背景技术
随着“药膳养生”和“治未病”意识的提高,消费群体从碳酸饮料过渡到茶饮料、包装水,又上升为健康功能性饮料。沙棘是一种药食同源的植物,它的根、花、叶、果、籽均可入药,特别是沙棘果实含有人体不能合成的、人的身心健康不可少的多种维生素、享有“世界植物之奇”、维生素宝库之称。沙棘果中还富含类胡萝卜素、多种氨基酸、亚油酸、蛋白质、维生素E、维生素A、5-羟色胺、磷脂、黄酮、多种微量元素等营养成分,其中黄酮和酚类有多达36种。

蜜炙党参表面黄棕色,显光泽,略带粘性,有蜜香气,味甜。炮制方法为:取炼蜜用适量开水稀释后,加入党参段拌匀,闷透,置锅内,用文火加热,炒至黄棕色,不粘手时,取出,放凉。每党参段100kg,用炼蜜10kg。党参蜜炙后其甘缓,增强补中益气的作用。
优选地,用柠檬酸钠调节pH。
优选地,沙棘果汁、木糖醇、热水、海藻酸钠的重量比为20:5-10:62-70:5-8。
优选地,乳化钙水溶液的质量分数为2-3%。
优选地,真空冷冻干燥的温度为-15至-20℃,真空冷冻干燥的时间为2-3天。
优选地,沙棘果汁经灭菌处理;灭菌温度为120-125℃,灭菌时间为15-20min,灭菌压力为常压。
优选地,热水温度为40-50℃。
优选地,冻干果粉包括蓝莓果粉、草莓果粉、苹果果粉、桃子果粉或葡萄果粉。
优选地,增稠剂为羧甲基纤维素。
优选地,甜味剂包括木糖醇、低聚木糖、蔗糖、葡萄糖中的至少一种。
优选地,蜜炙党参的粒径为40-80目。
上述沙棘微球制备过程中的原料、党参沙棘固体饮料的原料均经灭菌处理。
本发明的制备方法为:取各原料混匀即可。
有益效果:
本发明将沙棘果汁用海藻酸钠包覆,并经真空冷冻干燥处理,可以提高沙棘微球中有效成分的含量和稳定性,并且能改善沙棘的口感;在沙棘微球的制备过程中,添加适量的木糖醇,并用柠檬酸钠调节pH=4-4.5,降低酸涩口感,具有酸甜口感;选用适宜的灭菌方法,在灭菌的同时使得沙棘果汁保持较高含量的有效成分;选用蜜炙党参与沙棘微球相互配合,使得本发明具有滋补强壮、润肺的作用,并且蜜炙党参与冻干果粉、甜味剂相互配合可以进一步改善本发明的口感;选用羧甲基纤维素具有增稠和乳化作用,使得本发明能在水中均匀分散并促进有效成分的溶出;且固定饮料易于存储,稳定性好。
具体实施方式
下面,通过具体实施例对本发明的技术方案进行详细说明。
实施例1
一种党参沙棘固体饮料,其原料按重量份包括:粒径为40目的蜜炙党参30g、沙棘微球30g、冻干葡萄果粉24g、木糖醇20g、羧甲基纤维素8g;
其中,在沙棘微球的制备过程中,选取新鲜饱满的沙棘,洗净后榨汁,过滤2次得到沙棘果汁;取40g沙棘果汁在120℃加热常压灭菌20min,冷却至室温,然后加入10g木糖醇、140g蒸馏水(降温至40-50℃)、10g海藻酸钠混匀,冷却至室温,用柠檬酸钠调节pH=5得到溶液A;将溶液A滴加至质量分数为2%的乳化钙水溶液中,3-5s后过滤捞出,置于冷却的蒸馏水中静置2min,捞出,于-15℃真空冷冻干燥3天得到沙棘微球。
实施例2
一种党参沙棘固体饮料,其原料按重量份包括:粒径为80目的蜜炙党参24g、沙棘微球50g、冻干蓝莓果粉16g、蔗糖30g、羧甲基纤维素4g;
其中,在沙棘微球的制备过程中,选取新鲜饱满的沙棘,洗净后榨汁,过滤2次得到沙棘果汁;取60g沙棘果汁在125℃加热常压灭菌15min,冷却至室温,然后加入30g木糖醇、186g蒸馏水(降温至40-50℃)、24g海藻酸钠混匀,冷却至室温,用柠檬酸钠调节pH=4.5得到溶液A;将溶液A滴加至质量分数为3%的乳化钙水溶液中,3-5s后过滤捞出,置于冷却的蒸馏水中静置2min,捞出,于-20℃真空冷冻干燥2天得到沙棘微球。
实施例3
一种党参沙棘固体饮料,其原料按重量份包括:粒径为60目的蜜炙党参26g、沙棘微球40g、冻干草莓果粉20g、低聚木糖24g、羧甲基纤维素6g;
其中,在沙棘微球的制备过程中,选取新鲜饱满的沙棘,洗净后榨汁,过滤2次得到沙棘果汁;取40g沙棘果汁在123℃加热常压灭菌18min,冷却至室温,然后加入14g木糖醇、132g蒸馏水(降温至40-50℃)、14g海藻酸钠混匀,冷却至室温,用柠檬酸钠调节pH=4.8得到溶液A;将溶液A滴加至质量分数为2.5%的乳化钙水溶液中,3-5s后过滤捞出,置于冷却的蒸馏水中静置2min,捞出,于-18℃真空冷冻干燥2.5天得到沙棘微球。
对比例1
选取新鲜饱满的沙棘,洗净后榨汁,过滤2次得到沙棘果汁;取40g沙棘果汁按照常规喷雾干燥方法制得沙棘果粉。
对比例2
一种沙棘微球的制备方法,不添加木糖醇和柠檬酸钠,其他同实施例3中沙棘微球的制备方法。
实验1
检测实施例1-3的党参沙棘固体饮料,结果如表1所示。

由表1可以看出,本发明所述固体饮料口味酸甜。
实验2
取实施例3制得的沙棘微球、对比例1制得的沙棘果粉、对比例2制得的沙棘微球,检测各自的总黄酮含量和味道,并与原始的沙棘果汁比较;结果如表2所示。
总黄酮含量的检测方法为:以芦丁为对照品,按照外标法计算总黄酮的含量。具体公式为:总黄酮含量=(C芦丁*A样品*V样品)/(A芦丁*V沙棘果汁);
其中,C芦丁为对照品溶液中芦丁的浓度,mg/mL;
A芦丁为对照品溶液的紫外吸光度;
A样品为待测样品溶液的紫外吸光度;
V样品为待测样品配置成待测样品溶液的稀释体积,mL;
V沙棘果汁为制备待测样品时,所用沙棘果汁的体积,mL;
表2检测结果
由表2可以看出,本发明制得的沙棘微球,其口感好,黄酮含量较高。

Claims (10)
1.一种党参沙棘固体饮料,其特征在于,其原料按重量份包括:蜜炙党参12-15份、沙棘微球15-25份、冻干果粉8-12份、甜味剂10-15份、增稠剂2-4份;
其中,在沙棘微球的制备过程中,将沙棘果汁、木糖醇、热水、海藻酸钠混匀,冷却至室温,调节pH=4.5-5得到溶液A;将溶液A滴加至乳化钙水溶液中进行交联,然后过滤,水洗,真空冷冻干燥得到沙棘微球。
2.根据权利要求1所述党参沙棘固体饮料,其特征在于,用柠檬酸钠调节pH。
3.根据权利要求1或2所述党参沙棘固体饮料,其特征在于,沙棘果汁、木糖醇、热水、海藻酸钠的重量比为20:5-10:62-70:5-8。
4.根据权利要求1-3任一项所述党参沙棘固体饮料,其特征在于,乳化钙水溶液的质量分数为2-3%。
5.根据权利要求1-4任一项所述党参沙棘固体饮料,其特征在于,真空冷冻干燥的温度为-15至-20℃,真空冷冻干燥的时间为2-3天。
6.根据权利要求1-5任一项所述党参沙棘固体饮料,其特征在于,沙棘果汁经灭菌处理;灭菌温度为120-125℃,灭菌时间为15-20min,灭菌压力为常压;优选地,热水温度为40-50℃。
7.根据权利要求1-6任一项所述党参沙棘固体饮料,其特征在于,冻干果粉包括蓝莓果粉、草莓果粉、苹果果粉、桃子果粉或葡萄果粉。
8.根据权利要求1-7任一项所述党参沙棘固体饮料,其特征在于,增稠剂为羧甲基纤维素。
9.根据权利要求1-8任一项所述党参沙棘固体饮料,其特征在于,甜味剂包括木糖醇、低聚木糖、蔗糖、葡萄糖中的至少一种。
10.根据权利要求1-9任一项所述党参沙棘固体饮料,其特征在于,蜜炙党参的粒径为40-80目。
