本发明属于食品加工技术领域,具体涉及一种清肠胃补气血的营养代餐粉及其制备方法。
背景技术
随着现代社会的高速发展,人们的生活和工作节奏越来越快,很多年轻上班族为了节省时间基本都是食用面包充饥,或者是选择不吃早饭;而中午则过多依赖不够营养又过分油腻的盒饭、快餐,导致摄入的膳食营养不均匀;晚上又摄入较多的高热量食品,增加肠胃负担,并且导致很多人晨起不思饮食,造成恶性循环。不规律的一日三餐成为了健康的隐形杀手,再加上工作繁忙没有较多的运动时间,使得上班族身体处在亚健康状态。
目前,市面上出现了各种用于提高人体免疫力以及减肥用的代餐粉,代餐粉是一种配方食品,属于特殊膳食,具有高纤维、低热量、易有饱腹感的特性,并且食用方便,只需用开水冲服即可,因此,越来越多的上班族选择代餐粉充饥。但是目前的代餐粉一般都以五谷和蔬菜为主要组分,营养相对比较单一,功能也只限于果腹和补充营养,不能对一些慢性病辅助治疗,难以满足现代人身体的需求。
发明内容
针对上述背景,本发明旨在提供一种以粮食、蔬菜、野菜、水果以及药食同源的中草药复配而成的清肠胃补气血的营养代餐粉,以解决现有技术中存在的问题,本发明采取的技术方案为:
一种清肠胃补气血的营养代餐粉,包括以下重量份的原料:亚麻籽3-4份、黑米3-4份、红豆1-2份、枸杞1-2份、山药1-2份、娃娃菜1-2份、苹果0.3-0.6份、南瓜籽0.6-1份、苜蓿0.3-0.6份、陈皮0.3-0.5份、杜仲叶0.3-0.5份、花椒籽0.2-0.5份、蛋壳0.1-0.3份、白兰瓜皮0.1-0.3份、蒲公英0.1-0.3份、山楂0.1-0.3份、菊花0.1-0.3份、黄芪0.1-0.3份、生姜0.1-0.3份、灵芝0.1-0.3份。
本发明中加入的亚麻籽可以清肠排毒,花椒籽可以补充人体所需的矿物质,并且能够使代餐粉具有调料香味;蛋壳可以补钙也可以补充矿物元素;白兰瓜皮清肝升阳;蒲公英消炎;黄芪补气;南瓜籽含有高含量的亚油酸,能够有效地降低血糖;本发明的各原料复配制成的代餐粉能够清理肠道垃圾,补充人体所需的营养,有效改善亚健康状态,并且本发明的代餐粉口感正常、没有甜味,还可以适用于血压高、血糖高人群食用,作为辅助治疗产品。

S1、按照以下重量份的配比称取各原料:亚麻籽3-4份、黑米3-4份、红豆1-2份、枸杞1-2份、山药1-2份、娃娃菜1-2份、苹果0.3-0.6份、南瓜籽0.6-1份、苜蓿0.3-0.6份、陈皮0.3-0.5份、杜仲叶0.3-0.5份、花椒籽0.2-0.5份、蛋壳0.1-0.3份、白兰瓜皮0.1-0.3份、蒲公英0.1-0.3份、山楂0.1-0.3份、菊花0.1-0.3份、黄芪0.1-0.3份、生姜0.1-0.3份、灵芝0.1-0.3份;
S2、将S1称取的亚麻籽、南瓜籽、花椒籽晾晒脱水后,进行压榨,压榨成薄饼状后进行烘烤,烘烤温度为70-90℃,烘烤时间9-14h,烘烤结束后粉碎备用;
S3、将S1称取的黑米、红豆、生姜、娃娃菜、山楂、蒲公英、苜蓿、白兰瓜皮采用低温烘焙技术进行熟制,烘焙温度为60-65℃,烘焙时间为7-9h,烘焙结束后将其粉碎,然后过200目筛,备用;
S4、将S1称取的枸杞、山药、黄芪、杜仲叶、陈皮、灵芝、菊花自然晾晒3-15天脱水,然后将其粉碎备用;
S5、将S1称取的苹果脱水干燥后备用,将S1称取的蛋壳粉碎研磨后过200目筛,备用;
S6、将S2、S3、S4以及S5步骤处理后的各原料置于混合机中混合均匀后灭菌包装即得到清肠胃补气血的营养代餐粉。
本发明以中医食疗理论为基础,依据中国传统的食疗理论及现代营养学理论,精选粮食、蔬菜、野菜、水果以及一些药食同源的中草药进行营养搭配,含有丰富的膳食纤维、蛋白质及人体必需的磷、铁、钙等微量元素,容易被机体吸收,本发明既可以作为食品用于普通人清肠排毒、补气血调理亚健康症状,也可以作为辅助治疗药品供一些慢性疾病,如:肠胃病、三高患者服用,在减轻病情的同时可以增强患者的抵抗力,提高其身体素质。

下面结合具体实施例,进一步阐述本发明,本领域的技术人员容易理解,实施例所描述的具体物料配比、工艺条件及其结果仅用于说明本发明,而不应当也不会限制权利要求书中所详细描述的本发明。
实施例1
一种清肠胃补气血的营养代餐粉,包括以下重量份的原料:亚麻籽80g、黑米80g、红豆40g、枸杞20g、山药20g、娃娃菜40g、苹果6g、南瓜籽12g、苜蓿6g、陈皮6g、杜仲叶6g、花椒籽4g、蛋壳4g、白兰瓜皮2g、蒲公英2g、山楂2g、菊花2g、黄芪2g、生姜2g、灵芝2g。
上述清肠胃补气血的营养代餐粉的制备方法,包括以下步骤:
S1、按照以下重量份的配比称取各原料:亚麻籽80g、黑米80g、红豆40g、枸杞20g、山药20g、娃娃菜40g、苹果6g、南瓜籽12g、苜蓿6g、陈皮6g、杜仲叶6g、花椒籽4g、蛋壳4g、白兰瓜皮2g、蒲公英2g、山楂2g、菊花2g、黄芪2g、生姜2g、灵芝2g;
S2、将S1称取的亚麻籽、南瓜籽、花椒籽晾晒脱水后,进行压榨,压榨成薄饼状后进行烘烤,烘烤温度为80℃,烘烤时间8h,烘烤结束后粉碎备用;
S3、将S1称取的黑米、红豆、生姜、娃娃菜、山楂、蒲公英、苜蓿、白兰瓜皮采用低温烘焙技术进行熟制,烘焙温度为70℃,烘焙时间为8h,烘焙结束后将其粉碎,然后过200目筛,备用;
S4、将S1称取的枸杞、山药、黄芪、杜仲叶、陈皮、灵芝、菊花自然晾晒10天脱水,然后将其粉碎备用;
S5、将S1称取的苹果脱水干燥后备用,将S1称取的蛋壳粉碎研磨后过200目筛,备用;
S6、将S2、S3、S4以及S5步骤处理后的各原料置于混合机中混合均匀后灭菌包装即得到清肠胃补气血的营养代餐粉。
对实施例1制备的清肠胃补气血的营养代餐粉根据GB/T 29602-2013固体饮料的标准进行测试。

从表1可以看出,实施例1的代餐粉含糖率低、味道不甜,因此也适用于糖尿病患者食用,表2中可以看出实施例1制备的代餐粉的各项菌群数均达标,符合国家标准。
实施例2
本发明的配方中因为加入了花椒籽、黄芪、生姜等组分导致代餐粉口感较佳,因此对组分进行了筛选。标记组分:亚麻籽80g、黑米80g、红豆40g、枸杞20g、山药20g、娃娃菜40g、南瓜籽12g、苜蓿6g、陈皮6g、杜仲叶6g、花椒籽4g、蛋壳4g、白兰瓜皮2g、蒲公英2g、菊花2g、黄芪2g、生姜2g、灵芝2g为配方1,当向配方1中加入梨、芒果、香蕉、杨梅、柠檬、葡萄时均不能有效改善代餐粉的口感,最终选择加入苹果6g和山楂2g,代餐粉的口感大有改善。
对实施例1制备的代餐粉对胃病的治疗效果进行试验,选取50名具有胃胀、胃痛症状的,志愿者在不改变生活习惯及饮食习惯的前提下,晚餐服用实施例1制备的代餐粉35g,用300mL的开水冲调,浸泡5min中后食用,连续服用一个月。规定胃痛、胃胀等症状消失或减轻为有效,胃痛、胃胀等症状加重或没变化为无效,测试结果表面实施例1的代餐粉对胃病的有效率为92%,其中一些典型案例如下:
1、陈某,女,50,长期胃胀气,食用当天胃胀气的症状就明显改善,食用一个月后,胃胀气症状消失,胃口变好。
2、罗某,男,30,因长期饮食不规律导致频发性胃痛,食用一个月后,胃痛症状基本消失。
3、李某,女,25,肠胃炎,且便秘,食用两天后便秘改善,食用一个月后肠胃炎引起吃饭反胃恶心等症状消失,气色变好。
接着,对实施例1制备的代餐粉的辅助降血糖效果进行试验,选取血糖偏高但没有被确诊为糖尿病的志愿者共200人(男100例,女100例,年龄在35-65岁),这些志愿者平时没有服用降糖药物,将200名志愿者分为150人的实验组合50人的对照组,试验组的志愿者在不改变生活习惯及饮食习惯的前提下,晚餐服用实施例1制备的代餐粉35g,用300mL的开水冲调,浸泡5min中后食用,连续服用一个月;另外50名志愿者作为对照组,不改变饮食。血糖降低1.5mmol/L以上,认为该代餐粉有效;血糖上升或降1.5mmol/L以下,认为代餐粉无效,试验结果如表3所示。

从表3可以看出,服用实施例1代餐粉降血糖的有效率为54.7%,无效率为45.3%,所以实施例1制备的代餐粉可以辅助降血糖。
