Claims (12)

1. Fremgangsmåde til afgiftning af glutenproteiner fra korn, kendetegnet ved følgende faser: A. hydrering af kornene med vand, udført i et tidsrum på mellem 30 minutter og 3 timer ved hjælp af 500 ml vand for hver 100 gram korn; B. fjernelse af vandet fra kornene; C. mikrobølgebehandling af kornene, udført i et tidsrum på mellem et og tre minutter ved hjælp af en effekt på mellem 750 og 1500 Watt; D. nedkøling af kornene.
2. Fremgangsmåde til afgiftning af glutenproteiner ifølge krav 1, kendetegnet ved, at tidsrummet i trin A er ca. en time.
3. Fremgangsmåde til afgiftning af glutenproteiner ifølge krav 1, kendetegnet ved, at tidsrummet er ca. to minutter, og at den anvendte effekt er ca. 1000 Watt.
4. Fremgangsmåde til afgiftning af glutenproteiner ifølge krav 1, kendetegnet ved, at fasen til nedkøling af kornene udføres ved en temperatur på mellem 18 °C og 24 °C.
5. Fremgangsmåde ifølge et hvilket som helst af de foregående krav, hvor kornene er valgt blandt hvede, byg og havre.
6. Korn valgt fra gruppen af hvede, byg og havre, der kan opnås ifølge fremgangsmåden som defineret i krav 1-5, kendetegnet ved, at de er afgiftet for giftige epitoper af gluten.
7. Produkt, der kan opnås fra kornene ifølge krav 6, og som er valgt fra gruppen bestående af semulje, mel, morgenmadsprodukter og øl.
8. Korn og produkter ifølge krav 6-7 til anvendelse til at ernære mennesker med cøliaki.
9. Anvendelse af hvede ifølge krav 6 til produktion af semulje og mel til mennesker med cøliaki og mennesker, der lider af diabetes mellitus, type 1.
10. Anvendelse af byg ifølge krav 6 til produktion af øl, som er frit for giftig hordein.
11. Anvendelse af havre ifølge krav 6 til produktion af produkter, som er frie for giftig aven in.
12. Anvendelse af mel ifølge krav 7 til fremstilling affødevarer, som er egnede til mennesker med cøliaki, og som i smag og udseende ligner fødevarer, der normalt anvendes i middelhavskost.
