Abstract
本发明提供了一种盐藻竹盐复合固体饮料及其制备方法,盐藻竹盐复合固体饮料包括按重量份数计的如下组分:盐藻粉10~60份、竹盐0.6~1.2份、维生素C 0.9~1.6份、调味粉50~100份、乳糖20~40份、山梨糖醇7~14份、三氯蔗糖0.8~1.6份、低聚果糖13~26份、麦芽糖糊精25~50份、食用香精3~6份。本发明所述的盐藻竹盐复合固体饮料通过添加富含β‑胡萝卜素的盐藻粉,丰富固体饮料的营养,在补充维生素和矿物质的基础上补充安全来源的维生素A,同时添加竹盐,可调节人体的酸碱平衡,提供人体所需的矿物质和微量元素。

技术领域
本发明属于固体饮料技术领域,尤其是涉及一种盐藻竹盐复合固体饮料及其制备方法。
背景技术
维生素A化学名为视黄醇,是最早被发现的维生素。维生素A有两种。一种是维生素A醇,是最初的维生素A形态(只存在于动物性食物中);另一种是胡萝卜素,是维生素A的前体,在人类需要时转变为维生素A(可从植物性及动物性食物中摄取)。由于维生素A是一种脂溶性维生素,不容易代谢排出,如果人体摄入过量的维生素A会出现慢性中毒迹象,如皮肤干燥、易脱发,唇和口角易出血等症状,因此需要注意维生素A的摄入量。而人类摄食高胡萝卜素含量的食物后,胡萝卜素是以本身的分子结构存在于人体内,只有在人体需要时才被转变成维生素A,这一个特征表明胡萝卜素是维生素A的一个安全来源。
盐藻是一种嗜盐的单细胞真核藻类,是迄今为止发现的最耐盐的真核生物之一,盐藻藻体内有一杯状色素体,色素体内的色素主要是叶绿素和类胡萝卜素(以β-胡萝卜素为主),在合适的条件下,体内合成的胡萝卜素可达细胞干重的10%上。此外,盐藻体内还含有丰富的油脂、蛋白质、多糖、人类必需氨基酸在内的18种氨基酸,还含有较高的Ca、P、Zn等矿物质。盐藻的出现替代了化学合成的β-胡萝卜素,(人工化学合成的胡萝卜素为全反式β-胡萝卜素,在市场上占99%以上)。盐藻体内所含的这些类胡萝卜素在人体内根据需求均可被转化成维生素A,是天然的维生素A源。
竹盐在调味料、茶品、保健品等方面应用的较为广泛。竹盐为弱碱性,可以调节人体的酸碱平衡,竹盐中还含有人体所需的矿物质和微量元素,满足人体需要,有益人体健康。如果能够将竹盐和盐藻结合制备出可安全补充维生素A,兼具调节人体酸碱平衡和补充矿物质,且携带方便、符合大众口味的饮品,将会极大的满足消费者的需求。
发明内容
有鉴于此,为解决上述问题,本发明提出了一种携带方便、符合大众口味盐藻竹盐复合固体饮料,同时提供了其制备方法,通过添加富含β-胡萝卜素的盐藻粉,丰富固体饮料的营养,在补充维生素和矿物质的基础上补充安全来源的维生素A,同时添加竹盐,可调节人体的酸碱平衡,提供人体所需的矿物质和微量元素。
为达到上述目的,本发明的技术方案是这样实现的:
一种盐藻竹盐复合固体饮料,包括按重量份数计的如下组分:盐藻粉10~60份、竹盐0.6~1.2份、维生素C 0.9~1.6份、调味粉50~100份、乳糖20~40份、山梨糖醇7~14份、三氯蔗糖0.8~1.6份、低聚果糖13~26份、麦芽糖糊精25~50份、食用香精3~6份。
进一步的,所述盐藻粉中的β-胡萝卜素百分含量为3%,β-胡萝卜素推荐日食用量≤15毫克。
国内外大量科研资料表明盐藻β-胡萝卜素除了作为维生素A前体对视觉系统有保健作用外,还具有抗氧化和自由基清除、增强免疫力的作用,对糖尿病患者也有一定的提高免疫功能及降低血液黏度的作用。服用天然盐藻提取物能减少复发性口疮的复发或减轻其症状,总有效率达85%以上,还能对急性酒精性肝脂质代谢紊乱和肝脏病理损伤有一定的保护作用,在肿瘤化疗过程中还能起到升高白细胞的作用,盐藻素+维生素E能够预防化疗所致的白细胞下降。
天然胡萝卜素内含80%β-胡萝卜素、10%α-胡萝卜素及10%其它胡萝卜素,在追求绿色食品的潮流中,天然胡萝卜素更受欢迎。
进一步的,所述盐藻粉通过喷雾干燥的方式制得。
进一步的,所述竹盐是将盐粉和竹子提取物溶解混匀后,进行挤压造粒,再经煅烧处理后,研磨成粉,过筛后得到。
进一步的,所述盐粉为精制井盐。
进一步的,所述竹子提取物是将清洗过的新鲜竹子切碎后于90℃的热水中浸泡0.5~3h后,收集浸泡水备用,将浸泡后的碎竹子进行挤压榨汁,将得到的汁水与浸泡水混合后,过筛,将混合液在60~90℃下浓缩,得到含有竹子提取物的浓缩液。
进一步的,所述盐粉和所述含有竹子提取物的浓缩液在纯净水中溶解混匀,挤出造粒得到含有竹子提取物的盐粒,再以50℃/min的升温速率升温至900℃对含有竹子提取物的盐粒进行煅烧,煅烧后的产物研磨粉碎后过筛得到所述竹盐。
进一步的,所述调味粉为果粉,果粉可以为苹果粉、草莓粉、橙子粉等常见水果口味。
一种盐藻竹盐复合固体饮料的制备方法,包括如下步骤:
S1、制备竹盐:
将清洗过的新鲜竹子切碎后于90℃的热水中浸泡0.5~3h后,收集浸泡水备用,将浸泡后的碎竹子进行挤压榨汁,将得到的汁水与浸泡水混合后,过筛,将混合液在60~90℃下浓缩,得到含有竹子提取物的浓缩液;
将盐粉和所述含有竹子提取物的浓缩液在纯净水中溶解混匀,挤出造粒得到含有竹子提取物的盐粒,再以50℃/min的升温速率升温至900℃对含有竹子提取物的盐粒进行煅烧,煅烧后的产物研磨粉碎后过筛得到所述竹盐;
S2、按照配比称取各组分:盐藻粉10~60份、竹盐0.6~1.2份、维生素C 0.9~1.6份、调味粉50~100份、乳糖20~40份、山梨糖醇7~14份、三氯蔗糖0.8~1.6份、低聚果糖13~26份、麦芽糖糊精25~50份、食用香精3~6份;
S3、将S2所述各组分过30~70目筛,筛分后将各组分放入搅拌装置内,加入纯净水,搅拌混匀后,得到混合液;
S4、将所述混合液放入多功能流化床中,进行喷雾造粒,造粒结束后进行干燥,干燥后过30~70目筛,收集30~70目之间的目标产物。
进一步的,所述S1中,所述盐粉和所述含有竹子提取物的浓缩液的重量配比为70%~90%:30%~10%。
相对于现有技术,本发明所述的盐藻竹盐复合固体饮料及其制备方法具有以下优势:
本发明所述的盐藻竹盐复合固体饮料通过添加富含β-胡萝卜素的盐藻粉和可调节人体酸碱平衡的竹盐,合理的丰富了目前市场上固体饮料的种类,均衡了固体饮料的营养,在补充维生素和矿物质的基础上安全补充维生素A,满足人体需要,调节体内酸碱平衡,有益人体健康。

除有定义外,以下实施例中所用的技术术语具有与本发明所属领域技术人员普遍理解的相同含义。以下实施例中所用的试验试剂,如无特殊说明,均为常规生化试剂;所述实验方法,如无特殊说明,均为常规方法。
下面结合实施例来详细说明本发明。
实施例1
按照如下重量份数称取各组分:盐藻粉(β-胡萝卜素含量为3%)10份、竹盐0.6份、维生素C 0.9份、果粉55份、乳糖20份、山梨糖醇7份、三氯蔗糖0.8份、低聚果糖13份、麦芽糖糊精25份、食用香精3份;
其中竹盐通过以下方法获得:
将清洗过的新鲜竹子切碎后于90℃的热水中浸泡1h后,收集浸泡水备用,将浸泡后的碎竹子进行挤压榨汁,将得到的汁水与浸泡水混合后,过筛,将混合液在90℃下浓缩,得到含有竹子提取物的浓缩液;
将重量配比为70%:30%盐粉和含有竹子提取物的浓缩液在纯净水中溶解混匀,挤出造粒得到含有竹子提取物的盐粒,再以50℃/min的升温速率升温至900℃对含有竹子提取物的盐粒进行煅烧,煅烧后的产物研磨粉碎后过筛得到所述竹盐;
将称取好的各组分过60目筛,筛分后将各组分放入搅拌桶内,加入纯净水,搅拌混匀后,得到混合液;
将混合液放入多功能流化床中,进行喷雾造粒,造粒结束后进行干燥,干燥后过30~70目筛,收集30~70目之间的目标产物,即为盐藻竹盐复合固体饮料颗粒,分装密封即可。
实施例2
在实施例1的基础上,与实施例1不同的是按照如下重量份数称取各组分:
盐藻粉(β-胡萝卜素含量为3%)30份、竹盐0.6份、维生素C1份、果粉60份、乳糖30份、山梨糖醇14份、三氯蔗糖1份、低聚果糖13份、麦芽糖糊精25份、食用香精3份;
其它制备过程与实施例1相同。
实施例3
在实施例1的基础上,与实施例1不同的是按照如下重量份数称取各组分:
盐藻粉(β-胡萝卜素含量为3%)60份、竹盐1.2份、维生素C1.2份、果粉100份、乳糖20份、山梨糖醇7份、三氯蔗糖1.5份、低聚果糖26份、麦芽糖糊精25份、食用香精3份;
其它制备过程与实施例1相同。
实施例4
在实施例1的基础上,与实施例1不同的是按照如下重量份数称取各组分:
盐藻粉(β-胡萝卜素含量为3%)60份、竹盐1份、维生素C1.6份、果粉50份、乳糖40份、山梨糖醇10份、三氯蔗糖0.8份、低聚果糖20份、麦芽糖糊精40份、食用香精5份;
其它制备过程与实施例1相同。

Claims (10)
1.一种盐藻竹盐复合固体饮料,其特征在于:包括按重量份数计的如下组分:盐藻粉10~60份、竹盐0.6~1.2份、维生素C 0.9~1.6份、调味粉50~100份、乳糖20~40份、山梨糖醇7~14份、三氯蔗糖0.8~1.6份、低聚果糖13~26份、麦芽糖糊精25~50份、食用香精3~6份。
2.根据权利要求1所述的盐藻竹盐复合固体饮料,其特征在于:所述盐藻粉中的β-胡萝卜素百分含量为3%。
3.根据权利要求1所述的盐藻竹盐复合固体饮料,其特征在于:所述盐藻粉通过喷雾干燥的方式制得。
4.根据权利要求1所述的盐藻竹盐复合固体饮料,其特征在于:所述竹盐是将盐粉和竹子提取物溶解混匀后,进行挤压造粒,再经煅烧处理后,研磨成粉,过筛后得到。
5.根据权利要求4所述的盐藻竹盐复合固体饮料,其特征在于:所述盐粉为精制井盐。
6.根据权利要求4所述的盐藻竹盐复合固体饮料,其特征在于:所述竹子提取物是将清洗过的新鲜竹子切碎后于90℃的热水中浸泡0.5~3h后,收集浸泡水备用,将浸泡后的碎竹子进行挤压榨汁,将得到的汁水与浸泡水混合后,过筛,将混合液在60~90℃下浓缩,得到含有竹子提取物的浓缩液。
7.根据权利要求6所述的盐藻竹盐复合固体饮料,其特征在于:所述盐粉和所述含有竹子提取物的浓缩液在纯净水中溶解混匀,挤出造粒得到含有竹子提取物的盐粒,再以50℃/min的升温速率升温至900℃对含有竹子提取物的盐粒进行煅烧,煅烧后的产物研磨粉碎后过筛得到所述竹盐。
8.根据权利要求1所述的盐藻竹盐复合固体饮料,其特征在于:所述调味粉为果粉。
9.权利要求1到8任一项所述的盐藻竹盐复合固体饮料的制备方法,其特征在于:包括如下步骤:
S1、制备竹盐:
将清洗过的新鲜竹子切碎后于90℃的热水中浸泡0.5~3h后,收集浸泡水备用,将浸泡后的碎竹子进行挤压榨汁,将得到的汁水与浸泡水混合后,过筛,将混合液在60~90℃下浓缩,得到含有竹子提取物的浓缩液;
将盐粉和所述含有竹子提取物的浓缩液在纯净水中溶解混匀,挤出造粒得到含有竹子提取物的盐粒,再以50℃/min的升温速率升温至900℃对含有竹子提取物的盐粒进行煅烧,煅烧后的产物研磨粉碎后过筛得到所述竹盐;
S2、按照重量配比称取各组分:盐藻粉10~60份、竹盐0.6~1.2份、维生素C 0.9~1.6份、调味粉50~100份、乳糖20~40份、山梨糖醇7~14份、三氯蔗糖0.8~1.6份、低聚果糖13~26份、麦芽糖糊精25~50份、食用香精3~6份;
S3、将S2所述各组分过30~70目筛,筛分后将各组分放入搅拌装置内,加入纯净水,搅拌混匀后,得到混合液;
S4、将所述混合液放入多功能流化床中,进行喷雾造粒,造粒结束后进行干燥,干燥后过30~70目筛,收集30~70目之间的目标产物。
10.根据权利要求9所述的盐藻竹盐复合固体饮料的制备方法,其特征在于:所述S1中,所述盐粉和所述含有竹子提取物的浓缩液的重量配比为70%~90%:30%~10%。
