Abstract

Reivindicación 1: Un producto lácteo de vida en estante estable, caracterizado porque comprende: un componente lácteo líquido aséptico que comprende un subcomponente acuoso, en donde el subcomponente acuoso ha sido separado de un subcomponente graso, en donde el subcomponente acuoso ha pasado por una filtración, una concentración y una esterilización, y en donde el subcomponente acuoso no ha sido pasteurizado.Reivindicación 70: Un método para elaborar un producto lácteo de vida en estante estable, caracterizado porque dicho método comprende: separar un componente lácteo no pasteurizado crudo en un subcomponente acuoso y un subcomponente graso; concentrar el componente acuoso lácteo; esterilizar el componente acuoso lácteo; y secar el componente acuoso lácteo, en donde el componente lácteo no pasteurizado crudo, el subcomponente acuoso y el subcomponente graso no se calientan a una temperatura por encima de aproximadamente 80ºF más de una vez durante el método, y en donde el producto lácteo de vida en estante estable comprende al subcomponente acuoso concentrado, esterilizado y seco.
