Abstract
<p>La presente invención se refiere al campo técnico del procesamiento de cacao y producción de chocolate.</p> <p>El método para el procesamiento de los granos de cacao comprende: añadir agua a los granos o virutas de semillas de cacao fermentados o incubados para formar una suspensión; triturarla; someterla a temperatura de 70 °C o inferior; separarla en una fase acuosa , una grasa y una sólida; y procesarlas por separado, lo que incluye: neutralizar y/o eliminar el ácido acético formado durante Ia fermentación o añadido antes de o durante una incubación de los granos de cacao de Ia fase acuosa.</p> <p>El método para la producción de productos de chocolate es muy similar al anterior; difiere en que después del procesamiento de las tres fases, se incluye: recombinar los extractos de aroma de cacao y de manteca de cacao; mezclarlos con los extractos de polvo de cacao, de polvo polifenólicos o polvo de leche; y someterla a conchado.</p> <p> </p> <p> </p> <p> </p> <p> </p> <p> </p> <p> </p> <p> </p> <p> </p> <p> </p> <p> </p> <p> </p> <p> </p> <p> </p> <p> </p> <p>Resumen modificado por el examinador conforme el artículo 10 del Decreto número 342/2018,” Reglamento del Decreto-Ley No 290</p> <p> </p>
