长期以来,熏制食物一直是许多文化饮食中的主食。然而,传统的熏制可能是一个很长的过程,对于一致性而言,该过程可能难以调节,并且可能带来一些来自在到达食物之前尚没有经历多阶段冷凝的烟雾的不太需要的风味。

本发明是一种多级烟雾冷凝器和捕集设备,用于生产熏制食物和饮料。该设备包括用于产生烟雾的装置和直接连接到用于产生烟雾的装置的贮存器。贮存器是封闭系统,并且包括贮存器内的第一腔室,第一腔室用于冷凝进入贮存器的烟雾中的一些烟雾,以及第二腔室,第二腔室用于使预冷凝的烟雾吸收在香料载体上,其中香料载体是木屑、沸石(通常用作商业吸附剂和催化剂的多微孔的铝硅酸盐矿物)、食物或它们的组合。

根据人们希望捕集的烟雾的类型,外管可以具有多种多样的长度和形状。对于本发明的示例,现在为止已经发现,使外管具有至少等于或大于容器高度的1.5倍的长度。
外管可以具有用于移除冷凝物的排放口或其它装置,该排放口或其它装置在比外部罐更靠近容器的距离处,并且在该示例性实施方案中,在外管的整个长度的10%至50%的距离内。当打开时,排放口是出口,用于将外管中的油和冷凝物移除,而不溢出返回到容器中,并且也不扑灭燃烧的木材粒料。排放口也有助于保持外管畅通。
在外部罐之后,外管连接到定位在外部罐内的贮存器中。像外部罐一样,优选地,贮存器具有封闭贮存器的内容物的盖子或其它类似的装置。
在贮存器的底部具有孔,外管穿过该孔来连接。在孔上方具有液体和气体可透过的滤网,该滤网横跨贮存器的横截面面积。并且在该图示的示例性实施方案中,滤网位于贮存器的底部上方,在贮存器内部的整个高度的至少10%的距离处。

未在外管内冷凝的烟雾继续向上进入贮存器。外部罐内部和贮存器外部之间的空间包括冰、水、冷却空气、乙二醇管路或冰浴器形式的冷却装置。在优选实施方案中,冷却装置是冰或冰浴器。
例如,木屑放置在贮存器内和滤网上方。当烟雾进入贮存器并穿过滤网时,烟雾可以赋予至香料载体,这里是木屑。在贮存器内冷凝的烟雾可以流动到贮存器底部和/或沿外管向下流动返回。并且任何冷凝物也可以聚集在贮存器中的筛网下面。

Claims (6)

烟雾产生器;
贮存器,其直接连接到所述烟雾产生器,其中所述贮存器是封闭系统并且包括所述贮存器内的第一腔室,以及第二腔室,所述第一腔室用于冷凝进入所述贮存器的烟雾中的一些烟雾,所述第二腔室用于使预冷凝的烟雾吸收在所述木屑香料载体上,
