Claims (11)

  1. Dispositif destiné à la découpe en morceaux cunéiformes (27) d'un produit alimentaire (25) positionné sur une surface de base,

    par une bande transporteuse (13) par laquelle le produit alimentaire peut être déplacé par rapport au moyen de coupe (19) dans un sens de transport (A) rectiligne, à chaque fois une partie de la bande transporteuse formant la surface de base sur laquelle repose le produit alimentaire (25) à découper.
  2. Dispositif selon la revendication 1,
    caractérisé en ce que
    l'axe de pivotement (21) du plan de coupe est disposé perpendiculairement au sens de transport (A) sensiblement au niveau de la moitié de la largeur (33) de la surface de base.
  3. Dispositif selon la revendication 1 ou 2,
    caractérisé en ce que
    le plan de coupe du moyen de coupe peut pivoter autour de l'axe de pivotement dans exactement deux positions de pivotement discrètes, dans une pluralité de positions de pivotement discrètes ou dans des positions de pivotement variables.
  4. Dispositif selon l'une quelconque des revendications précédentes,
    caractérisé
    par un élément d'actionnement par lequel le moyen de coupe peut pivoter autour de l'axe de pivotement.
  5. Dispositif selon la revendication 4,
    caractérisé en ce que
    l'élément d'actionnement comporte au moins un vérin hydraulique ou pneumatique, au moins un levier, au moins un entraînement mécanique à came et/ou au moins une servocommande.
  6. Dispositif selon l'une quelconque des revendications précédentes,
    caractérisé en ce que
    le moyen de coupe (19) comporte un couteau qui est notamment agencé sous la forme d'une lame guillotine et/ou est retenu à l'intérieur d'un cadre (17).
  7. Dispositif selon l'une quelconque des revendications précédentes,
    caractérisé en ce que
    le moyen d'entraînement comporte une ou deux bielles.
  8. Procédé destiné à la découpe en morceaux cunéiformes (27) d'un produit alimentaire (25) au moyen d'un dispositif selon l'une quelconque des revendications précédentes,
    caractérisé en ce que
    au cours de phases respectives sensiblement alternées
    - d'une part le moyen de coupe (19) est basculé autour de l'axe de pivotement (21), et un morceau est découpé du produit alimentaire à l'aide du moyen de coupe, le plan de coupe du moyen de coupe étant sensiblement perpendiculaire à la surface de base, sur laquelle repose le produit alimentaire, et l'axe de pivotement (21) étant perpendiculaire à la surface de base,
    et
    - d'autre part le produit alimentaire est déplacé au moyen d'une bande transporteuse (13) d'une distance d'avance (29) dans un sens de transport (A) rectiligne par rapport au moyen de coupe (19), à chaque fois une partie de la bande transporteuse formant la surface de base, sur laquelle repose le produit alimentaire (25) à découper.
  9. Procédé selon la revendication 8,
    caractérisé en ce que
    le produit alimentaire est déplacé dans le sens du transport de distances d'avance (29) respectives sensiblement constantes par rapport au moyen de coupe.
  10. Procédé selon la revendication 8 ou 9,
    caractérisé en ce que,
    avant sa découpe, le produit alimentaire (25) est orienté et/ou centré par rapport au sens du transport et/ou mesuré et/ou pesé.
  11. Dispositif ou procédé selon l'une quelconque des revendications précédentes,
    caractérisé en ce que
    le produit alimentaire est parallélépipédique et/ou est une barre de fromage.
