Abstract
本发明涉及食品加工技术领域,具体地说,涉及一种减肥营养代餐饼干。所述减肥营养代餐饼干由以下原料配制而成:小麦纤维粉、玉米粉、薏米粉、藕粉、花生蛋白、山药粉、莲子粉、芡实粉、茯苓粉、魔芋粉、橄榄油、蜂蜜、鸡蛋蛋黄液、鸡蛋清、L‑阿拉伯糖、低聚果糖、食品添加剂。本发明以小麦纤维粉、薏米粉、玉米粉中的不溶性膳食纤维与魔芋粉中的水溶性膳食纤维相结合,利用膳食纤维产生的饱腹感,减少对其他食物的摄入,从而形成摄入和消耗的能量差,起到控制体重的作用,同时,藕粉、花生蛋白、山药粉、莲子粉、芡实粉、茯苓粉、橄榄油、蜂蜜的加入不仅可改善代餐饼干的口感,还能补充人体所需要的营养成分,并对人体起到积极的保健功效。

本发明涉及食品加工技术领域,具体地说,涉及一种减肥营养代餐饼干。
背景技术
随着生活水平的提高,食物精细化程度越来越高,动物性食物所占比例大为增加。一些大城市居民膳食脂肪的产热比例,已由几十年前的20%~25%增加至目前的40%~45%,而膳食纤维的摄入量却明显降低,所谓“生活越来越好,纤维越来越少”。据调查,我国中老年人15%~20%便秘,六成是白领;据卫生部调查,我国有22%的人超重,6000多万人因肥胖而就医,高血压2亿多人,糖尿病5000多万人,高血脂1.6亿人。这些“富贵病”产生的主因之一是人们的膳食结构不合理,现代人更倾向于选择精细食物而不注意合理饮食。
膳食纤维是一种不能被人体消化的碳水化合物,国际上首次提出膳食纤维的概念是在60余年前。20世纪60年代,几位英国医生报道某些非洲国家的居民,由于食用高纤维食物,平均每日粗纤维摄入量高达35~40克,糖尿病、高脂血症等疾病的发病率比膳食纤维摄入量仅为4~5克的欧美国家的居民明显降低。由此,重新唤起了人们对膳食纤维的兴趣,并开始系统的研究。经过半个多世纪的研究,发现膳食纤维可以维持人体的肠道功能,调节血糖、血脂,以及降低心血管疾病的风险等,这些作用已经得到了深入地研究和肯定。因此,在膳食构成越来越精细的今天,膳食纤维与水、碳水化合物、蛋白质、矿物质、维生素、脂肪共同构成人体生活所必须的七大营养素。随着人们健康意识的提高,膳食纤维优越的生理功效和加工特性正在被越来越多的人所重视。
小麦纤维是从小麦植株中提取出来的天然原料,经过特定的物理工艺将其磨成粉状,在欧盟和美洲直接是作为天然的食品原料添加在各类食品中。小麦纤维不仅具有生理营养优势(例如丰富膳食纤维含量,减少脂肪,降低热量等),还具有技术优势(改善质地,控制水分输送,减少重量损耗等),其膳食纤维的含量达到98%以上,是一种优秀的天然膳食纤维原料,可用于食品的膳食纤维强化或提高产品的工艺性能。近年来,对小麦纤维的研究虽有了一定进展,但其在应用于成果转化方面还存在许多不足,还应多开发以小麦纤维为主原料的代餐食品,注重搭配和组合效果,并与企业、市场需求紧密结合,加强产业化研究,实现商业化大规模,才能使小麦纤维真正发挥其保健功效。
发明内容
本发明的目的在于,提供一种减肥营养代餐饼干,以解决上述的技术问题。
为实现上述目的,本发明所采用的技术方案是:
一种减肥营养代餐饼干,其特征在于:由以下重量份的原料配制而成:小麦纤维粉40-60份、玉米粉10-20份、薏米粉10-20份、藕粉10-20份、花生蛋白10-20份、山药粉5-10份、莲子粉5-10份、芡实粉5-10份、茯苓粉5-10份、魔芋粉2-5份、橄榄油5-15份、蜂蜜15-25份、鸡蛋蛋黄液5-10份、鸡蛋清10-15份、L-阿拉伯糖15-20份、低聚果糖15-20份、食品添加剂适量。
优选的,所述的减肥营养代餐饼干由以下重量份的原料配制而成:小麦纤维粉55份、玉米粉15份、薏米粉15份、藕粉15份、花生蛋白12份、山药粉8份、莲子粉8份、芡实粉8份、茯苓粉8份、魔芋粉3份、橄榄油10份、蜂蜜20份、鸡蛋蛋黄液8份、鸡蛋清12份、L-阿拉伯糖18份、低聚果糖18份、食品添加剂2份。
优选的,所述食品添加剂为碳酸氢铵和/或碳酸钙。
薏米的营养价值很高,被誉为“世界禾本科植物之王”,具有清热利湿、除风湿、利小便、益肺排脓、健脾胃、强筋骨等功效。
玉米的营养成分比较全面,一般含蛋白质8.5%、脂肪4.3%、糖类73.2%、钙0.022%、磷0.021%、铁0.0016%,还含有胡萝卜素、维生素B1、B2和尼克酸以及谷固醇、卵磷脂、维生素E、赖氨酸等。
莲子具有补脾止泻、止带、益肾涩精、养心安神等功效。
芡实具有益肾固精、补脾止泻、除湿止带等功效。
茯苓具有利水渗湿、健脾、宁心等功效,用于水肿尿少、痰饮眩悸、脾虚食少、便溏泄泻、心神不安、惊悸失眠等。
魔芋含有十六种氨基酸、十种矿物质微量元素和丰富的食物纤维,对防治糖尿病、高血压有特效,还具有补钙、平衡盐分、洁胃、整肠、排毒等作用。另外,魔芋中含量最大的葡甘露聚糖是非常优质的水溶性膳食纤维,基本无热量,由于魔芋膳食纤维的吸水能力非常强,1克魔芋膳食纤维在能吸收自身重量100倍的水分而形成凝胶,从而产生饱腹感,控制食欲而减少食物的摄入,减少碳水化合物,脂肪等热量物质的摄入。魔芋膳食纤维在胃中形成的凝胶通过胃蠕动在胃壁形成一层保护膜阻止对食物中糖分,脂肪的吸收。魔芋膳食纤维进入肠道后不会被消化道酶分解,因而不会被消化吸收,而且,由于其对肠道的刺激反而增加肠道的蠕动,减少食物在肠道内的停留时间,从而减少小肠对胆固醇、糖分、脂肪的吸收,达到减重效果。
橄榄油富含丰富的单不饱和脂肪酸—油酸,还有维生素A、维生素B、维生素D、维生素E、维生素K及抗氧化物等,被认为是迄今所发现的油脂中最适合人体营养的油。橄榄油的突出特点是含有大量的单不饱和脂肪酸,单不饱和脂肪酸除能供给人体热能外,还能调整人体血浆中高、低密度脂蛋白胆固醇的比例,能增加人体内的高密度脂蛋白HDL(好胆固醇)的水平和降低低密度脂蛋白LDL(坏胆固醇)水平,从而能防止人体内胆同醇过量。
蜂蜜中含有与人体血清浓度相近的多种无机盐和维生素、铁、钙、铜、锰、钾、磷等多种有机酸和有益人体健康的微量元素,以及果糖、葡萄糖、淀粉酶、氧化酶、还原酶等,具有滋养、润燥、解毒、美白养颜、润肠通便之功效,对妇、幼特别是老人具有良好保健作用。
有益效果:本发明是以小麦纤维粉为主料配制而成的一种膳食纤维含量较高的代餐饼干,以小麦纤维粉、薏米粉、玉米粉中的不溶性膳食纤维与魔芋粉中的水溶性膳食纤维相结合,利用膳食纤维产生的饱腹感,减少对其他食物的摄入,从而形成摄入和消耗的能量差,起到控制体重的作用,同时,藕粉、花生蛋白、山药粉、莲子粉、芡实粉、茯苓粉、橄榄油、蜂蜜、鸡蛋蛋黄液、鸡蛋清等原料的加入不仅可改善代餐饼干的口感,还能补充人体所需要的营养成分,并对人体起到积极的保健功效。

本实施例所述的减肥营养代餐饼干由以下重量份的原料配制而成:小麦纤维粉60份、玉米粉20份、薏米粉20份、藕粉20份、花生蛋白20份、山药粉10份、莲子粉10份、芡实粉10份、茯苓粉10份、魔芋粉5份、橄榄油15份、蜂蜜25份、鸡蛋蛋黄液15份、鸡蛋清20份、L-阿拉伯糖20份、低聚果糖15份、碳酸氢铵2份。

本实施例所述的减肥营养代餐饼干由以下重量份的原料配制而成:小麦纤维粉55份、玉米粉15份、薏米粉15份、藕粉15份、花生蛋白12份、山药粉8份、莲子粉8份、芡实粉8份、茯苓粉8份、魔芋粉3份、橄榄油10份、蜂蜜20份、鸡蛋蛋黄液8份、鸡蛋清12份、L-阿拉伯糖18份、低聚果糖18份、碳酸钙2份。

国家对高膳食纤维食品的要求是每100g产品中的高膳食纤维含量不低于6g。从上表中可知,本发明所述的代餐饼干中的膳食纤维含量可高达18.6g/100g,远高于6.0g/100g的标准,真正做到了高膳食纤维含量,非常适于计划控制自身体重的人群食用。

1.一种减肥营养代餐饼干,其特征在于:由以下重量份的原料配制而成:小麦纤维粉40-60份、玉米粉10-20份、薏米粉10-20份、藕粉10-20份、花生蛋白10-20份、山药粉5-10份、莲子粉5-10份、芡实粉5-10份、茯苓粉5-10份、魔芋粉2-5份、橄榄油5-15份、蜂蜜15-25份、鸡蛋蛋黄液5-10份、鸡蛋清10-15份、L-阿拉伯糖15-20份、低聚果糖15-20份、食品添加剂适量。
