本发明涉及霍山石斛保健食品技术领域,具体涉及一种霍山石斛解酒颗粒及其制备方法。
背景技术
霍山石斛,俗称米斛,是兰科石斛属的草本植物。茎直立,肉质,不分枝,具3-7节,淡黄绿色,有时带淡紫红色斑点,干后淡黄色。叶革质,2-3枚互生于茎的上部,斜出,舌状长圆形。总状花序1-3个,从落了叶的老茎上部发出,具1-2朵花;花淡黄绿色,开展;花瓣卵状长圆形,先端钝,具5条脉;唇瓣近菱形,长和宽约相等,花期5月,中国国家地理标志产品,主产于大别山区的安徽省霍山县,大多生长在云雾缭绕的悬崖峭壁崖石缝隙间和参天古树上,生于山地林中树干上和山谷岩石上。
目前,霍山石斛多以鲜条、干条、枫斗等形式服用。鲜条多为采收、去杂后直接食用或煲汤,现采现食,不能长期保存;干条是鲜条经采收、去杂、清洗(或不清洗)、烘干而成,此过程需要高温处理,所得产品水分一般控制在5%以下;枫斗是以鲜条经采收、去杂、清洗(或不清洗)、烘软、卷曲、定型、干燥、去叶鞘、整理而成,此工艺需多次高温处理,工序较多,耗时长。其中,鲜条不易保存,不适用于市场的广泛的推广与销售;干条和枫斗多采用煲汤、煮茶等方式服用,由于霍山石斛主要成分为多糖,其特点是分子量大,有粘性,水煮或泡茶等方式较难溶出,故总体生物利用度较低,以致霍山石斛的功效不能很好地发挥;且干条或枫斗加工过程能耗、人工费用较高,大大增加了霍山石斛相关产品的成本,长时间的加热处理,也使霍山石斛中的维生素等不耐热成分受到很大的破坏,这在很大程度上限制了霍山石斛产业的发展。
近年来,随着人们生活水平的提高,过量饮酒及酗酒的现象日益增多,酒精性肝病的发生率大大提高,严重影响了人们的身体健康和正常生活。

本发明所要解决的问题在于提供一种制备简单、生物利用率高的霍山石斛解酒颗粒及其制备方法。

本发明提供一种霍山石斛解酒颗粒,主要由以下重量分数的原料制成:霍山石斛70-90份、葛根40-60份、猴头菇60-80份、西洋参10-30份、乙醇脱氢酶4-6份、乙醛脱氢酶4-6份、玉米肽4-6份。
优选的,所述霍山石斛解酒颗粒中还包括以下重量份数的原料:40-60份葡萄糖。
优选的,所述霍山石斛解酒颗粒的制备方法包括以下步骤:
(1)将上述重量份数的霍山石斛粗碎获得粗粉,采用超微粉碎设备对霍山石斛粗粉进行超微粉碎获得超微粉;

优选的,所述步骤(3)中加入西洋参总量8倍的水,用70%乙醇提取3次,每次2h,合并提取液。

本发明还提供一种霍山石斛解酒颗粒的制备方法,包括以下步骤:
(1)将70-90份霍山石斛粗碎获得粗粉,采用超微粉碎设备对霍山石斛粗粉进行超微粉碎获得超微粉;
(2)在步骤(1)中获得的霍山石斛超微粉、60-80份猴头菇、40-60份葛根中加入水,进行真空煎煮,并将蒸煮液浓缩成浸膏;
(3)取10-30份西洋参加入乙醇,进行醇提,并将醇提取液浓缩成浸膏;
(4)将步骤(2)与步骤(3)中的浸膏混合均匀,与40-60份葡萄糖一起加入到制粒机中,得到预制颗粒;
(5)将预制颗粒、4-6份乙醇脱氢酶、4-6份乙醛脱氢酶、4-6份玉米肽依次置于混合机中混合,得到成品颗粒。
优选的,所述步骤(1)中将霍山石斛过5-8目筛网进行粗碎。
优选的,所述步骤(1)中超微粉碎时的温度为-30℃。
优选的,所述步骤(2)中加入霍山石斛超微粉、猴头菇、葛根总量20倍的水,于80℃真空煎煮3次,每次2h,合并提取液。
优选的,所述步骤(2)中将蒸煮液减压浓缩至相对密度为1.05-1.10,减压浓缩的温度为55-60℃,真空度为0.08Mpa。
优选的,所述步骤(3)中加入西洋参总量8倍的水,用70%乙醇提取3次,每次2h,合并提取液。
优选的,所述步骤(3)中将提取液减压浓缩至相对密度为1.05-1.10,减压浓缩的温度为55-60℃,真空度为0.08Mpa。
本发明的有益效果在于:
(1)本发明在颗粒中加入乙醇脱氢酶、乙醛脱氢酶,可以降解体内的乙醇、甲醇、乙醛和甲醛,同时玉米肽具有提高乙醇脱氢酶、乙醛脱氢酶活性的效果;
(2)本发明制备方法简单,与猴头菇、葛根、西洋参复配,使制得的颗粒具有明显的解酒护肝作用;
(3)霍山石斛先过筛网粉碎,再于-30℃进行超微粉碎,其营养成分流失少,且霍山石斛中的有效成分能充分释放;
(4)霍山石斛超微粉、猴头菇、葛根中加入水于80℃真空条件下进行煎煮,可以减少高温对营养成分的破坏;
(5)采用乙醇提取西洋参中的功效成分,避免了其他有机溶剂残留危害健康的问题,最大限度的保留西洋参中有效成分,同时乙醇可重复回收利用;
(6)对提取液和蒸煮液采用减压浓缩的方法,降低溶液达到沸腾时的温度,在较低温度条件下将水蒸发,减少营养成分的损失,提高产率。

具体实施方式
以下将结合说明书附图和实施例对本发明做进一步详细说明。
下述实施例中所用的试验材料和试剂等,如无特殊说明,均可从商业途径获得。
实施例1
(1)将70份霍山石斛过5目筛粗碎获得粗粉,采用超微粉碎设备在-30℃条件下对霍山石斛粗粉进行超微粉碎获得超微粉;
(2)在步骤(1)中获得的霍山石斛超微粉、60份猴头菇、40份葛根中加入20倍量的水,于80℃真空煎煮3次,每次2h,合并蒸煮液,并将蒸煮液减压浓缩成相对密度为1.05的稀浸膏;其中减压浓缩条件为温度55℃,真空度0.08Mpa;
(3)取10份西洋参加入8倍量70%乙醇,醇提3次,每次2h,合并醇提液,并将醇提取液浓缩成相对密度为1.05的稀浸膏;其中减压浓缩条件为温度55℃,真空度0.08Mpa;
(4)将步骤(2)与步骤(3)中的浸膏混合均匀,预热沸腾干燥制粒机,与40份葡萄糖一起真空上料至沸腾干燥制粒机中,得到预制颗粒;
(5)将预制颗粒、4份乙醇脱氢酶、4份乙醛脱氢酶、4份玉米肽依次置于混合机中混合,混合30min,得到成品颗粒;
(6)按包装规格3g/袋进行包装,装量差异控制在±7%。
其中步骤(4)、(5)、(6)均于D级洁净区内作业。
霍山石斛:富含多糖、氨基酸和石斛碱、石斛胺碱等十多种生物碱。
猴头菇:性味:味甘,性平。功能:补脾益气,助消化。
葛根:味甘微辛,气清香,性凉,主入脾胃经。
玉米肽:抑制胃对酒精的吸收,增加体内乙醇脱氢酶和乙醛脱氢酶的活性,促进酒精在体内的代谢和排出。
实施例2
(1)将80份霍山石斛过5目筛粗碎获得粗粉,采用超微粉碎设备在-30℃条件下对霍山石斛粗粉进行超微粉碎获得超微粉;
(2)在步骤(1)中获得的霍山石斛超微粉、70份猴头菇、50份葛根中加入20倍量的水,于80℃真空煎煮3次,每次2h,合并蒸煮液,并将蒸煮液减压浓缩成相对密度为1.05的稀浸膏;其中减压浓缩条件为温度55℃,真空度0.08Mpa;
(3)取20份西洋参加入8倍量70%乙醇,醇提3次,每次2h,合并醇提液,并将醇提取液浓缩成相对密度为1.05的稀浸膏;其中减压浓缩条件为温度55℃,真空度0.08Mpa;
(4)将步骤(2)与步骤(3)中的浸膏混合均匀,预热沸腾干燥制粒机,与50份葡萄糖一起真空上料至沸腾干燥制粒机中,得到预制颗粒;
(5)将预制颗粒、5份乙醇脱氢酶、5份乙醛脱氢酶、5份玉米肽依次置于混合机中混合,混合30min,得到成品颗粒;
(6)按包装规格3g/袋进行包装,装量差异控制在±7%。
其中步骤(4)、(5)、(6)均于D级洁净区内作业。
实施例3
(1)将90份霍山石斛过8目筛粗碎获得粗粉,采用超微粉碎设备在-30℃条件下对霍山石斛粗粉进行超微粉碎获得超微粉;
(2)在步骤(1)中获得的霍山石斛超微粉、80份猴头菇、60份葛根中加入20倍量的水,于80℃真空煎煮3次,每次2h,合并蒸煮液,并将蒸煮液减压浓缩成相对密度为1.10的稀浸膏;其中减压浓缩条件为温度60℃,真空度0.08Mpa;
(3)取30份西洋参加入8倍量70%乙醇,醇提3次,每次2h,合并醇提液,并将醇提取液浓缩成相对密度为1.10的稀浸膏;其中减压浓缩条件为温度60℃,真空度0.08Mpa;
(4)将步骤(2)与步骤(3)中的浸膏混合均匀,预热沸腾干燥制粒机,与60份葡萄糖一起真空上料至沸腾干燥制粒机中,得到预制颗粒;
(5)将预制颗粒、5份乙醇脱氢酶、5份乙醛脱氢酶、5份玉米肽依次置于混合机中混合,混合30min,得到成品颗粒;
(6)按包装规格3g/袋进行包装,装量差异控制在±7%。
其中步骤(4)、(5)、(6)均于D级洁净区内作业。
以上仅是本发明的优选实施方式,本发明的保护范围并不仅局限于上述实施例,与本发明构思无实质性差异的各种工艺方案均在本发明的保护范围内。
Claims (10)
1.一种霍山石斛解酒颗粒,其特征在于:主要由以下重量分数的原料制成:霍山石斛70-90份、葛根40-60份、猴头菇60-80份、西洋参10-30份、乙醇脱氢酶4-6份、乙醛脱氢酶4-6份、玉米肽4-6份。
2.根据权利要求1所述的霍山石斛解酒颗粒,其特征在于:所述霍山石斛解酒颗粒中还包括以下重量份数的原料:40-60份葡萄糖。
3.根据权利要求2所述的霍山石斛解酒颗粒,其特征在于:所述霍山石斛解酒颗粒的制备方法包括以下步骤:
(1)将上述重量份数的霍山石斛粗碎获得粗粉,采用超微粉碎设备对霍山石斛粗粉进行超微粉碎获得超微粉;
(2)在步骤(1)中获得的霍山石斛超微粉、猴头菇、葛根中加入水,进行真空煎煮,并将蒸煮液浓缩成浸膏;
(3)取西洋参加入乙醇,进行醇提,并将醇提取液浓缩成浸膏;
(4)将步骤(2)与步骤(3)中的浸膏混合均匀,与葡萄糖一起加入到制粒机中,得到预制颗粒;
(5)将预制颗粒、乙醇脱氢酶、乙醛脱氢酶、玉米肽依次置于混合机中,得到成品颗粒。
4.根据权利要求3所述的霍山石斛解酒颗粒,其特征在于:所述步骤(1)中将霍山石斛过5-8目筛网进行粗碎。
5.根据权利要求3所述的霍山石斛解酒颗粒,其特征在于:所述步骤(1)中超微粉碎时的温度为-30℃。
6.根据权利要求3所述的霍山石斛解酒颗粒,其特征在于:所述步骤(2)中加入霍山石斛超微粉、猴头菇、葛根总量20倍的水,于80℃真空煎煮3次,每次2h,合并提取液。
7.根据权利要求3所述的霍山石斛解酒颗粒,其特征在于:所述步骤(2)中将蒸煮液减压浓缩至相对密度为1.05-1.10,减压浓缩的温度为55-60℃,真空度为0.08Mpa。
8.根据权利要求3所述的霍山石斛解酒颗粒,其特征在于:所述步骤(3)中加入西洋参总量8倍的水,用70%乙醇提取3次,每次2h,合并提取液。
9.根据权利要求3所述的霍山石斛解酒颗粒,其特征在于:所述步骤(3)中将提取液减压浓缩至相对密度为1.05-1.10,减压浓缩的温度为55-60℃,真空度为0.08Mpa。
10.制备如权利要求1-9中任一项所述的霍山石斛解酒颗粒的制备方法,其特征在于:包括以下步骤:
(1)将70-90份霍山石斛粗碎获得粗粉,采用超微粉碎设备对霍山石斛粗粉进行超微粉碎获得超微粉;
(2)在步骤(1)中获得的霍山石斛超微粉、60-80份猴头菇、40-60份葛根中加入水,进行真空煎煮,并将蒸煮液浓缩成浸膏;
(3)取10-30份西洋参加入乙醇,进行醇提,并将醇提取液浓缩成浸膏;
(4)将步骤(2)与步骤(3)中的浸膏混合均匀,与40-60份葡萄糖一起加入到制粒机中,得到预制颗粒;
(5)将预制颗粒、4-6份乙醇脱氢酶、4-6份乙醛脱氢酶、4-6份玉米肽依次置于混合机中混合,得到成品颗粒。
