Abstract

a presente revelação se refere a um método para processar grãos de cacau não fermentados que compreende as etapas de: (a) adicionar água aos ditos grãos de cacau não fermentados para formar uma suspensão; (b) realizar moagem úmida na dita suspensão; (c) submeter a dita suspensão a um tratamento térmico a uma temperatura de 70 °c ou menos; (d) separar a suspensão em uma fase de água (fase pesada), uma fase de gordura (fase leve) e uma fase sólida, sendo que a dita fase de gordura compreende manteiga de cacau como um componente principal e sólidos e/ou água como componentes secundários e a dita fase sólida compreende cacau em pó e água; e (e) processar separadamente as três fases, o que compreende opcionalmente: separar manteiga de cacau a partir da fase de gordura, separar cacau em pó a partir da fase sólida, e separar aroma de cacau e um pó polifenólico a partir pelo menos da fase de água. revela-se adicionalmente métodos para fabricar um kit de construção de produto de cacau e produtos de chocolate ou tipo chocolate que compreende grandes quantidades de componentes úteis e benéficos de maneira nutritiva da fruta de cacau, tais como, por exemplo, polifenóis, antioxidantes, vitaminas e/ou açúcares, com o uso da técnica acima.
