背景技术
饼干是一种常见的点心,作为一种零食或添加饮食,食用方便又便于携带,已成为日常生活中不可或缺的一种食品。饼干起源于公元7世纪的波斯,早期的饼干都是作坊式生产的,真正形成产业则是在19世纪。在长期的航海中,面包因含水分较高(35%-40%),不适合作为储备粮食,水分含量较低而更适合保存的饼干得以“上位”。由于其特定的时代背景,第一代饼干主要的作用是“果腹”,也就是代餐和抵御饥饿,所以,只是比较简单的烘焙工艺,不太讲究色香味。20世纪后期,尤其是进入21世纪以来,饼干在世界大多数国家都取得了快速发展。随着经济的发展和生活水平的提高,人们的生活方式发生了很大的变化,饼干作为一种主食以外的美食而变得种类越来越多,也越来越好吃,其高糖、高油脂、高盐的特点充分满足了人们对休闲和口感的需求。然而,随着对健康的需求和品味的追求,人们对饼干的需求逐渐发生了微妙的变化,种种以膳食纤维为卖点的主打体重控制概念的膳食纤维饼干相继面市。
小麦低聚肽是从天然食品——小麦蛋白粉中提取的蛋白质,再经过定向酶切及特定小肽分离技术获得的小分子多肽物质,具有水溶性好,分散稳定,易吸收,生物活性强等特点,不仅能帮助人体更好地吸收蛋白质,还可以快速补充人体所需要基本营养,对一些疾病也能起到一定的防控作用。2012年9月5日,卫生部发布《关于批准中长链脂肪酸食用油和小麦低聚肽作为新资源食品等的公告》(卫生部公告2012年第16号)批准小麦低聚肽作为新资源食品。
经研究表明,小麦低聚肽具有以下作用:1、有抑制胆固醇上升的作用;2、能促进胰岛素分泌作用,其功能物质是低聚蛋氨酸,可用于调节人的血糖,改善糖尿病症状;3、含高谷酰胺,能够有效调节神经,也可作肠功能障碍时的特殊营养物质;4、具有ACE抑制作用、免疫调节、抗氧化等多种生物活性,能够刺激机体淋巴细胞增殖,增强巨噬细胞吞噬功能,提高机体抵御外界病原体感染的能力,降低机体发病率等;5、小麦低聚肽是小麦蛋白酶解产物,能抑制血管紧张素转化酶的活性,使血管紧张素原不能转变成能使血压升高的血管紧张素Ⅱ,从而生理地降低血压,而对正常血压不起用。
目前,市场上鲜见有含小麦低聚肽成分的膳食纤维代餐饼干,也很少有将小麦低聚肽应用到饼干加工的报道。因此,将小麦低聚肽作为原料生产加工膳食纤维代餐饼干,研究和开发小麦低聚肽膳食纤维代餐饼干具有重要意义。
发明内容
本发明的目的在于,提供一种小麦低聚肽膳食纤维代餐饼干,以解决上述的技术问题。
为实现上述目的,本发明所采用的技术方案是:
一种小麦低聚肽膳食纤维代餐饼干,其特征在于:由以下重量份的原料配制而成:小麦低聚肽粉15-20份、小麦纤维粉15-20份、低筋小麦粉20-30份、荞麦粉5-10份、玉米粉5-10份、豌豆肽粉4-6份、大豆肽粉4-6份、白芸豆粉4-6份、奇亚籽粉4-6份、辣木叶粉4-6份、复合谷物粉6-8份、脱脂奶粉2-4份、乳清蛋白粉3-6份、抗性糊精3-6份、海藻糖8-10份、L-阿拉伯糖8-10份、低聚果糖8-10份、鸡蛋液6-10份、亚麻籽油8-10份、椰子油4-6份、食品添加剂1-2份。
进一步地说,所述的小麦低聚肽膳食纤维代餐饼干由以下重量份的原料配制而成:小麦低聚肽粉18份、小麦纤维粉18份、低筋小麦粉25份、荞麦粉8份、玉米粉8份、豌豆肽粉5份、大豆肽粉5份、白芸豆粉5份、奇亚籽粉5份、辣木叶粉5份、复合谷物粉7份、脱脂奶粉3份、乳清蛋白粉5份、抗性糊精5份、海藻糖9份、L-阿拉伯糖9份、低聚果糖9份、鸡蛋液8份、亚麻籽油9份、椰子油5份、食品添加剂1.5份。
进一步地说,所述复合谷物粉由小米粉、糙米粉、糯米粉、灿米粉、薏米粉、黑米粉、红米粉、红豆粉、绿豆粉、黑豆粉、燕麦粉、高粱粉中的两种或多种混合而成。
进一步地说,所述食品添加剂为碳酸氢钠、碳酸氢铵或碳酸钙。
除小麦低聚肽粉外,本发明所述代餐饼干的原料配方中,其他主要原料的特性如下:
小麦纤维粉:是通过细胞破壁、蛋白熟化、分子链切割的技术,从小麦麸皮中提炼而成,金褐色的低脂低能优质膳食纤维食品,具有降血脂、降血糖、维持细胞组织健康、通便、减肥、消炎、预防癌症、保护脑健康、有利于生物素和B族维生素的体内合成等作用。
低筋小麦粉:蛋白质含量在6.5-8.5%,颜色较白,用手抓易成团;蛋白质含量低,麸质也较少,因此筋性亦弱,比较适合用来做蛋糕,松糕,饼干以及挞皮等需要蓬松酥脆口感的西点。
荞麦粉:1、荞麦蛋白质中含有丰富的赖氨酸成分,铁、锰、锌等微量元素比一般谷物丰富,而且含有丰富膳食纤维,是一般精制大米的10倍,所以荞麦具有很好的营养保健作用;2、荞麦含有丰富的维生素E和可溶性膳食纤维,同时还含有烟酸和芦丁(芸香甙),芦丁有降低人体血脂和胆固醇、软化血管、保护视力和预防脑血管出血的作用;3、荞麦含有的烟酸成分能促进机体的新陈代谢,增强解毒能力,还具有扩张小血管和降低血液胆固醇的作用;4、荞麦含有丰富的镁,能促进人体纤维蛋白溶解,使血管扩张,抑制凝血块的形成,具有抗栓塞的作用,也有利于降低血清胆固醇;5、荞麦中的某些黄酮成分还具有抗菌、消炎、止咳、平喘、祛痰的作用,因此,荞麦还有“消炎粮食”的美称,另外这些成分还具有降低血糖的功效。
玉米粉:玉米中含有大量的卵磷脂、亚油酸、谷物醇、维生素E、纤维素等,具有降血压、降血脂、抗动脉硬化、预防肠癌、美容养颜、延缓衰老等多种保健功效,也是糖尿病人的适宜佳品。玉米粉完全保留了玉米的营养成份和调理功能,并能改善粗粮面食品口感不好和不易消化的缺点。
豌豆肽粉:豌豆肽具有抗氧化性、清除自由基、降血压、降血脂、降胆固醇、抗癌、抗疲劳、抗衰老等多项对人体的积极作用,可帮助提高免疫力、调节肠胃、全面补充氨基酸、促进病后术后恢复、帮助纤体瘦身、促进胶原蛋白合成。与传统豌豆蛋白相比,豌豆肽不仅更易被消化吸收,还具有豌豆蛋白不具有的独特生理功能。
大豆肽粉:是一种由2-6个氨基酸组成的、分子量在200-800Dalton的混合肽产品。与原蛋白相比,大豆肽粉具有很好的水溶性、持水性、起泡性,能在pH2-10的任何酸碱条件下完全溶解。大豆肽粉能与其它食品配料完全溶合,并保持各自原有的物化及营养特性。除了营养丰富、容易吸收外,大豆肽粉还具有抗高血压、降低胆固醇、抗血栓形成,改善脂质代谢,防止动脉硬化,增强人体体能和肌肉力量,促进肌红细胞复原,消除疲劳、促进钙、磷和其它微量元素吸收,可以形成大豆肽络合钙直接进入血液,沉积在骨中,不需要维生素D的参与,达到提高骨骼强度的功效;还能促进大脑发育、提高记忆力,还具有增强吞噬细胞和B细胞的活力,增强免疫功能,具有抗癌、抗衰老、保护表皮细胞、防止黑色素沉着、消除氧化自由基,起血液清道夫作用;可促进细胞繁殖,保护肝脏,防止肝硬化,并有助于肝功能的恢复,对糖尿病人具有医疗和预防作用;并可预防老年性痴呆和胆结石的发生。

本实施例所述的小麦低聚肽膳食纤维代餐饼干,由以下原料配制而成:小麦低聚肽粉15kg、小麦纤维粉15kg、低筋小麦粉30kg、荞麦粉5kg、玉米粉10kg、豌豆肽粉4kg、大豆肽粉6kg、白芸豆粉4kg、奇亚籽粉6kg、辣木叶粉4kg、复合谷物粉8kg、脱脂奶粉2kg、乳清蛋白粉6kg、抗性糊精3kg、海藻糖8kg、L-阿拉伯糖8kg、低聚果糖10kg、鸡蛋液6kg、亚麻籽油8kg、椰子油6kg、碳酸氢钠1kg。
所述复合谷物粉包括小米粉2kg、糙米粉2kg、糯米粉2kg、灿米粉2kg。
实施例2:
本实施例所述的小麦低聚肽膳食纤维代餐饼干,由以下重量kg的原料配制而成:小麦低聚肽粉20kg、小麦纤维粉20kg、低筋小麦粉20kg、荞麦粉10kg、玉米粉5kg、豌豆肽粉6kg、大豆肽粉4kg、白芸豆粉6kg、奇亚籽粉4kg、辣木叶粉6kg、复合谷物粉6kg、脱脂奶粉4kg、乳清蛋白粉3kg、抗性糊精6kg、海藻糖10kg、L-阿拉伯糖10kg、低聚果糖8kg、鸡蛋液10kg、亚麻籽油10kg、椰子油4kg、碳酸钙2kg。
所述复合谷物粉包括薏米粉3kg、黑米粉3kg。
实施例3:
本实施例所述的小麦低聚肽膳食纤维代餐饼干,由以下重量kg的原料配制而成:小麦低聚肽粉18kg、小麦纤维粉18kg、低筋小麦粉25kg、荞麦粉8kg、玉米粉8kg、豌豆肽粉5kg、大豆肽粉5kg、白芸豆粉5kg、奇亚籽粉5kg、辣木叶粉5kg、复合谷物粉7kg、脱脂奶粉3kg、乳清蛋白粉5kg、抗性糊精5kg、海藻糖9kg、L-阿拉伯糖9kg、低聚果糖9kg、鸡蛋液8kg、亚麻籽油9kg、椰子油5kg、碳酸氢铵1.5kg。
所述复合谷物粉包括:小米粉1kg、薏米粉1kg、红豆粉1kg、绿豆粉1kg、黑豆粉1kg、燕麦粉1kg、高粱粉1kg。

1.一种小麦低聚肽膳食纤维代餐饼干,其特征在于:由以下重量份的原料配制而成:小麦低聚肽粉15-20份、小麦纤维粉15-20份、低筋小麦粉20-30份、荞麦粉5-10份、玉米粉5-10份、豌豆肽粉4-6份、大豆肽粉4-6份、白芸豆粉4-6份、奇亚籽粉4-6份、辣木叶粉4-6份、复合谷物粉6-8份、脱脂奶粉2-4份、乳清蛋白粉3-6份、抗性糊精3-6份、海藻糖8-10份、L-阿拉伯糖8-10份、低聚果糖8-10份、鸡蛋液6-10份、亚麻籽油8-10份、椰子油4-6份、食品添加剂1-2份。
2.根据权利要求1所述的小麦低聚肽膳食纤维代餐饼干,其特征在于:由以下重量份的原料配制而成:小麦低聚肽粉18份、小麦纤维粉18份、低筋小麦粉25份、荞麦粉8份、玉米粉8份、豌豆肽粉5份、大豆肽粉5份、白芸豆粉5份、奇亚籽粉5份、辣木叶粉5份、复合谷物粉7份、脱脂奶粉3份、乳清蛋白粉5份、抗性糊精5份、海藻糖9份、L-阿拉伯糖9份、低聚果糖9份、鸡蛋液8份、亚麻籽油9份、椰子油5份、食品添加剂1.5份。
3.根据权利要求1或2所述的小麦低聚肽膳食纤维代餐饼干,其特征在于:所述复合谷物粉由小米粉、糙米粉、糯米粉、灿米粉、薏米粉、黑米粉、红米粉、红豆粉、绿豆粉、黑豆粉、燕麦粉、高粱粉中的两种或多种混合而成。
4.根据权利要求1或2所述的小麦低聚肽膳食纤维代餐饼干,其特征在于:所述食品添加剂为碳酸氢钠、碳酸氢铵或碳酸钙。
