fried "snack foods" with a moisture content of less than 2%.
  • a Moisture content less than 5%
  • Packaging to integrate a bag with a liquid, which when Heating bursts and the development of just that much steam in the packaging allowed the temperature of the food to reach a maximum 149 ° C is limited.
  • the amount of liquid used is deliberately so small chosen (only a few grams) that the food does not through the steam be moistened and their original organoleptic properties how especially lose their crispness.
  • US-A-4 834 554 describes a transport and / or sales package for Food, which is provided with a valve arrangement, which is in a certain overpressure in the packaging, possibly even during the sales and transport phase, opens automatically and automatically again can close.
  • the valve arrangement consists of baffles welded foil sheets, the flow resistance determining opening is not well defined and which one under load like the aforementioned steam jam situation is also likely to be enlarged. At least one predictable, reproducible cooking result is with the described Packaging therefore not achievable.
  • US-A-4 640 838 relates to vapor-tight packaging for foodstuffs with agents for automatic ventilation of the packaging during the heating process in a microwave oven.
  • the funds consist of an order microwave absorbing particles, which in the heating process in a Microwave oven cause a local opening of the packaging, through which in steam can escape from the packaging. This opening is also not well defined and probably also increases under load. It will still mentioned that such packaging as vapor-tight packaging to be understood, which have a pressure relief valve as it is currently used for coffee packs.
  • a valve provided for degassing coffee packaging with a stable valve body is known from DE-A-31 25 496.
  • EP-A-0 198 362 names various materials as used for food containers used to cook and cook the food in a microwave oven can be.
  • the invention is a Transport and / or sales packaging for and with food / n created, where the food has a water content of at least 30%, the packaging made of a microwave-compatible plastic material exists, the packaging is provided with a valve, which is at a certain overpressure in the packaging automatically opens and is suitable is to limit and / or limit any overpressure that arises in the packaging reduce, the valve having such a low opening pressure that it can open during the sales and / or transport phase and the valve can close again automatically, and which thereby is characterized in that the flow resistance of the valve and the Packaging are designed with regard to their stability so that during a rapid heating in a microwave oven with a steam jam situation Overpressure and a temperature up to 150 ° C can be achieved that the Flow-determining opening of the valve a defined size has, which is under a load such as the mentioned steam congestion situation not enlarged, and that the food in the packaging is predominantly in raw fresh condition are included.
  • the packaging to use for raw foods and these in one To cook a microwave oven in the first place, although depending on it the specific consistency of the food, possibly a not inconsiderable amount of energy or power expended must become.
  • the valve is also in In this case, ensure that the packaging stands out even during rapid heating in one Microwave oven forming steam pressure and through it associated, possibly quite high temperature of the steam is not destroyed becomes.
  • the packaging according to the invention is therefore special for a preparation of the contained in minutes Food from raw to ready to eat Cooking condition provided and suitable in a microwave oven.
  • a piece of raw chicken breast of 200g can be in the Packaging according to the invention also in only about 3 1/2 Minutes to be cooked. A corresponding piece of raw fish fillet takes just a minute.
  • the valve is designed so that it is in the packaging during rapid heating in a microwave oven pro Steam generated time unit mainly due to its Flow resistance only comparatively slower from the Allow packaging to escape to the outside.
  • Suitable as a valve is e.g. one like it under the name WICOVALVE from the company Wipf AG in CH-8604 Volketswil is used for filling bags for roasted coffee and already with a slight overpressure of less than 5 mB opens outwards, but in the opposite direction it is good seals. After one caused by an internal pressure Opening closes the valve automatically when the Overpressure has dropped to a value of approx. 0.5 mb.
  • valve By these properties of the valve will also ensure that the overpressure that forms in the packaging when heated quickly and completely dismantle after heating and a possible deformation of the packaging, at least largely regress, so that the packaging in still hot condition immediately after its removal from the Microwave oven can be opened safely.
  • the selection and sizing of the valve as well as his Regarding flow resistance these must of course be on Size and stability of the packaging, type, properties, Water content and cooking behavior of their content as well as that of Microwave oven output heat output must be matched.
  • a The size of the packaging relative to the volume also has an impact of the foods it contains. Preferably all these parameters for each other for a specific product coordinated and optimized, further preferably for different foods, if possible the same packaging and the same valve can be used.
  • Heating power is preferably chosen to match Standard microwave devices can be set immediately. at Household appliances are e.g. 600 watts or 750 Watt. Microwave ovens for gastronomy can use up to 1500 watts operate. The cooking time is from dish to dish easiest to vary.
  • the one already mentioned has proven to be well suited Wipf valve because of its opening pressure as well Flow resistance are very well defined. It has one dimensionally stable valve body, in which a small membrane is arranged protected. In the bottom of the valve body, more precisely in of the valve seat area provided there, several are exact defined holes covered by the membrane incorporated. The holes are surrounded by annular grooves, which are used to hold a sealing oil.
  • the membrane is on the Valve seat surface by an anchor part under a certain Prestress held in a central part.
  • slide valves are too imprecise, in which two Foil walls of the packaging welded together and may also have a wavy embossing, that there is a ventilation channel provided with baffles.
  • the internal overpressure necessary to open this channel is not easily controllable and is unlikely to be under 20 mb especially if you take into account that the slides are made Stability reasons must not be too thin.
  • packaging is designed as transport and sales packaging it is possible to find the optimal one for a specific recipe Cooking time taking into account all other factors such as the Heating power, the physical properties of the chosen Packaging etc. by the manufacturer e.g. in preliminary experiments determine and indicate on the packaging so that the Not finding the right settings for the end user is left.
  • the size of the flow resistance of the valve finally also affects the Moisture content of the prepared food. Is the Flow cross-section too large, more steam can escape and is due to the lower temperature and the lower pressure requires a longer cooking time. This can it to an undesirable, at least superficial drying out of the food are coming.
  • the packaging is preferably a disposable pack for the designed for single use and should therefore be considered Manufacturing and use of materials be inexpensive. This leaves achieve oneself in particular by using one common, thin-walled plastic material e.g. in the form of deep-drawn trays and closed with a cover film or only at all from bags from a common Plastic film or the like.
  • the material be influenced by the high Melt temperature or otherwise in one for the Change food in a negative way. It must also be sufficient be dimensionally stable, at least so dimensionally stable that the Do not pack up to the ceiling or the walls of the cooking space one intended for use Expand the microwave oven and quasi the cooking space can fill out. This could be the means to limit pressure e.g. come into contact with a wall or the ceiling of the cooking space and it could obstruct the appearance of steam and in the The packaging may burst. microwave ovens for the household sector have only a usable height in Cooking space of less than 20 cm.
  • the material should also be elastically reversible if possible be so that the packaging during the heating and Overpressure phase does not get out of shape and any Deform deformations as completely as possible can. This requirement is particularly important for bowl-shaped containers, which may serve as a plate replacement should be, here it depends mainly on the bottom part.
  • At least the tray bottom should look like after heating and reduce the pressure load as flat as possible so that the The bowl stands up flat and does not wobble.
  • a suitable one Shaping the shell can cause excessive deformation additionally counteracted and / or a return to the original form can also be supported.
  • a The side walls can be corrugated, e.g. kind of more advantageous Accordion effect.
  • Polypropylene has one Melting point at approx. 160 ° C and can be continuously loaded up to 110 ° C In the short term, temperatures up to approx. 140 ° are possible.
  • CEPT only melts at approx. 264 ° C, but is much less elastic as polypropylene and goes after heating and the Pressure load also not quite as good as polypropylene its original form back. Otherwise, especially for Commercially available polyethylene used in food packaging is hardly suitable because even its high density version HD-PE already has its melting point at 135 ° C and thus neither Short and certainly not the permanent resilience in the through the present invention range.
  • Polypropylene shells are e.g. Wall thicknesses in the area suitable between 500 ⁇ m and 1000 ⁇ m. It gets below 500 ⁇ m critical to stability. Form above 1000 ⁇ m the deformations that occur during the steam accumulation phase not enough back.
