Abstract
Αποκαλύπτεται μία μέθοδος επεξεργασίας σπόρων κακάου που δεν έχουν υποστεί ζύμωση, που περιλαμβάνει τα βήματα: (a) προσθήκης νερού στους εν λόγω σπόρους κακάου που δεν έχουν υποστεί ζύμωση για να δημιουργηθεί ένα εναιώρημα• (b) υγρής άλεσης του εν λόγω εναιωρήματος• (c) υποβολής του εν λόγω εναιωρήματος σε μία θερμική επεξεργασία σε μία θερμοκρασία 70°C ή μικρότερη• (d) διαχωρισμού του εν λόγω εναιωρήματος σε μία υδατική φάση (βαριά φάση), μία λιπαρή φάση (ελαφριά φάση) και μία στερεά φάση, που η εν λόγω λιπαρή φάση περιλαμβάνει το βούτυρο κακάου ως ένα μείζον συστατικό και στερεά και/ή νερό ως ελάσσονα συστατικά και η εν λόγω στερεά φάση περιλαμβάνει σκόνη κακάου και νερό• και (e) ξεχωριστά επεξεργασίας των τριών φάσεων, το οποίο προαιρετικά περιλαμβάνει διαχωρισμό του βουτύρου κακάου από τη λιπαρή φάση, διαχωρισμό της σκόνης κακάου από τη στερεά φάση και διαχωρισμό του αρώματος κακάου και μίας πολυφαινολικής σκόνης από τουλάχιστον την υδατική φάση. Περαιτέρω αποκαλύπτονται μέθοδοι κατασκευή ενός κιτ κατασκευής προϊόντος κακάου και σοκολάτας ή σοκολατοειδών προϊόντων που περιλαμβάνουν μεγάλες ποσότητες θρεπτικά ευεργετικών και χρήσιμων συστατικών του καρπού του κακάου, όπως π.χ. πολυφαινόλες, αντιοξειδωτικά, βιταμίνες και/ή σάκχαρα, χρησιμοποιώντας την παραπάνω τεχνική.
