Abstract

La invención se refiere a un método para obtener contenidos determinantes de valor, tal como sustancias saborizantes, vitaminas, y polifenoles, de alimentos (13), que tiene los siguientes pasos: a) proporcionar un alimento (13), b) agregar un aceite de planta (15) como un extractor, c) moler el alimento (13) y el aceite de planta (15) en una masa (21), y d) separar la masa en una fase de extracción, que es una fase de aceite (25), y una fase sólida (29) como una fase de refinado. El alimento (13) y el aceite de planta (19) se muelen muy finamente, el proceso de molienda se define en que el alimento (13) junto con el aceite de planta (15) se muele hasta que la fase de aceite (25) tenga un tamaño de partícula promedio de menos que 300 µm, de manera preferente menos que 100 µm, de manera particular preferentemente menos que 20 µm.
