本发明属于食品加工技术领域,具体涉及一种补肾健脾空心挂面及其制备方法,所要解决的问题是提供一种具有补肾健脾功能,其有效成分损失少,口感佳,易于加工的补肾健脾空心挂面及其制备方法,采用的技术方案为:包括以下原料,杂粮面65‑85份,蔬菜粉(汁)1‑10、阿胶1‑10份,铁皮石斛1‑10份,丁香1‑10份,当归1‑10份,白扁豆1‑10份,人参1‑10份,枸杞1‑10份,山药1‑10份,麦芽1‑10份,陈皮1‑10份,芝麻1‑10份,食盐5‑10份,食用胶0.2‑1份,本发明广泛应用于挂面技术领域。

技术领域
本发明属于食品加工技术领域,具体涉及一种补肾健脾空心挂面及其制备方法。
背景技术
面条是人们日常生活当中非常喜爱的食品之一,人们常吃的面条有中江挂面、福建龙须面、兰州拉面等等,但这些面都是实心的,除了食用时煮的时间长外,面条入味能力也差,口感不好。然而普通的小麦面至制成的面条具有口感平淡,入味能力差、煮熟时间长的缺点,已不能再满足人们对于面条更多的需求。同时目前现有的挂面中有很多加入营养成分的保健挂面,其在加工过程中都要经过高温处理,会损失很多有效成分,需要一种既能保持有效成分活性,同时又可以起到补肾健脾功能的优质挂面。
发明内容
本发明克服了现有技术存在的不足,提供了一种具有补肾健脾功能,其有效成分损失少,口感佳,易于加工的补肾健脾空心挂面及其制备方法。
为了解决上述技术问题,本发明采用的技术方案为:
一种补肾健脾空心挂面,包括以下原料,杂粮面65-85份,蔬菜汁5-10份,阿胶1-10份,铁皮石斛1-10份,丁香1-10份,当归1-10份,白扁豆1-10份,人参1-10份,枸杞1-10份,山药1-10份,麦芽1-10份,陈皮1-10份,芝麻1-10份,食盐5-8份,食用胶0.2-1份。
所述杂粮面为荞麦面,小麦面,芦笋面,小米面,大麦面,玉米面,高粱面,燕麦面,豌豆面和藜麦面中的两种及以上。
所述食用胶为魔芋胶,卡拉胶,黄原胶和瓜尔豆胶中的一种。
所述蔬菜汁为胡萝卜汁,芹菜汁,南瓜汁,番茄汁,西兰花汁,黄瓜汁和菠菜汁中的一种。
所述食用胶用2-5份的秋葵粘液代替,所述秋葵粘液提取方法为:挑选新鲜秋葵嫩荚,清洗干净后切片,加蒸馏水浸泡,蒸馏水与秋葵的重量比为1.5-1.8:1,浸泡温度为45-55℃,浸泡时间为40-50min,浸泡后用组织匀浆机将秋葵组织打散并研磨成均匀的糊状物,然后将糊状物进行离心分离,得到的液体净化除杂得到秋葵粘液。
所述空心挂面还包括山茱萸1-10份,五味子1-10份。
一种补肾健脾空心挂面制备方法,按照以下步骤进行:
1)将所用原料阿胶,铁皮石斛,丁香,当归,白扁豆,人参,枸杞,山药,麦芽,陈皮,芝麻制粉,然后按照重量份混合,与所述杂粮面和食盐混合,加水和蔬菜汁和面,揉制好后醒面5-10min;
2)将第一步醒好的面与所述食用胶和1-2份的食盐和匀,放置于10-12℃的环境下静置45-60min;
3)将第二步中静置好的面进行逐步的降温处理,先降至5-7℃保持2-4h,再降至1-3℃保持1-2h,完成降温;
4)将第三步降温处理后的面团放入到面条成型机内拉出成型后切割;
5)将第四步切割后的面放入到微波功率800-1200W,温度45-55℃,真空度6500-7500Pa的条件下,干燥至水分含量为7-9%,即制得空心挂面。
本发明所采用原料的功效如下。
枸杞:味甘;性平。归肝;肾;肺经。养肝;滋肾;润肺。主治肝肾亏虚;头晕目眩;目视一清;腰膝酸软;阳痿贵精;虚劳咳嗽;消渴引饮。《本草正》载:“明耳目,添精固髓,健骨强筋,善补劳伤,尤止消渴。”现代医学研究证实,枸杞子子可调节机体免疫功能、能有效抑制肿瘤生长和细胞突变,具有延缓衰老、抗脂肪肝、调节血脂和血糖、促进造血功能等方面的作用。
阿胶:甘,平;归肺、肝、肾经;功能:补血滋阴,润燥,止血。主治用于血虚萎黄,眩晕心悸,肌痿无力,心烦不眠,虚风内动,肺燥咳嗽,劳嗽咯血,吐血尿血,便血崩漏,妊娠胎漏。
人参:为五加科植物的根。具有大补元气,补脾益肺,生津,安神益智的功效。主治元气虚脱证,肺脾心肾气虚证,热病气虚津伤口渴及消渴证,气虚外感或里实热结而邪实正虚之证。
山药:是薯蓣科植物薯蓣的干燥根茎。常见如“淮山药”和“怀山药”,“铁棍山药'。既可食用又可入药。味甘归脾。入脾、肺二经。有补脾养胃,生津益肺,补肾涩精的功效与作用。
当归:为伞形科植物当归的根。具有补血调经,活血止痛,润肠通便的功效。主治血虚诸证,血虚血瘀,月经不调,经闭,痛经,虚寒性腹痛,跌打损伤,痈疽疮疡,风寒痹痛,血虚肠燥便秘。
铁皮石斛:味甘、微苦,性微寒,无毒;是石斛中的上品,具有增强人体免疫功能,防治早期癌症的作用。具有滋阴清热、养胃生津、补肾益精之功效。
丁香:归脾、胃、肺、肾经,温中降逆,补肾助阳。 主治: 用于脾胃虚寒,呃逆呕吐,食少吐泻,心腹冷痛,肾虚阳痿。
麦芽:性味甘,平;归脾、胃经,具有行气消食,健脾开胃,回乳消胀的功效;主治食积不消,脘腹胀痛,脾虚食少,乳汁郁积,乳房胀痛,妇女断乳,肝郁胁痛,肝胃气痛。
陈皮:味苦、辛,性温。归肺、脾经。理气健脾,燥湿化痰。主要用于脘腹胀满,食少吐泻,咳嗽痰多。
白扁豆:健脾化湿,和中消暑。用于脾胃虚弱,食欲不振,大便溏泻,白带过多,暑湿吐泻,胸闷腹胀。炒白扁豆健脾化湿。用于脾虚泄泻,白带过多。
芝麻:味甘,性温无毒,入胃大小肠三经;行风气,通血脉,滑肠胃,润肌肤。
本发明与现有技术相比具有的有益效果是:本发明利用了具有补肾健脾功效的原料,使得挂面具有很好的补肾健脾功能,并且各组分之间相互配合,由补气调节免疫力的人参,阿胶,配补肾的铁皮石斛,丁香,白扁豆,枸杞,以及配健脾的山药,麦芽,陈皮,辅以当归,芝麻补血通脉润肠,来达到补肾健脾的功效。
本发明采用杂粮面作为主要成分,其中含有大量纤维素,能够降低人体的血糖血脂;食用胶能够在面条中起到凝胶作用与增稠作用,增加面条的韧性和弹性;采用秋葵粘液提取物,其中含有大量的果胶,同时还含有具有活性功效的多糖,来避免添加添加剂。添加的蔬菜汁能够给挂面带来明亮的颜色,带给消费者食欲。
同时本发明的制备过程中采用了降温处理的方法,最大程度的保留活性成分的活性,这样能够使得在挂面的生产过程中既能低温发酵产生气体,从而使得面中带有空隙,同时又可以将功效成分醒发,产生更易于人体吸收的小分子,醒发后的面质,易煮和入味。由于面易煮所以其活性成分损失会进一步减少。

结合以下实施例进行进一步的说明。
实施例1
一种补肾健脾空心挂面制备方法,按照以下步骤进行:
1)将所用原料阿胶,铁皮石斛,丁香,当归,白扁豆,人参,枸杞,山药,麦芽,陈皮,芝麻制粉,然后按照重量份阿胶10份,铁皮石斛5份,丁香5份,当归5份,白扁豆5份,人参10份,枸杞5份,山药5份,麦芽5份,陈皮5份,芝麻5份混合,与荞麦面和小麦面任意比例混合85份和食盐8份混合,加水和胡萝卜汁15份和面,揉制好后醒面5-10min;
2)将第一步醒好的面与魔芋胶1份和2份的食盐和匀,放置于10-12℃的环境下静置60min;
3)将第二步中静置好的面进行逐步的降温处理,先降至5-7℃保持4h,再降至1-3℃保持2h,完成降温;
4)将第三步降温处理后的面团放入到面条成型机内拉出成型后切割;
5)将第四步切割后的面放入到微波功率1200W,温度55℃,真空度6500-7500Pa的条件下,干燥至水分含量为7-9%,即制得空心挂面。
实施例2
一种补肾健脾空心挂面制备方法,按照以下步骤进行:
1)将所用原料阿胶,铁皮石斛,丁香,当归,白扁豆,人参,枸杞,山药,麦芽,陈皮,芝麻制粉,然后按照重量份阿胶5份,铁皮石斛10份,丁香10份,当归5份,白扁豆10份,人参5份,枸杞10份,山药10份,麦芽10份,陈皮5份,芝麻10份混合,与小麦面和芦笋面任意比例混合65份和食盐5份混合,加水和芹菜汁5份和面,揉制好后醒面5-10min;
2)将第一步醒好的面与卡拉胶0.5份和1份的食盐和匀,放置于10-12℃的环境下静置45min;
3)将第二步中静置好的面进行逐步的降温处理,先降至5-7℃保持2h,再降至1-3℃保持1h,完成降温;
4)将第三步降温处理后的面团放入到面条成型机内拉出成型后切割;
5)将第四步切割后的面放入到微波功率800W,温度45℃,真空度6500-7500Pa的条件下,干燥至水分含量为7-9%,即制得空心挂面。
实施例3
一种补肾健脾空心挂面制备方法,按照以下步骤进行:
1)将所用原料阿胶,铁皮石斛,丁香,当归,白扁豆,人参,枸杞,山药,麦芽,陈皮,芝麻制粉,然后按照重量份阿胶5份,铁皮石斛1份,丁香1份,当归5份,白扁豆1份,人参5份,枸杞1份,山药5份,麦芽5份,陈皮5份,芝麻5份混合,与小米面和大麦面任意比例混合的80份和食盐7份混合,加水和南瓜汁10份和面,揉制好后醒面5-10min;
2)将第一步醒好的面与黄原胶0.2份和1.5份的食盐和匀,放置于10-12℃的环境下静置50min;
3)将第二步中静置好的面进行逐步的降温处理,先降至5-7℃保持3h,再降至1-3℃保持1.5h,完成降温;
4)将第三步降温处理后的面团放入到面条成型机内拉出成型后切割;
5)将第四步切割后的面放入到微波功率1000W,温度50℃,真空度6500-7500Pa的条件下,干燥至水分含量为7-9%,即制得空心挂面。
实施例4
一种补肾健脾空心挂面制备方法,按照以下步骤进行:
1)将所用原料阿胶,铁皮石斛,丁香,当归,白扁豆,人参,枸杞,山药,麦芽,陈皮,芝麻制粉,然后按照重量份阿胶1份,铁皮石斛3份,丁香5份,当归1份,白扁豆5份,人参1份,枸杞5份,山药1份,麦芽1份,陈皮1份,芝麻10份混合,与高粱面和小麦面70份和食盐6份混合,加水和番茄汁12份和面,揉制好后醒面5-10min;
2)将第一步醒好的面与瓜尔豆胶0.6份和2份的食盐和匀,放置于10-12℃的环境下静置55min;
3)将第二步中静置好的面进行逐步的降温处理,先降至5-7℃保持3h,再降至1-3℃保持2h,完成降温;
4)将第三步降温处理后的面团放入到面条成型机内拉出成型后切割;
5)将第四步切割后的面放入到微波功率1200W,温度52℃,真空度6500-7500Pa的条件下,干燥至水分含量为7-9%,即制得空心挂面。
实施例5
一种补肾健脾空心挂面制备方法,按照以下步骤进行:
1)将所用原料阿胶,铁皮石斛,丁香,当归,白扁豆,人参,枸杞,山药,麦芽,陈皮,芝麻制粉,然后按照重量份阿胶3份,铁皮石斛3份,丁香3份,当归10份,白扁豆3份,人参3份,枸杞3份,山药3份,麦芽3份,陈皮3份,芝麻1份混合,与燕麦面和豌豆面任意比例混合的80份和食盐7份混合,加水和西兰花汁8份和面,揉制好后醒面5-10min;
2)将第一步醒好的面与秋葵粘液5份和1份的食盐和匀,放置于10-12℃的环境下静置60min;
3)将第二步中静置好的面进行逐步的降温处理,先降至5-7℃保持3h,再降至1-3℃保持2h,完成降温;
4)将第三步降温处理后的面团放入到面条成型机内拉出成型后切割;
5)将第四步切割后的面放入到微波功率1000W,温度50℃,真空度6500-7500Pa的条件下,干燥至水分含量为7-9%,即制得空心挂面。
秋葵粘液提取方法为:挑选新鲜秋葵嫩荚,清洗干净后切片,加蒸馏水浸泡,蒸馏水与秋葵的重量比为1.5:1,浸泡温度为45-55℃,浸泡时间为40-50min,浸泡后用组织匀浆机将秋葵组织打散并研磨成均匀的糊状物,然后将糊状物进行离心分离,得到的液体净化除杂得到秋葵粘液。这样提取的秋葵粘液含水量少,便于添加,同时分离后的固体干燥后可以制成粉加入杂粮面中。
实施例6
一种补肾健脾空心挂面制备方法,按照以下步骤进行:
1)将所用原料:阿胶,铁皮石斛,丁香,当归,白扁豆,人参,枸杞,山药,麦芽,陈皮,芝麻制粉,然后按照重量份阿胶 5份,铁皮石斛5份,丁香1份,当归1份,白扁豆5份,人参5份,枸杞5份,山药5份,麦芽5份,陈皮5份,芝麻1份混合,与玉米面和藜麦面任意比例混合的75份和食盐5份混合,加水和黄瓜汁10份和面,揉制好后醒面5-10min;
2)将第一步醒好的面与秋葵粘液2份和1份的食盐和匀,放置于10-12℃的环境下静置60min;
3)将第二步中静置好的面进行逐步的降温处理,先降至5-7℃保持4h,再降至1-3℃保持2h,完成降温;
4)将第三步降温处理后的面团放入到面条成型机内拉出成型后切割;
5)将第四步切割后的面放入到微波功率1000W,温度48℃,真空度6500-7500Pa的条件下,干燥至水分含量为7-9%,即制得空心挂面。
秋葵粘液提取方法为:挑选新鲜秋葵嫩荚,清洗干净后切片,加蒸馏水浸泡,蒸馏水与秋葵的重量比为1.8:1,浸泡温度为45-55℃,浸泡时间为40-50min,浸泡后用组织匀浆机将秋葵组织打散并研磨成均匀的糊状物,然后将糊状物进行离心分离,得到的液体净化除杂得到秋葵粘液。
上述任意两种杂粮的混合,由于食用胶的添加,不需要刻意调整比例。

1.一种补肾健脾空心挂面,其特征在于:包括以下原料,杂粮面65-85份,蔬菜汁5-15份、阿胶1-10份,铁皮石斛1-10份,丁香1-10份,当归1-10份,白扁豆1-10份,人参1-10份,枸杞1-10份,山药1-10份,麦芽1-10份,陈皮1-10份,芝麻1-10份,食盐5-8份,食用胶0.2-1份。
2.根据权利要求1所述的一种补肾健脾空心挂面,其特征在于:所述杂粮面为荞麦面,小麦面,芦笋面,小米面,大麦面,玉米面,高粱面,燕麦面,豌豆面和藜麦面中的两种及以上。
3.根据权利要求1所述的一种补肾健脾空心挂面,其特征在于:所述食用胶为魔芋胶,卡拉胶,黄原胶和瓜尔豆胶中的一种。
4.根据权利要求1所述的一种补肾健脾空心挂面,其特征在于:所述蔬菜汁为胡萝卜汁,芹菜汁,南瓜汁,番茄汁,西兰花汁,黄瓜汁和菠菜汁中的一种。
5.根据权利要求1所述的一种补肾健脾空心挂面,其特征在于:所述食用胶用2-5份的秋葵粘液代替,所述秋葵粘液提取方法为:挑选新鲜秋葵嫩荚,清洗干净后切片,加蒸馏水浸泡,蒸馏水与秋葵的重量比为1.5-1.8:1,浸泡温度为45-55℃,浸泡时间为40-50min,浸泡后用组织匀浆机将秋葵组织打散并研磨成均匀的糊状物,然后将糊状物进行离心分离,得到的液体净化除杂得到秋葵粘液。

7.一种权利要求所述的补肾健脾空心挂面制备方法,其特征在于按照以下步骤进行:
1)将所用原料阿胶,铁皮石斛,丁香,当归,白扁豆,人参,枸杞,山药,麦芽,陈皮,芝麻制粉,然后按照所述重量份混合,与所述杂粮面和食盐混合,加水和蔬菜汁和面,揉制好后醒面5-10min;
2)将第一步醒好的面与所述食用胶和1-2份的食盐和匀,放置于10-12℃的环境下静置45-60min;
3)将第二步中静置好的面进行逐步的降温处理,先降至5-7℃保持2-4h,再降至1-3℃保持1-2h,完成降温;
4)将第三步降温处理后的面团放入到面条成型机内拉出成型后切割;
5)将第四步切割后的面放入到微波功率800-1200W,温度45-55℃,真空度6500-7500Pa的条件下,干燥至水分含量为7-9%,即制得空心挂面。
