Abstract
本发明公开了一种海藻素食肉及其制备方法,涉及食品加工技术领域。该制备方法是先将海藻酸盐、增稠稳定剂倒入水中搅拌成均匀溶液,然后与凝胶盐和缓释剂充分混匀,灌至容器,放置成型,包装,冷冻,即得成品;或者在冷冻步骤之后,接着对其进行解冻、压榨除水、分切、包装,即得海藻素食肉成品,消费者打开包装可直接使用。本发明配方安全健康,生产工艺可行,口感似肉、弹韧有嚼劲,其网状结构有利于吸纳汤汁更入味,既可凉拌,也可热炒热涮,且具有轻卡控重、润肠、排除肠道重金属的功效,是一款创新型的海洋健康食品,具有很大的市场前景。
Description
技术领域
本发明涉及食品加工技术领域,具体涉及一种海藻素食肉及其制备方法。
背景技术
随着人们物质生活水平的提高,全球范围内超重和肥胖问题日益凸显。近年来体重管理成为人们格外关注的话题,低卡路里、高纤维、低脂肪的“轻食、素食”等健康食品受到越来越多消费者的欢迎。目前越来越多的人加入到了弹性素食的行列,这些变化推动了素食产品的迅速崛起。
海藻酸盐(Alginate)又名褐藻胶,是从海带、裙带菜、巨藻等海洋褐藻中提取的一类天然多糖,是一种水溶性天然膳食纤维,在全球食品领域广泛应用,其中海藻酸钠是用量最大的一种海藻酸盐。海藻酸盐具有低卡路里、增加肠道保水、吸除肠内重金属、促进肠道蠕动等健康功效。例如,1997年我国卫生部批准褐藻胶是具有排铅功能物质(批准号97-65),可用于生产排铅食品;2018年美国FDA正式公布海藻酸钠、菊粉、聚葡萄糖、抗性糊精等八种原料为膳食纤维,有利于人体健康。利用海藻酸盐可以与钙离子等形成热不可逆凝胶的特性,添加一些具有健康功效的物质,非常适合开发低卡轻食且具有保健作用的凝胶食品。
目前,海藻素食产品常见的有海藻沙拉、海藻凉粉、海藻脆丝、仿生脆藻等,如申请号200810238210.9公开了一种海藻酸盐凉粉的制作方法,申请号201711232067.8公开了一种保健海藻宽粉及其制备方法,然而并没有海藻素食肉及其制备方法的相关研究报道。
发明内容
本发明的任务之一在于提供一种海藻素食肉,其利用一种全新的配方和工艺制作而成,口感好,符合轻食趋势、填补了市场空白,具有很大的市场前景。
本发明采用了以下技术方案:
一种海藻素食肉,按照重量份计其包括以下原料:海藻酸盐0.5~5份、增稠稳定剂0.1~5份、凝胶盐0.2~2份、缓释剂0.1~1份及水87~99份。
作为本发明的一个优选方案,所述海藻酸盐为海藻酸钠、海藻酸钾、海藻酸镁或海藻酸铵中的一种或多种,1%浓度水溶液中,海藻酸盐的粘度为300~3000mPa.s。
作为本发明的另一个优选方案,所述增稠稳定剂为淀粉、魔芋粉、黄原胶、聚丙烯酸钠或羧甲基纤维素钠的一种或者几种组合。
优选的,所述凝胶盐为能与海藻酸盐反应形成凝胶的盐类物质,或含有这些盐类的物质,优选为钙盐、铁盐或者锌盐。
优选的,所述缓释剂为焦磷酸钠、三聚磷酸钠、六偏磷酸钠、焦磷酸二氢二钠、柠檬酸、葡萄糖酸-δ-内酯中的一种或多种的组合。
本发明的另一任务在于提供上述海藻素食肉的制备方法,依次包括以下步骤:
首先,将海藻酸盐及增稠稳定剂加入水中进行搅拌,搅拌成均匀溶液;
其次,将凝胶盐、缓释剂与所得溶液充分混合,灌装到一定模具中,放置成型;
最后,将成型后的产品进行包装、封口、冷冻即得成品。
上述海藻素食肉的另一制备方法,依次包括以下步骤:
首先,将海藻酸盐及增稠稳定剂加入水中进行搅拌,搅拌成均匀溶液;
其次,将凝胶盐、缓释剂与所得溶液充分混合,灌装到一定模具中,放置成型;
最后,将成型后的产品依次经冷冻、解冻、压榨除水、分切后,进行包装,即得成品。
上述第一个制备方法中,放置成型的时间为0.5~5h,成型温度5~50℃;冷冻温度为-60℃~-1℃。
上述第二个制备方法中,放置成型的时间为0.5~5h,成型温度5~50℃;冷冻温度为-60℃~-1℃。
上述第二个制备方法中,包装步骤之后进行杀菌,杀菌后成品在常温、冷藏或者冷冻保存;或者不杀菌,成品为冷藏或者冷冻保存。
与现有技术相比,本发明所带来的有益技术效果为:
(1)本发明利用海藻酸盐与不同盐类物质形成热不可逆凝胶的特性,采用冷冻工艺(第一个制备工艺)或冷冻解冻工艺(第二个制备工艺)处理海藻凝胶得到目标产品海藻素食肉,制作工艺简单,操作可控。
(2)本发明制作的产品口感似肉、弹韧有嚼劲,其中网状结构有利于吸纳汤汁更入味,既可凉拌,也可热食,也可做成即食食品,食用方法多样。
(3)本发明制作的产品含有较多的海藻酸盐膳食纤维,具有轻卡饱腹、润肠、排除肠道重金属等功效,对人体有很好的保健功能。
综上所述,本发明的海藻素食肉产品,其生产工艺可行、口感独特、食用方式多样,是一款创新型的海洋健康食品,具有很大的市场前景。
具体实施方式
本发明提出了一种海藻素食肉及其制备方法,为了使本发明的优点、技术方案更加清楚、明确,下面结合具体实施例对本发明做详细说明。
本发明所选原料均可通过商业渠道购买获得。
实施例1:
一种海藻素食肉,配料为:海藻酸钠300g,淀粉400g,魔芋粉50g,凝胶盐(硫酸钙)80g,缓释剂(焦磷酸钠)30g,余量水9140g。
上述海藻素食肉的制备方法:
先将海藻酸钠、魔芋粉、淀粉按照上述重量份称重并充分混匀,倒入8000g水中搅拌成均匀溶液;然后将硫酸钙和焦磷酸钠用1140g水冲释摇匀后与上述均匀溶液中充分混合,灌装在一定模具中,5℃静置成型1h,然后包装封口,放入-18℃冷库中进行冷冻即得成品。
实施例2:
一种海藻素食肉,配料为:海藻酸钾200g,羧甲基纤维素钠100g、凝胶盐(碳酸钙)20g和缓释剂(葡萄糖酸内酯)60g,余量水9620g。
上述海藻素食肉的制备方法:
先将海藻酸钾、羧甲基纤维素钠按照上述重量份称重并充分混匀,倒入9000g水中搅拌成均匀溶液;然后将20g碳酸钙和60g葡萄糖酸内酯用620g水冲释摇匀后与上述均匀溶液充分混合,灌装在一定模具中,30℃静置成型0.5h,放入-36℃冷库中进行冷冻,解冻,压榨除水,分切,包装,即得成品。
实施例3:
一种海藻素食肉,配料为:海藻酸铵100g,淀粉100g,聚丙烯酸钠10g,黄原胶10g,羧甲基纤维素钠40g,凝胶盐(硫酸亚铁)60g,缓释剂(三聚磷酸钠)10g,余量水9670g。
上述海藻素食肉冻的制备方法:
先将海藻酸铵、聚丙烯酸钠、黄原胶、羧甲基纤维素钠、淀粉按照上述重量份称重并充分混匀,倒入9000g水中搅拌成为均匀溶液;然后将40g硫酸亚铁用670g水冲释摇匀后与上述均匀溶液充分混合,灌装在模具中,40℃静置成型2h,然后包装封口,放入零下60℃冷库中进行冷冻即得成品。
实施例4:
一种海藻素食肉,配料为:海藻酸镁450g,黄原胶10g,凝胶盐(碳酸锌)30g,缓释剂(柠檬酸)20g,余量水9490g。
上述海藻素食肉的制备方法:
先将海藻酸镁、黄原胶按照上述重量份称重并充分混匀,倒入9000g水中搅拌成为均匀溶液;然后将30g碳酸锌和20g柠檬酸用490g水冲释摇匀后与上述均匀溶液充分混合,灌装在一定模具中,10℃静置成型3h,放入-5℃冷库中进行冷冻,解冻,压榨除水,分切,包装,即得成品。
实施例5:
一种海藻素食肉,配料为:海藻酸钠100g,海藻酸钾200g,海藻酸铵100g,淀粉50g,凝胶盐(碳酸亚铁)160g和缓释剂(葡萄糖酸内酯)100g,余量水9290g。
上述海藻素食肉的制备方法:
先将海藻酸钠、海藻酸钾、海藻酸铵、淀粉按照上述重量份称重并充分混匀,倒入8000g水中搅拌成为均匀溶液;然后将160g碳酸亚铁和100g葡萄糖酸内酯用1290g水冲释摇匀后与上述均匀溶液充分混合,灌装在一定模具中,50℃静置成型5h,放入-48℃冷库中进行冷冻,解冻,压榨除水,分切,包装,即得成品。
上述未述及的部分借鉴现有技术即可实现。
需要说明的是,在本说明书的教导下本领域技术人员所做出的任何等同方式,或明显变型方式均应在本发明的保护范围内。
Claims (10)
1.一种海藻素食肉,其特征在于,按照重量份计其包括以下原料:海藻酸盐0.5~5份、增稠稳定剂0.1~5份、凝胶盐0.2~2份、缓释剂0.1~1份及水87~99份。
2.根据权利要求1所述的一种海藻素食肉,其特征在于:所述海藻酸盐为海藻酸钠、海藻酸钾、海藻酸镁或海藻酸铵中的一种或多种,1%浓度水溶液中,海藻酸盐的粘度为300~3000mPa.s。
3.根据权利要求1所述的一种海藻素食肉,其特征在于:所述增稠稳定剂为淀粉、魔芋粉、黄原胶、聚丙烯酸钠或羧甲基纤维素钠的一种或者几种组合。
4.根据权利要求1所述的一种海藻素食肉,其特征在于:所述凝胶盐为能与海藻酸盐反应形成凝胶的盐类物质,或含有这些盐类的物质,优选为钙盐、铁盐或者锌盐。
5.根据权利要求1所述的一种海藻素食肉,其特征在于:所述缓释剂为焦磷酸钠、三聚磷酸钠、六偏磷酸钠、焦磷酸二氢二钠、柠檬酸、葡萄糖酸-δ-内酯中的一种或多种的组合。
6.根据权利要求1-5任一项所述的海藻素食肉的制备方法,其特征在于,依次包括以下步骤:
首先,将海藻酸盐及增稠稳定剂加入水中进行搅拌,搅拌成均匀溶液;
其次,将凝胶盐、缓释剂与所得溶液充分混合,灌装到一定模具中,放置成型;
最后,将成型后的产品进行包装、封口、冷冻即得成品。
7.根据权利要求1-5任一项所述的海藻素食肉的制备方法,其特征在于,依次包括以下步骤:
首先,将海藻酸盐及增稠稳定剂加入水中进行搅拌,搅拌成均匀溶液;
其次,将凝胶盐、缓释剂与所得溶液充分混合,灌装到一定模具中,放置成型;
最后,将成型后的产品依次经冷冻、解冻、压榨除水、分切后,进行包装,即得成品。
8.根据权利要求6所述的海藻素食肉的制备方法,其特征在于:放置成型的时间为0.5~5h,成型温度5~50℃;冷冻温度为-60℃~-1℃。
9.根据权利要求7所述的海藻素食肉的制备方法,其特征在于:放置成型的时间为0.5~5h,成型温度5~50℃;冷冻温度为-60℃~-1℃。
10.根据权利要求7所述的海藻素食肉的制备方法,其特征在于:包装步骤之后进行杀菌,杀菌后成品在常温、冷藏或者冷冻保存;或者不杀菌,成品为冷藏或者冷冻保存。
