Claims (13)
1. Komplet za proizvodnju čokolade ili čokoladi sličnih proizvoda, naznačen time što sadrži kakaov maslac, kakao u prahu, polifenolni prah i ekstrakte arome kakaa, dobivene postupkom koji se sastoji u koracima:
(a) dodavanja vode nefermentiranim zrnima kakaa uz ili bez kakaove pulpe i biljne sluzi kako bi se dobilo suspenziju;
(b) mokrog mljevenja navedene suspenzije koja sadrži nefermentirana zrna kakaa;
(c) podvrgavanja navedene suspenzije koja sadrži mokro mljevena, nefermentirana zrna kakaa toplinskoj obradi na temperaturi od 70 °C ili nižoj;
(d) odvajanja suspenzije koja sadrži mokro mljevena, nefermentirana zrna kakaa na vodenu fazu (tešku fazu), masnu fazu (laku fazu) i čvrstu fazu, gdje navedena masna faza sadrži kakaov maslac kao glavnu komponentu i čvrste tvari i/ili vodu kao sporedne komponente, a navedena čvrsta faza sadrži kakao u prahu i vodu; i
(e) odvojene obrade tri faze, koja se sastoji u:
odvajanju kakaovog maslaca od masne faze,
odvajanju kakaa u prahu od čvrste faze, te
odvajanju arome kakaa i polifenolnog praha od u najmanju ruku vodene faze,
gdje navedena nefermentirana zrna kakaa nisu prethodno sušena, i
gdje se navedena nefermentirana zrna kakaa podvrgava koraku inkubiranja prije koraka (a).
2. Komplet za proizvodnju čokolade ili čokoladi sličnih proizvoda u skladu s patentnim zahtjevom 1, naznačen time što se korak inkubiranja sastoji u dodavanju nefermentiranih zrna kakaa u etanolnu otopinu na temperaturi između 10 °C i 70 °C, u trajanju između 2 sata i 10 dana, gdje je volumen etanolne otopine dovoljan za pokrivanje zrna kakaa.
3. Komplet za proizvodnju čokolade ili čokoladi sličnih proizvoda u skladu s patentnim zahtjevom 2, naznačen time što je koncentracija etanola u etanolnoj otopini najmanje 1%, vol., a manja od 7%, vol.
4. Komplet za proizvodnju čokolade ili čokoladi sličnih proizvoda u skladu s bilo kojim od prethodnih patentnih zahtjeva, naznačen time što navedena nefermentirana zrna kakaa nisu depulpirana.
5. Komplet za proizvodnju čokolade ili čokoladi sličnih proizvoda u skladu s bilo kojim od patentnih zahtjeva 1 do 3, naznačen time što navedeni postupak dodatno uključuje korak depulpiranja nefermentiranih zrna kakaa prije koraka (a).
6. Komplet za proizvodnju čokolade ili čokoladi sličnih proizvoda u skladu s patentnim zahtjevom 5, naznačen time što se u navedenom postupku kakaovu pulpu i biljnu sluz dobivene u koraku depulpiranja obradi odvojeno od nefermentiranih zrna kakaa, te naknadno doda u suspenziju prije ili tijekom koraka (a), (b), (c) ili (d).
7. Komplet za proizvodnju čokolade ili čokoladi sličnih proizvoda u skladu s patentnim zahtjevom 6, naznačen time što se u navedenom postupku obrada kakaove pulpe i biljne sluzi sastoji u neutraliziranju i/ili uklanjanju kiselih komponenata.
8. Komplet za proizvodnju čokolade ili čokoladi sličnih proizvoda u skladu s bilo kojim od prethodnih patentnih zahtjeva, naznačen time se što aromu kakaa i polifenolni prah ekstrahira iz vodene faze i čvrste faze.
9. Komplet za proizvodnju čokolade ili čokoladi sličnih proizvoda u skladu s bilo kojim od prethodnih patentnih zahtjeva, naznačen time što se u navedenom postupku svaki od navedenih koraka obrade kakaa provodi ne temperaturama ne višim od otprilike 70 °C.
10. Čokolada ili čokoladi slični proizvodi, naznačeni time što ih se dobiva postupkom koji se sastoji u koracima:
(a) dodavanja vode nefermentiranim zrnima kakaa kako bi se dobilo suspenziju;
(b) mokrog mljevenja navedene suspenzije koja sadrži nefermentirana zrna kakaa;
(c) podvrgavanja navedene suspenzije koja sadrži mokro mljevena, nefermentirana zrna kakaa toplinskoj obradi na temperaturi od 70 °C ili nižoj;
(d) odvajanja suspenzije koja sadrži mokro mljevena, nefermentirana zrna kakaa u tri faze, tj. vodenu fazu (tešku fazu), masnu fazu (laku fazu) i čvrstu fazu, gdje navedena masna faza sadrži kakaov maslac kao glavnu komponentu i čvrste tvari i/ili vodu kao sporedne komponente, a navedena čvrsta faza sadrži kakao u prahu i vodu; i
(e) odvojene obrade tri faze, koja se sastoji u:
odvajanju kakaovog maslaca od masne faze, odvajanju kakaa u prahu od čvrste faze, te
odvajanju arome kakaa i polifenolnog praha od u najmanju ruku vodene faze;
(f) rekombiniranja ekstrakta arome kakaa s ekstraktom kakaovog maslaca;
(g) miješanja rekombiniranih ekstrakata s navedenim ekstraktom kakaa u prahu, navedenim ekstraktom polifenolnog praha i/ili mlijekom u prahu; i
(h) končiranja navedene smjese;
gdje navedena nefermentirana zrna kakaa nisu prethodno sušena, i
gdje se navedena nefermentirana zrna kakaa podvrgava koraku inkubiranja prije koraka (a).
11. Čokolada ili čokoladi slični proizvodi u skladu s patentnim zahtjevom 10, naznačen time što navedeni postupak dodatno uključuje korak depulpiranja nefermentiranih zrna kakaa prije koraka (a), izbornu obradu kakaove pulpe i biljne sluzi dobivenih u koraku depulpiranja odvojeno od nefermentiranih zrna kakaa, te naknadno dodavanje kakaove pulpe bilo u suspenziju prije ili tijekom koraka (a), (b), (c) ili (d), ili prije ili tijekom koraka (f), (g) i (h).
12. Bijela čokolada, naznačena time što je se pripravlja postupkom koji se sastoji u koracima:
(a) dodavanja vode nefermentiranim zrnima kakaa kako bi se dobilo suspenziju;
(b) mokrog mljevenja navedene suspenzije koja sadrži nefermentirana zrna kakaa;
(c) podvrgavanja navedene suspenzije koja sadrži mokro mljevena, nefermentirana zrna kakaa toplinskoj obradi na temperaturi od 70 °C ili nižoj;
(d) odvajanja suspenzije koja sadrži mokro mljevena, nefermentirana zrna kakaa u tri faze, tj. vodenu fazu (tešku fazu), masnu fazu (laku fazu) i čvrstu fazu, gdje navedena masna faza sadrži kakaov maslac kao glavnu komponentu i čvrste tvari i/ili vodu kao sporedne komponente, a navedena čvrsta faza sadrži kakao u prahu i vodu; i
(e) odvojene obrade tri faze, koja se sastoji u:
odvajanju kakaovog maslaca od masne faze,
odvajanju kakaa u prahu od čvrste faze, te
odvajanju arome kakaa i polifenolnog praha od u najmanju ruku vodene faze;
(f) izbornog rekombiniranja ekstrakta arome kakaa s ekstraktom kakaovog maslaca;
(g) miješanja ekstrakta kakaovog maslaca ili rekombiniranih ekstrakata s emulgatorom i izborno s mlijekom u prahu, dodatnim okusima, sladilom i/ili kakaovom pulpom; i
(h) končiranja navedene smjese;
gdje navedena nefermentirana zrna kakaa nisu prethodno sušena, i
gdje se navedena nefermentirana zrna kakaa podvrgava koraku inkubiranja prije koraka (a).
13. Čokolada sa sadržajem kakaa od 100%, naznačena time što je se pripravlja postupkom koji se sastoji u koracima:
osiguravanja kompleta za proizvodnju u skladu s bilo kojim od patentnih zahtjeva 1 do 9;
miješanja rekombinirane arome kakaa i ekstrakata kakaovog maslaca s kakaom u prahu i ekstraktima polifenolnog praha;
dodavanja izborno predobrađene kakaove pulpe u smjesu; i
končiranja navedene smjese.
