Abstract
本发明公开了一种用于阻隔淀粉糖类消化吸收的功能食品及其制备方法。该功能食品,包括植物提取物、L‑阿拉伯糖、低聚果糖等原料。本发明提供的用于阻隔淀粉糖类消化吸收的功能性食品具有营养均衡、安全健康、口感良好的优点,本发明通过特定的原料及配比的综合协同作用,起到阻隔淀粉和糖类的消化吸收的作用,从而达到控制血糖水平、降血脂等多种功能,为各类人群尤其是高血糖人群、糖尿病患者和肥胖人群等提供了安全营养的健康食品。

技术领域
本发明涉及食品技术领域,特别涉及一种用于阻隔淀粉糖类消化吸收的功能食品及其制备方法。
背景技术
数千年以来,中国居民的传统膳食主要谷类食物,而谷类食物也是最为主要的能白芸豆提取物量来源,其所提供的热量约占膳食总热量的53%,而动物性食品所提供的热量约占15%,纯白芸豆提取物能量食物约占18.3%,剩余来源主要为其它食品或饮品。在这种饮食结构中,淀粉是人体最为主要的热量来源,在食物中主要是形式存在,淀粉在人体内消化后,主要以白芸豆提取物葡萄糖的形式被吸收,为组织和器官提供能量。
淀粉和糖类是餐后血糖反应中葡萄糖的主要来源。目前大多通过脂肪酸与淀粉的复合改性或者糊化制备慢消化性的淀粉类食品,但是这些慢消化性的食品功能较为单一,不能满足日常饮食的营养需求,而且对阻断葡萄糖、蔗糖吸收的作用不大。
因此,十分有必要研究出一种能阻隔淀粉糖类消化吸收的功能食品,这对降低所有人群的糖尿病和肥胖风险具有非常重要的意义,可以极大地提高和改善上述人群的生活质量。

本发明的目的在于提供一种用于阻隔淀粉糖类消化吸收的功能食品及其制备方法,以解决上述技术问题。
为了实现上述目的,本发明的技术方案为:
第一方面,本发明提供的一种用于阻隔淀粉糖类消化吸收的功能食品,按重量份数计,包括:植物提取物1-3份、L-阿拉伯糖1-3份、低聚果糖1-2.5份、功能性甜味剂0-0.01份、调味剂0-0.08份、茶多酚0-0.5份、海藻粉0-2份、营养强化剂0-0.01份、矿物质0-0.01份。
优选的,所述植物提取物选自白芸豆提取物、苦瓜提取物、降香叶提取物中的任意一种或多种。
进一步优选的,所述植物提取物为白芸豆提取物。
进一步优选的,所述植物提取物由重量比为10:0.5~1:0.5~1的白芸豆提取物、苦瓜提取物和降香叶提取物组成。
优选的,所述营养强化剂选自醋酸维生素A、维生素D3、维生素E、维生素B1、维生素B2、维生素B6、维生素B12、L-抗坏血酸、烟酰胺、叶酸、D-泛酸钙、β-胡萝卜素中的任意一种或多种。
进一步优选的,在用于阻隔淀粉糖类消化吸收的功能食品中,所述营养强化剂,按重量份数计,包括:醋酸维生素A0.001份、维生素D3 0.001份、维生素E0.001份、维生素B10.001份、维生素B2 0.001份、维生素B6 0.001份、维生素B12 0.001份、L-抗坏血酸0.001份、烟酰胺0.001份、碳酸钙0.005份、氧化镁0.002份、焦磷酸铁0.001份、葡萄糖酸锌0.002份,

进一步优选的,在用于阻隔淀粉糖类消化吸收的功能食品中,所述矿物质,按重量份数计,包括:碳酸钙0.005份、氧化镁0.002份、焦磷酸铁0.001份、葡萄糖酸锌0.002份。
优选的,所述调味剂为食用香精、食用香料中的任意一种或两种。
第二方面,本发明提供的一种如第一方面所述的用于阻隔淀粉糖类消化吸收的功能食品的制备方法,包括如下步骤:
将植物提取物、L-阿拉伯糖、低聚果糖、功能性甜味剂、调味剂、茶多酚、海藻粉、营养强化剂、矿物质分别粉碎后过筛,再倒入三维混合机中充分混合,过筛,用红外线瞬时高温灭菌处理,然后冷却、真空包装即可。

效果实施例
按照功能食品与温水的重量比为1:6的比例,将上述实施例和对比例所得的功能食品加入温水中搅拌均匀,制得冲调饮品,备用;以Wistar大鼠作为实验动物,每组10只,雌雄各半,分为空白组和7个实验组,饲喂前,分别测试每组大鼠空腹时的血糖;利用灌胃大鼠口服葡萄糖和淀粉的混合溶液(葡萄糖的质量浓度为15%,淀粉的质量浓度为20%),5min内分别饲喂蒸馏水和冲调饮品,具体如下:(1)空白组:仅饲喂蒸馏水;(2)试验组:灌胃饲喂冲调饮品,功能食品的饲喂量与大鼠的体重比为1g/Kg。饲喂后分时间段对上述每组大鼠的血糖进行测试,每组大鼠的血糖测试结果取平均值,测试结果如下表1所示。

由表1可知,空白组大鼠在饲喂葡萄糖和淀粉的混合溶液30min后血糖含量快速升高,之后2小时内仍然血糖含量仍然维持较高的水平,与空白组相比,试验组1~8的大鼠在饲喂葡萄糖和淀粉的混合溶液30min内血糖含量的增幅明显降低,之后试验组2、4、6、7的大鼠的血糖含量很快下降并接近正常水平,而其它试验组的大鼠的血糖含量降幅稍微小一些。这说明,植物提取物对血糖的抑制有显著的影响,白芸豆提取物、苦瓜提取物和降香提取物与L-阿拉伯糖等协同作用,对抑制肠胃消化淀粉和吸收葡萄糖具有有益效果。
总之,本发明提供的用于阻隔淀粉糖类消化吸收的功能性食品具有营养均衡、安全健康、口感良好的优点,本发明通过特定的原料及配比的综合协同作用,起到阻隔淀粉和糖类的消化吸收的作用,从而达到控制血糖水平、降血脂等多种功能,为各类人群尤其是高血糖人群、糖尿病患者和肥胖人群等提供了安全营养的健康食品;餐前兑水饮用本发明的功能性食品,能有效阻隔淀粉和糖类消化吸收,大部分的淀粉会以完整的分子形态通过消化系统,排出体外,抑制餐后血糖水平上升,长期食用,能起到平稳血糖、瘦身减肥的效果。

1.一种用于阻隔淀粉糖类消化吸收的功能食品,其特征在于,按重量份数计,包括:植物提取物1-3份、L-阿拉伯糖1-3份、低聚果糖1-2.5份、功能性甜味剂0-0.01份、调味剂0-0.08份、茶多酚0-0.5份、海藻粉0-2份、营养强化剂0-0.01份、矿物质0-0.01份。
2.根据权利要求1所述的用于阻隔淀粉糖类消化吸收的功能食品,其特征在于,所述植物提取物选自白芸豆提取物、苦瓜提取物、降香叶提取物、桑叶提取物中的任意一种或多种。
3.根据权利要求2所述的用于阻隔淀粉糖类消化吸收的功能食品,其特征在于,所述植物提取物为白芸豆提取物。
4.根据权利要求2所述的用于阻隔淀粉糖类消化吸收的功能食品,其特征在于,所述植物提取物由重量比为10:0.5~1:0.5~1的白芸豆提取物、苦瓜提取物和降香叶提取物组成。
