Abstract

Un proceso para mejorar la resistencia al shock de calor de productos de repostería congelados que comprende añadir agregados de proteínas en la forma de fibrillas a una mezcla homogeneizada y pasteurizada para el producto de repostería congelado, antes de congelar la mezcla. Reivindicación 1: Un producto de repostería congelado, opcionalmente aireado, caracterizado porque comprende de 5 a 15% de sólidos lácteos no grasos, hasta un 20% de grasas, de 5 a 30% de un agente endulzante y hasta un 3% de un sistema estabilizante caracterizado porque incluye de 0,001 a 4, preferiblemente de 0,01 a 1,5%, más preferiblemente de 0,2 a 1,5% y más preferiblemente aún de 0,5 a 1,5% de fibrillas de proteínas.
