本发明属于食品领域,具体涉及一种通过馅料改变粉圆颜色的彩色粉圆结构。
背景技术
粉圆是许多的点心甜品无可或缺的食材,现有的粉圆的种类相当多样化,主要包含小颗粒粉圆(俗称珍珠)、大颗粒粉圆(俗称波霸)、透明粉圆及彩色粉圆、芋圆、地瓜圆等多种形态,现有的粉圆一般是以淀粉类的地瓜粉制成圆形颗粒状的粉圆,只要将粉圆经过烹煮熟化过程,即可调制成口感滑润且软Q的珍珠粉圆食品。
在前述的粉圆中,粉圆的颜色主要是通过食材的颜色进行上色,例如像芋圆、地瓜圆就是通过芋头、地瓜等原料混入地瓜粉(淀粉)中加以混合而得;这些彩色粉圆受到市场欢迎也具有一定的市场销售量。
彩色粉圆因为要配合食材与淀粉产生颜色,所以口味相当少,大多数只有芋圆(紫色)、地瓜圆(橙色)、火龙果圆(红色)、黑糖粉圆(茶色);除此之外就没有额外的颜色;所以消费者有时会觉得彩色粉圆较为单调无趣。
发明内容
本发明的主要目的在于提供一种彩色粉圆结构,主要用于改善现有彩色粉圆需要配合食材、淀粉后混合才能产生颜色的缺陷,进一步将粉圆制作成双层结构,其中,外层采用淀粉包覆住内馅,内馅选用有颜色的食材,经过水煮后,淀粉经过水煮后变成透明状,让消费者可直接观视内馅的颜色,带来新奇与趣味感;此外,内馅无须跟淀粉混合搅拌,所以口味与颜色不受到限制,让多种食材都可以包入内馅,让彩色粉圆口味丰富。
本发明的结构包含有:内馅层与外层。
所述内馅层是由白豆沙与砂糖通过模具形成的一个立体形状,并且加入具有颜色的食物材料,使得该内馅层为具有色彩的立体形状。
所述外层是由树薯淀粉、羧甲基纤维素钠、羟丙基磷酸二淀粉与水调和后形成的一个黏糊状的软质立体结构;再将前述的内馅层与外层加以结合,使得该内馅层被该外层包覆住形成一个彩色粉圆结构。
将前述的彩色粉圆结构放入热水加热,所述外层被热水煮熟后变成透明状,使得消费者可直接观看到所述内馅层的颜色与形状。

如图1-2所示,本发明一种彩色粉圆结构100,包含有:内馅层10与外层20。
如图2所示,该内馅层10是由白豆沙与砂糖通过模具形成的一个立体形状,较佳的白豆沙与砂糖的比例约3:1,举例而言白豆沙300克对应砂糖100克,并且加入具有颜色的食物材料,使得该内馅层10为具有色彩的立体形状。

基本上内馅层10与外层20能通过手工搓成球状的外型,也能通过机具滚动成型,让外层20附着在内馅层10的外侧;较佳的成型后的彩色粉圆结构其粒径在0.8~3cm之间。在尚未烹煮前的彩色粉圆结构100需要通过冷冻加以保存。
将所述彩色粉圆结构100放入热水加热,所述外层20被热水煮熟后变成透明状,使得消费者可直接观看到该内馅层10的颜色与形状。通过上述的说明本发明有别于现有彩色粉圆需要用食材与淀粉混合的单调口感,内馅层10进一步能用新鲜的蔬果、糖果等食材,口感独特能受到消费者欢迎。

所述外层是由树薯淀粉、羧甲基纤维素钠、羟丙基磷酸二淀粉与水调和后形成的一个黏糊状的软质立体结构;再将前述的内馅层与外层加以结合,使得该内馅层被该外层包覆住形成一个彩色粉圆结构;
将所述彩色粉圆结构放入热水加热,所述外层被热水煮熟后变成透明状,使得消费者可直接观看到所述内馅层的颜色与形状。
