本发明公开了一种冲泡即食的藜麦胶原蛋白羹组合物及其制备方法,涉及食品技术领域。该组合物包括即食藜麦10‑40份;即食燕麦5‑20份;大豆低聚肽1‑4份;麦芽精粉1‑4份;小分子胶原蛋白粉1‑4份;甜味剂2‑10份。本发明提供的冲泡即食的藜麦胶原蛋白羹组合物,只需要开水冲泡即可食用,可作为早餐、代餐、养身餐类食品。适合早餐、差旅出行、加班救急餐、代餐、长期食用,对食用者缺钙、肥胖、三高问题均具有显著的改善作用。制备方法简单、适于工业化生产。

技术领域
本发明涉及即食食品技术领域,尤其涉及一种冲泡即食的藜麦胶原蛋白羹组合物及其制备方法。
背景技术
藜麦:藜麦(学名:Chenopodium quinoa Willd),原产于南美洲安第斯山区,是印加土著居民的主要传统食物,有5000-7000多年的食用和种植历史,由于其具有独特的营养价值。其养育了印加民族,古代印加人称之为“粮食之母”。联合国粮农组织认为藜麦是一种单体植物即可基本满足人体基本营养需求的食物,正式推荐藜麦为最适宜人类的全营养食品。联合国将2013年宣布为国际藜麦年,以促进人类营养健康和食品安全,实现发展最佳粮食。
然而,藜麦表面有一层水溶性的皂苷,吃起来是苦的,口感不好,通常需要去除,因此,将藜麦制成食物时,做法繁琐,不方便。
随着社会的发展,当今人们生活节奏日益加快。快节奏的生活使得现代的都市人难有时间去做健康可口的早餐,从而选择在外面买。目前,充斥中国零售快消市场的食品主要是方便面,即食奶茶产品、即食麦片产品以及代餐粉,然而这些产品,营养结构单一,不利于人体健康。
鉴于此,有必要研制一款营养均衡、精准满足人体需要、一泡即食、健康快捷的食品。
发明内容
本发明所要解决的技术问题是如何使用藜麦制得一款营养均衡、精准满足人体需要、一泡即食、健康快捷的食品。
为了解决上述问题,本发明提出以下技术方案:
第一方面,本发明提供一种冲泡即食的藜麦胶原蛋白羹组合物,包括以下重量份组分:
即食藜麦10-40份;
即食燕麦5-20份;
大豆低聚肽1-4份;
麦芽精粉1-4份;
小分子胶原蛋白粉1-4份;
甜味剂2-10份。
其进一步地技术方案为,还包括至少一种以下辅料:
2-10份果干、2-10份奇亚籽、2-10份木瓜粉、2-10份椰奶粉、2-10份芝麻粉、2-10份果仁。
其进一步地技术方案为,所述果干包括蔓越莓果干、葡萄干、蓝莓干、猕猴桃干、苹果干中的至少一种。
其进一步地技术方案为,所述果仁包括核桃仁、杏仁、松仁、腰果仁、开心果仁、榛仁、花生、瓜子仁中的至少一种。
其进一步地技术方案为,所述即食藜麦由以下加工方法制得:
S1,将藜麦于沸水中焯水4-6min,捞出,降温至15-25℃;
S2,将S1得到的藜麦进行冷冻干燥,至藜麦干燥度为97-99%时取出,即得所述即食藜麦。
其进一步地技术方案为,所述步骤S2具体包括:
将S1得到的藜麦于-2-1℃下冷冻4h后,在80-85℃下真空干燥。
其进一步地技术方案为,所述甜味剂为木糖醇、白砂糖或冰糖。
第二方面,本发明提供一种制备如第一方面所述冲泡即食的藜麦胶原蛋白羹组合物的方法,将即食藜麦、即食燕麦、大豆低聚肽、麦芽精粉、小分子胶原蛋白、甜味剂按比例混匀,包装。
其进一步地技术方案为,还包括加入2-10份果干、2-10份奇亚籽、2-10份木瓜粉、2-10份芝麻粉、2-10份椰奶粉或2-10份果仁中的至少一种辅料,混匀后包装。
与现有技术相比,本发明所能达到的技术效果包括:本发明提供的冲泡即食的藜麦胶原蛋白羹组合物,包括藜麦、燕麦、大豆低聚肽、麦芽精、小分子胶原蛋白等物质,只需要开水冲泡即可食用。藜麦作为一种藜科植物其蛋白质含量与牛肉相当,其品质不亚于肉源蛋白与奶源蛋白,与其他组分搭配的共同作用下,可完全满足人们对于营养健康均衡的需求,作为早餐、代餐、养身餐类食品。适合早餐、差旅出行、加班救急餐、代餐、长期食用,对食用者缺钙、肥胖、三高问题均具有显著的改善作用。制备方法简单、适于工业化生产。

本发明实施例提供的藜麦胶原蛋白羹组合物,只需要开水冲泡即可食用。藜麦作为一种藜科植物其蛋白质含量与牛肉相当,其品质也不亚于肉源蛋白与奶源蛋白,与其他组分搭配的共同作用下,可完全满足人们对于营养健康均衡的需求,可作为早餐、代餐、养身餐类食品。
其中,藜麦的营养价值超过任何一种传统的粮食作物,是全谷全营养完全蛋白碱性食物,藜麦所含氨基酸种类丰富,除了人类必须的9种必须氨基酸,还含有许多非必须氨基酸,特别是富集多数作物没有的赖氨酸,并且含有种类丰富且含量较高的矿物元素,以及多种人体正常代谢所需要的维生素,不含胆固醇与麸质,糖含量、脂肪含量与热量都属于较低水平。藜麦的全营养性和高膳食纤维等特性决定了它对健康的益处。研究表明,藜麦富含的维生素、多酚、类黄酮类、皂苷和植物甾醇类物质具有多种健康功效。藜麦具有高蛋白,其所含脂肪中不饱和脂肪酸占83%,还是一种低果糖低葡萄糖的食物能在糖脂代谢过程中发挥有益功效。
燕麦不但具有很高的营养价值,而且具有一定的医疗作用。燕麦中的蛋白质、脂肪、赖氨酸含量和热量均比较高;还富含亚油酸,长期食用,可降低胆固醇在心血管中的积累,对于防止老年高血压、糖尿病、高血脂等大有裨益。而且燕麦具有防癌、治疗便秘等医疗作用。
大豆低聚肽含有丰富的生理活性,包括抗氧化、降血压、降血脂、降血糖、降低胆固醇、抗疲劳、增强免疫力。能够促进能量新陈代谢、抗肥胖而且能消除疲劳、增强肌肉伸缩及抗过敏等。
麦芽精粉是用大麦芽进行深加工提取其大麦精华而制成的。麦芽精可以起到健胃消食,促消化的功效,脾胃虚弱、运化无力而致食积不消者、食欲不振、肠胃功能失调等可以使用,并起到一定的补虚健脾、疏肝理气的功效,能用于肝郁气滞,胸胁胀闷,及肝脾不各,嗳气少食等证,常与香橼、佛手等配伍,以增其舒肝和胃之效。
小分子胶原蛋白是一种重要的蛋白质,是人体骨骼、软骨组织中的重要组成成分。胶原蛋白富含18种氨基酸,其中含维持人体生长所必需的氨基酸有七种。胶原蛋白所含甘氨酸、脯氨酸和羟脯氨酸是各种蛋白质中含量最高的也是特有的,羟脯氨酸是血浆中运输钙到骨细胞的运载工,对减缓骨质疏松有着重要意义。胶原蛋白的氨基酸组成中含有羟脯氨酸及羟赖氨酸,这是其他食品中所缺乏的,而总的氨基酸组成与关节软骨及其网状组织的成分相近,可以说胶原蛋白是软骨的细胞“度身定做”的天然成分。
本发明通过将上述物质进行组合搭配,可完全满足现代城市生活的快节奏人群对于方便速食的食品营养健康的要求,具有营养均衡、简单方便即食的特点。
具体实施例中,本发明提供的冲泡即食的藜麦胶原蛋白羹组合物还包括至少一种以下辅料:
2-10份果干、2-10份奇亚籽、2-10份木瓜粉、2-10份芝麻粉、2-10份椰奶粉、2-10份果仁。
所述果干包括蔓越莓果干、葡萄干、蓝莓干、猕猴桃干、苹果干中的至少一种。
所述果仁包括核桃仁、杏仁、松仁、腰果仁、开心果仁、榛仁、花生、瓜子仁中的至少一种。
辅料的添加赋予了冲泡即食的藜麦胶原蛋白羹组合物的更多种风味,满足人们对于口感的需求。同时,果仁果干中的营养元素有助于食用者护心健脑、降低胆固醇、使人体获得固齿、补益、养身的效果。
在一实施例中,所述即食藜麦由以下加工方法制得:
S1,将藜麦于沸水中焯水4-6min,捞出,降温至15-25℃;
S2,将S1得到的藜麦进行冷冻干燥,至藜麦干燥度为97-99%时取出,即得所述即食藜麦。
本实施例能够在不破坏藜麦有效成分的前提下,将藜麦制成即食藜麦,保留藜麦的营养成分,留住最佳营养效果最佳。
在另一实施例中,所述步骤S2具体包括:
将S1得到的藜麦于-2-1℃下冷冻4h后,在80-85℃下真空干燥。
本实施例由于全程干燥温度控制在85℃以内,藜麦的有效成分被最大化地保留而不被破坏,出来的产品复原率达到97%。使得加工出来的藜麦,不像烘焙的那样令人上火,且可以一泡即食,最大化保留原有的营养成分和结构。
在另一实施例中,所述甜味剂为木糖醇、白砂糖或冰糖。
木糖醇在体内的新陈代谢不需要胰岛素参与,又不使血糖值升高,糖尿病人群也适合食用。
本发明提供的冲泡即食的藜麦胶原蛋白羹组合物,利用即食藜麦配合即食燕麦、麦芽精粉、大豆低聚肽、小分子胶原蛋白粉、添加蔓越莓、椰奶粉、木瓜粉、奇亚籽等物质,可配制出不同的口味、适宜不同人群食用的营养餐,长期食用,对食用者的肠道清理、补钙、补充胶原蛋白、身体健康有着优良的作用。
实施例1:本发明实施例提供的冲泡即食的藜麦胶原蛋白羹组合物,包括15重量份即食藜麦,10重量份即食燕麦,2重量份大豆低聚肽,2重量份麦芽精粉,2重量份小分子胶原蛋白粉,5重量份木糖醇。将上述组分混匀后包装成45g/袋。
实施例2:本发明实施例提供的冲泡即食的藜麦胶原蛋白羹组合物,包括25重量份即食藜麦,15重量份即食燕麦,4重量份大豆低聚肽,4重量份麦芽精粉,4重量份小分子胶原蛋白粉,8重量份木糖醇、4重量份蔓越莓干、4重量份木瓜粉、8重量份奇亚籽。将上述组分混匀后包装成罐。
实施例3:本发明实施例提供的冲泡即食的藜麦胶原蛋白羹组合物,包括40重量份即食藜麦,20重量份即食燕麦,3重量份大豆低聚肽,1重量份麦芽精粉,4重量份小分子胶原蛋白粉,4重量份白砂糖、3重量份蓝莓干、6重量份木瓜粉、4重量份奇亚籽、10份核桃仁。将上述组分混匀后包装成55g/袋。
实施例4:本发明实施例提供的冲泡即食的藜麦胶原蛋白羹组合物,包括10重量份即食藜麦,5重量份即食燕麦,1重量份大豆低聚肽,3重量份麦芽精粉,2重量份小分子胶原蛋白粉,6重量份冰糖、3重量份蓝莓干、7份蔓越莓干、6重量份木瓜粉、4重量份奇亚籽、10份核桃仁。将上述组分混匀后包装成袋。
实施例5:本发明实施例提供的冲泡即食的藜麦胶原蛋白羹组合物,包括10重量份即食藜麦,5重量份即食燕麦,1重量份大豆低聚肽,3重量份麦芽精粉,2重量份小分子胶原蛋白粉,6重量份冰糖、3重量份蓝莓干、7份蔓越莓干、6重量份木瓜粉、5份芝麻粉、4重量份奇亚籽、2份核桃仁。将上述组分混匀后包装成袋。
效果实验
选用实施例1制得的冲泡即食的藜麦胶原蛋白羹组合物,每袋加入100g开水冲泡得藜麦胶原蛋白羹。
选取60例患者作为观察对象,食用实施例1冲泡得到的藜麦胶原蛋白(羹),每天3袋,持续3个月。在患者化疗、放疗期间食用,体质得到明显改善,体能增强、使得化疗、放疗持续进行,患者在治疗后恢复良好。
另外选择观察者:清理肠道者35例,糖尿病者6例,高血糖者16例,三高患者6例,肥胖患者5例,缺钙者20例。单独服用实施例1制得的藜麦胶原蛋白羹,1-3袋/天,2个月后,观察者中有,降低血糖显著者13例,减重显著者3例,无改变者3例。另外有6例血脂改善者,2例闭合者,4例有不同程度的缩小,缺钙改善者18例。80%以上高血糖患者具有明显改善。
另在60例观察者中,服用后的其他方面改善比较显著的有:睡眠质量改善者48人,便秘改善者37人,感冒频发改善者39人,皮肤状况改善者23人,头晕目眩改善者38人,消化不良改善者29人。
由以上统计数据可知,本发明所述的冲泡即食的藜麦胶原蛋白羹组合物,可以很好的提供身体所需营养,蛋白质含量高,提高机体的免疫能力,并且具有良好的降血脂、降血压、降血糖的功效,对肥胖、三高、缺钙者具有很好的改善。

4.如权利要求2所述的冲泡即食的藜麦胶原蛋白羹组合物,其特征在于,所述果仁包括核桃仁、杏仁、松仁、腰果仁、开心果仁、榛仁、花生、瓜子仁中的至少一种。
5.如权利要求1所述的冲泡即食的藜麦胶原蛋白羹组合物,其特征在于,所述即食藜麦由以下加工方法制得:
S1,将藜麦于沸水中焯水4-6min,捞出,降温至15-25℃;
S2,将S1得到的藜麦进行冷冻干燥,至藜麦干燥度为97-99%时取出,即得所述即食藜麦。
6.如权利要求5所述的冲泡即食的藜麦胶原蛋白羹组合物,其特征在于,所述步骤S2具体包括:
将S1得到的藜麦于-2-1℃下冷冻4h后,在80-85℃下真空干燥。
7.如权利要求1所述的冲泡即食的藜麦胶原蛋白羹组合物,其特征在于,所述甜味剂为木糖醇、白砂糖或冰糖。
8.一种制备如权利要求1-7任一项所述冲泡即食的藜麦胶原蛋白羹组合物的方法,其特征在于,将即食藜麦、即食燕麦、大豆低聚肽、麦芽精粉、小分子胶原蛋白、甜味剂按比例混匀,包装。
9.如权利要求8所述的制备冲泡即食的藜麦胶原蛋白羹组合物的方法,其特征在于,还包括加入2-10份果干、2-10份奇亚籽、2-10份木瓜粉、2-10份芝麻粉、2-10份椰奶粉或2-10份果仁中的至少一种辅料,混匀后包装。
