Abstract
يتعلق الاختراع الحالي بطريقة معالجة حبوب كاكاو cocoa beans مختمرة fermented أو محضَّنة incubated تشتمل على الخطوات التالية: إضافة ماء إلى حبوب أو قطع لب كاكاو cocoa beans لتكوين مُعلَّق suspension ؛ الطحن الرطب للمُعلَّق المذكور؛ إخضاع المُعلَّق المذكور لمعالجة بالحرارة عند درجة حرارة تبلغ 70 درجة مئوية أو أقل؛ فصل المُعلَّق إلى طور ماء water phase (طور ثقيل heavy phase )، طور دهن fat phase (طور خفيف light phase) وطور صلب solid phase ، يشتمل طور الدهن fat phase المذكور على زبدة كاكاو كمكون رئيسي وأجسام صلبة و/أو ماء كمكونات ثانوية ويشتمل الطور الصلب solid phase المذكور على مسحوق الكاكاو وماء؛ والمعالجة المنفصلة للأطوار الثلاثة، والتي تشتمل على: معادلة و/أو إزالة حمض الأسيتيك acetic acid المتكون أثناء التخمير fermentation أو المتكون أو المضاف قبل أو أثناء حضانة incubation حبوب الكاكاو cocoa beans في بواسطة طور الماء، واختياريًا فصل زبدة الكاكاو عن طور الدهن، فصل مسحوق الكاكاو عن الطور الصلب، وفصل رائحة الكاكاو ومسحوق بولي فينوليك polyphenolic powder عن طور الماء water phase على
