本发明涉及功能性食品技术领域,具体涉及一种具有控制血糖上升作用的食品组合物及其制备方法和应用。该食品组合物,包括白芸豆提取物、海藻粉、L‑阿拉伯糖、桑叶提取物、金顶侧耳浓缩粉、黑果枸杞和苦瓜肽。本发明提供的食品组合物具有优异的“阻糖”作用,健康人群在“暴饮暴食”前食用本发明提供的组合物可以无所顾忌的享用美食、同时又可以较好的维持体重;另外对于超重人群,本发明提供的食品组合物也具备较优的减重效果。

本发明涉及功能性食品技术领域,具体涉及一种具有控制血糖上升作用的食品组合物及其制备方法和应用。
背景技术
随着现代工业的发展,人们饮食普遍偏向精细化。其中一大特点,就是用精白米面替换了五谷杂粮。从口感的角度得到了提升,但是精白米面属于高升糖的食物。高升糖的食物可以被人体快速吸收,使血糖和胰岛素含量迅速升高,胰岛素大量分泌可能会导致脂肪囤积。如何的保证营养摄入的情况下,控制血糖升高速度、维持体重越来越受到更多研究者及消费者的关注。目前控糖食物包括代餐食品及控糖保健品均有较多报道,如CN115005371A公开了一种控制血糖水平的组合物及其应用,组合物及其重量份数为:茶籽粕粉40-50重量份、红毛丹粉20-30重量份、蛇皮果粉5-10重量份、黄晶果粉5-10重量份、白灵菇粉1-5重量份、长根菇粉1-5重量份、姬菇粉1-5重量份,在组合物中添加玉米粉、荞麦粉、紫米粉或者小麦粉等制备为主食或者休闲食品。专利CN 113854554 A公开了一种能稳定血糖的主食,其特征在于,包括下述重量百分比的组分:高抗淀粉米20%-80%,杂粮20%-80%;所述杂粮为红扁豆、藜麦、糙米、苦荞、胚芽燕麦米、荞麦、高粱、青稞、薏仁、玉米、燕麦中的任意一种或任意几种;所述杂粮均经过酶解处理,所述酶解处理包括下述步骤:S1、筛选杂粮;S2、把待处理的杂粮置入酶解罐并加入酶解液,在温度为40-50℃酶解处理17-22h;所述酶解液中含有植物提取spe-017纤维素酶、半纤维素酶和淀粉酶;S3、取出杂粮烘干至含水量为12%-16%,得到杂粮成品。但上述组合物主要是针对血糖失衡患者开发的组合物。
专利CN115969045A公开了一种具有体重健康管理功能的组合物及其制备方法与应用,该组合物包括调控糖代谢的组合物和调控脂肪代谢的组合物,所述调控糖代谢的组合物和调控脂肪代谢的组合物质量比为(0.1-5):1;其中,所述调控糖代谢的组合物包括a-环糊精、L-阿拉伯糖、白芸豆提取物;所述调控脂肪代谢的组合物包括绿咖啡浓缩粉、苹果浓缩粉、绿茶浓缩粉、柑橘粉、瓜拉纳提取物中的一种或多种。本发明还提供了该组合物的制备方法与应用。根据本发明的组合物得到的产品能够有效管理体重,摒弃了传统的只要体重不要健康的思路和做法,在控制体重的同时能够稳定血糖;保护肝功能;降低血脂(甘油三酯和低密度脂蛋白胆固醇);抗氧化、清除自由基;抗病毒、提高免疫力等。该组合物同时对脂肪代谢和糖代谢具有调节作用,主要适应用于肥胖患者和脂肪、糖代谢综合症的人群代替主食等高糖碳水化合物的摄入以起到控糖作用。上述控糖组合物主要是作为餐食的替代产品实现控糖,但经过市场调研发现,对于健康人群,尤其是青中年人群,越来越关注包括体脂等健康指标,如何在偶尔“暴饮暴食”放纵式饮食后还不影响体重,实现“干吃不胖”是多数人向往的情况。
因此,开发一种在不影响正常饮食的情况下,还能有效维持健康人群体重的食品组合物是控糖领域一个新的研发方向。
发明内容
本发明的主要目的在于提供一种食品组合物,该食品组合物对于非肥胖患者或无糖代谢困扰的人群,具有较好的维持体重的效果。
为实现该发明目的,本发明提供如下食品组合物,其包括白芸豆提取物、海藻粉、L-阿拉伯糖、桑叶提取物、金顶侧耳浓缩粉、黑果枸杞和苦瓜肽。
作为一种优选技术方案,所述食品组合物,以重量份计,包括5-15份白芸豆提取物,0.2-5份海藻粉,1-6份L-阿拉伯糖,0.2-5份桑叶提取物,0.2-2.5份金顶侧耳浓缩粉,0.2-2份黑果枸杞,0.1-0.5份苦瓜肽。
作为一种优选技术方案,所述食品组合物中金顶侧耳浓缩粉、黑果枸杞和苦瓜肽的重量比为4-6:1-5:1。
作为一种优选技术方案,所述食品组合物中金顶侧耳浓缩粉、黑果枸杞和苦瓜肽的重量比为5:3:1。
作为一种优选技术方案,所述食品组合物中还包括姜黄粉、荷叶粉,优选地,所述姜黄粉及荷叶粉的用量分分别为0.5-3份,0.1-0.5份。
本发明所述的白芸豆提取物、桑叶提取物、金顶侧耳浓缩粉、姜黄粉、荷叶粉均可采用市购产品,也可自制,自制方法可采用常规水提、超临界提取、微波提取等方法制得。
作为一种优选技术方案,本发明所述的食品组合物,其还包括添加剂的辅料,所述辅料为甜味剂、酸味剂、稳定剂、增稠剂、食品用香精中的一种或多种。
作为一种优选技术方案,所述的食品组合物,其还包括食品添加剂量的辅助功能成分,所述辅助功能成分包括复合维生素、微量元素、益生菌中的一种或多种。
优选地,所述复合维生素包括维生素A、维生素B1、维生素B6、维生素B12、维生素C、维生素E、维生素K和维生素D。
所述微量元素包括镁、铁、锌、钾、硒、铜、碘、钼。
本发明提供的食品组合物,其可用于食品、保健品、膳食补充剂的制备。
本发明还提供了所述食品组合物的制备方法,其包括如下步骤:
将白芸豆提取物、海藻粉、桑叶提取物、金顶侧耳浓缩粉混合后制粒得固体颗粒,然后依次加入经干燥粉碎后的黑果枸杞、苦瓜肽,制粒、压片后制得。
作为一种优选技术方案,所述食品组合物中还含有姜黄粉、荷叶粉,所述食品组合物的制备方法,包括如下步骤:
将白芸豆提取物、海藻粉、桑叶提取物、金顶侧耳浓缩粉、姜黄粉、荷叶粉混合后干法制粒得固体颗粒,然后依次加入经干燥粉碎后的黑果枸杞、苦瓜肽,湿法制粒。
本发明与现有技术相比,存在的有益效果如下:
健康人群在“暴饮暴食”前食用本发明提供的组合物可以在享受食物的美味的同时又可以较好的维持体重;
另外对于超重人群,本发明提供的食品组合物也具备较优的减重效果。

一种具有控制血糖上升作用的食品组合物,其包括以重量份计,5份白芸豆提取物,1份海藻粉,3份L-阿拉伯糖,1份桑叶提取物,2.5份金顶侧耳浓缩粉,1.5份黑果枸杞,0.5份苦瓜肽,糖醇25.1份。
所述食品组合物的制备方法,包括如下步骤:将如上配方量的白芸豆提取物、海藻粉、桑叶提取物、金顶侧耳浓缩粉、糖醇混合后干法制粒得固体颗粒,然后依次加入经干燥粉碎后(D90≤80μm)的黑果枸杞、苦瓜肽,制粒后压制成片状,2g/片。

一种具有控制血糖上升作用的食品组合物,其包括以重量份计,5份白芸豆提取物,1份海藻粉,3份L-阿拉伯糖,1份桑叶提取物,2.5份金顶侧耳浓缩粉,1.5份黑果枸杞,0.5份苦瓜肽,0.03份复合维生素(维生素C、维生素B1、维生素B6、维生素B12的重量比为2:1:1:1),糖醇23.6份。
该实施例中组合物的制备方法同实施例1。
实施例7
一种具有控制血糖上升作用的食品组合物,其包括以重量份计,5份白芸豆提取物,1份海藻粉,3份L-阿拉伯糖,1份桑叶提取物,2.5份金顶侧耳浓缩粉,1.5份黑果枸杞,0.5份苦瓜肽,姜黄粉1份,荷叶粉0.5份,0.005份益生菌(双歧杆菌),糖醇23.6份。
该实施例中组合物的制备方法同实施例1。
对比例1
一种具有控制血糖上升作用的食品组合物,其包括以重量份计,5份白芸豆提取物,1份海藻粉,3份L-阿拉伯糖,1份桑叶提取物,2.5份金顶侧耳浓缩粉,1.5份黑果枸杞,0.5份苦瓜提取物,糖醇25.1份。
本对比例与实施例1的区别在于采用苦瓜提取物代替苦瓜肽。
对比例2
一种具有控制血糖上升作用的食品组合物,其包括以重量份计,5份白芸豆提取物,1份海藻粉,3份L-阿拉伯糖,1份桑叶提取物,2.5份长根菇粉,1.5份黑果枸杞,0.5份苦瓜肽。
本对比例与实施例1的区别在于采用长根菇粉代替金顶侧耳浓缩粉。
对比例3
一种具有控制血糖上升作用的食品组合物,其包括以重量份计,6份白芸豆提取物,3份L-阿拉伯糖,1份桑叶提取物,2.5份金顶侧耳浓缩粉,1.5份黑果枸杞,0.5份苦瓜肽。
本对比例与实施例1的区别在于不含有海藻粉。
对比例4
一种具有控制血糖上升作用的食品组合物,其包括以重量份计,2份白芸豆提取物,1份海藻粉,3份L-阿拉伯糖,1份桑叶提取物,5.5份金顶侧耳浓缩粉,1.5份黑果枸杞,0.5份苦瓜肽。
本对比例与实施例1的区别在于含有调整了白芸豆提取物和金顶侧耳浓缩粉的用量。
实验例1(血糖延后水平)
测试方法
每组选择12位健康成年人,6位男士,6位女士,年龄段为 23-35 岁,BMI为18.8-23.0 kg/m2,无糖尿病史(或糖耐量受损),无其他代谢性疾病、消化系统疾病、内分泌系统疾病和精神疾病等;无对待测食物过敏史和不耐受史,口服葡萄糖耐量试验正常,饮食规律,近期无胃肠道疾患和服用任何药物,体检合格。试验前对受试者进行培训,并签署知情同意书。 实验开始前一天晚上22:00后停止进食、喝水,监控餐后血糖波动情况。
其中对照组:早餐正常食用参照食物白面包;
实验组:早餐前30 min内食用实验样品由各实施例及对比例提供的组合物2片(4g)。
对比食用以及不食用本发明各实施例组合物,以时间为横坐标,各时间点的血糖值-空腹血糖值为纵坐标,制作血糖应答曲线,计算空腹血糖水平以上的曲线下面积(IAUC),抑制率=(参照食物IAUC-实施例IAUC)/参照食物IAUC*100%。
血糖测试使用罗氏血糖仪,测量指尖血糖的具体操作如下:
(1)采集指尖血,弃去第一滴,间隔5 min连续两次测定空腹血糖并记录;
(2)进食50 mL水;
(3)5 min后,进食白面包片(以碳水化合物摄入50 g计)及200 mL水(5 min内完成进食);
(4)采集指尖血检测血糖并记录(进餐后15 min、30 min、45 min、60 min、90 min、120 min)。
各实施例及对比例平均抑制率统计如下表1。
根据上述表1测试结果可以看出,本发明提供的食品组合物相比对比例具备更优的控制血糖上升的效果。
另外,通过对受试者血糖值变化可以看出,本发明提供的食品组合物对血糖上升具有明显抑制作用。而且均对血糖到达峰值存在一定的延后作用。
对于健康人群可在餐前食用本发明所述组合物,从而实现在正常饮食或者偶尔暴饮暴食后仍能维持较好的体重。
现有技术中公开的代餐类控糖组合物虽然可以在代替餐食的情况下实现降低代血糖的峰值的作用,但在正常饮食(如摄入一定易升糖的碳水化合物)的情况下,但并无法实现血糖的有效控制。
实验例2(体重维持)
为进一步考察所述组合物对于健康人群在体重管理方面的作用,本实验例的测试方法如下:每组选择12位健康成年人,6位男士,6位女士,年龄段为 23-35 岁,BMI为18.8-23.0kg/m2,无糖尿病史(或糖耐量受损),无其他代谢性疾病、消化系统疾病、内分泌系统疾病和精神疾病等;无对待测食物过敏史和不耐受史,近期无胃肠道疾患和服用任何药物,体检合格。试验前对受试者进行培训,并签署知情同意书。
对照组1:按中国营养协会推荐每日营养摄入推荐量正常进餐;
对照组2:每天晚餐进食能量摄入值为1200kcal,其中主食、蛋白、脂肪、蔬果能量占比分别为主食50%、蛋白30%、脂肪10%、蔬果10%,其余时间饮食按中国营养协会推荐每日营养摄入推荐量正常进餐;
对照组3:每天晚餐进食能量摄入值为1200kal,其中主食、蛋白、脂肪、蔬果能量占比分别为主食50%、蛋白30%、脂肪10%、蔬果10%,在餐前30min内食用同仁堂牌白芸豆膳食纤维压片糖果(市场购入,含白芸豆、菊粉、抗性糊精、低聚果糖等);
实验组:每天晚餐进食能量摄入值为1200kcal,其中主食、蛋白、脂肪、蔬果能量占比分别为主食50%、蛋白30%、脂肪10%、蔬果10%,在餐前30min内食用实验样品由各实施例及对比例提供的组合物2片,其余时间饮食按中国营养协会推荐每日营养摄入推荐量正常进餐。连续食用1个月,对各组受试者体重进行检查记录,统计结果,结果见表2。

由表2实验数据可以看出,健康人群在“大餐”前食用本发明提供的组合物可以较好的抑制体重增长,维持体重,而且各实施例提供的组合物的抑制体重效果明显优于对比例及现有市售产品。
实验例3(减重)
为进一步考察所述组合物对于体重属于超重人群在减重方面的作用,本实验例的测试方法如下:每组选择12位健康成年人,6位男士,6位女士,年龄段为 23-50岁,BMI为24-32kg/m2,无其他代谢性疾病、消化系统疾病、内分泌系统疾病和精神疾病等;无对待测食物过敏史和不耐受史,近期无胃肠道疾患和服用任何药物。试验前对受试者进行培训,并签署知情同意书。
对照组1:按中国营养协会推荐每日营养摄入推荐量正常进餐;
对照组2:按中国营养协会推荐每日营养摄入推荐量正常进餐,在餐前30min内食用同仁堂牌白芸豆膳食纤维压片糖果(市场购入,含白芸豆、菊粉、抗性糊精、低聚果糖等)每天2次,每次2片;
对照组3:按中国营养协会推荐每日营养摄入推荐量正常进餐,在餐前30min内食用由专利CN114177271 A实施例1提供的组合物每天2次,每次2片。
实验组:按中国营养协会推荐每日营养摄入推荐量正常进餐,在餐前30min内食用实验样品由各实施例及对比例提供的组合物每天2次,每次2片,连续食用2个月,对各组受试者体重进行检查记录,统计结果,结果见表3。

本发明提供的食品组合物还可用于超重人群的体重减轻,由表3数据可以看出,本发明各实施例提供的组合物具有优异的减重效果。可用于超重人群的减重。
以上所述仅是本发明的优选实施方式,应当指出,对于本技术领域的普通技术人员来说,在不脱离本发明原理的前提下,还可以做出若干改进,这些改进也应该视为本发明的保护范围。
Claims (7)
1.一种食品组合物,以重量份计,由以下成分组成:5-15份白芸豆提取物,0.2-5份海藻粉,1-6份L-阿拉伯糖,0.2-5份桑叶提取物,0.2-2.5份金顶侧耳浓缩粉,0.2-2份黑果枸杞和0.1-0.5份苦瓜肽。
2.根据权利要求1所述的食品组合物,所述金顶侧耳浓缩粉、黑果枸杞和苦瓜肽的重量比为4-6:1-5:1。
3.根据权利要求2所述的食品组合物,所述金顶侧耳浓缩粉、黑果枸杞和苦瓜肽的重量比为5:3:1。
4.一种食品组合物,以重量份计,由以下成分组成:5-15份白芸豆提取物,0.2-5份海藻粉,1-6份L-阿拉伯糖,0.2-5份桑叶提取物,0.2-2.5份金顶侧耳浓缩粉,0.2-2份黑果枸杞,0.1-0.5份苦瓜肽,姜黄粉和荷叶粉。
5.根据权利要求4所述的食品组合物,以重量份计,由以下成分组成:5-15份白芸豆提取物,0.2-5份海藻粉,1-6份L-阿拉伯糖,0.2-5份桑叶提取物,0.2-2.5份金顶侧耳浓缩粉,0.2-2份黑果枸杞,0.1-0.5份苦瓜肽,姜黄粉0.5-3份和荷叶粉0.1-0.5份。
6.一种食品组合物,以重量份计,由以下成分组成:5-15份白芸豆提取物,0.2-5份海藻粉,1-6份L-阿拉伯糖,0.2-5份桑叶提取物,0.2-2.5份金顶侧耳浓缩粉,0.2-2份黑果枸杞,0.1-0.5份苦瓜肽和辅料,所述辅料为甜味剂,酸味剂,稳定剂,增稠剂,食品用香精中的一种或多种。
7.一种食品组合物,以重量份计,由以下成分组成:5-15份白芸豆提取物,0.2-5份海藻粉,1-6份L-阿拉伯糖,0.2-5份桑叶提取物,0.2-2.5份金顶侧耳浓缩粉,0.2-2份黑果枸杞,0.1-0.5份苦瓜肽和辅助功能成分,所述辅助功能成分包括复合维生素,微量元素,益生菌中的一种或多种。
