Abstract
La presente invención se refiere a el problema de la inactivación de los componentes bioactivos en la leche durante la pasteurización para su preservación. La invención presenta un método de tratamiento por campo eléctrico pulsado (PEF) de la leche entera, leche descremada, leche semidescremada o suero, u otras composiciones que comprenden los componentes o fracciones de la leche. La invención se basa en el hallazgo de que al seleccionar uno o más parámetros específicos del proceso, tales como el diseño de la cámara de tratamiento con PEF, la energía específica aplicada, la intensidad del campo, pulso tipo, temperatura de inicio, es posible eliminar de manera efectiva los microorganismos de la composición en tanto se conserva la actividad de componentes bioactivos en la composición.
