本发明属于食品领域,特别是一种辅助降血糖、降血脂、具有减肥功能的魔芋代餐粉及其制备方法。
背景技术
随着社会的发展,生活节奏的加快,传统饮食结构和方式的改变导致的疾病已成为二十一世纪危害人类健康的主要问题。由于我国社会经济发展和物质生活水平不断提升,中国居民的饮食质量也得到了很大提高,人们的饮食习惯在发生着潜移默化的改变。部分人群由于饮食结构不合理,过精的膳食模式并以肉食性食物为主,导致能量、脂肪摄入过多,蛋白质、维生素、膳食纤维缺乏等饮食不平衡。能量过剩是导致肥胖的主要原因之一,以致近年肥胖者的人数日趋增多,而由肥胖带来的健康问题己不容忽视。据研究,肥胖至少与数十种疾病有关,如糖尿病、高脂血症、动脉硬化、冠心病、高血压等已经成为困扰全球身心健康的慢性非传染性疾病。
虽然我国近几年也开始关注营养代餐的研究,但是在我国营养代餐的概念和认知度仍然处于较低的水平。本发明所采用的营养代餐就是以魔芋粉、燕麦粉、乳清蛋白粉等为主的低热量营养代餐粉,其最大的特点就是其为一种代餐的形式,代替人们每天所吃的各种饭菜,节省了人们每天对食物进行称重、计算、记录以及烹调的时间,符合现代人快节奏、高效率的生活特点同时,其在低脂肪、低盐、低糖的基础上包含了人体每天所需要的各种营养素的成分而且热量很低。不仅为人体提供了全面均衡的营养,具有热量低,富含膳食纤维,含有补充人体维持正常功能必需的蛋白质、氨基酸、维生素和微量元素,而且还具有多种保健功能和药理效应,如降血脂、降血压、降血糖、减肥等功效。
发明内容
为了解决上述的技术问题,本发明提供了一种具有降血脂、降血压、降血糖、减肥等功效的多功能魔芋代餐粉。该代餐粉主要是以魔芋精粉、燕麦粉、乳清蛋白粉等为主要原料,辅以其它原料,共同作用于人体,起到上述的各种作用。

本发明的多功能魔芋代餐粉的制备方法,包括下述的步骤:
(1)按以下的重量份数比例取各原料:
魔芋精粉:300-400、茶多酚:10-20、燕麦粉:1100-1300 、乳清蛋白粉:500-650 、低聚木糖:80-120、维生素B6:0.1 、麦芽糖醇:50-100 、麦芽糊精:50-100 、β-环状糊精:10-30 、葡萄糖酸锌2-5、富马酸亚铁10-25、果蔬粉:50-80;
(2)将魔芋精粉、茶多酚、燕麦粉、乳清蛋白粉、低聚木糖、维生素B6、麦芽糖醇、麦芽糊精、β-环状糊精、葡萄糖酸锌、富马酸亚铁、果蔬粉过60-100目筛;
(3)将步骤(2)中的原料混合后包装。
魔芋精粉的制备方法如下:
a取新鲜的洗净的鲜魔芋,去皮,切块,然后与乙醇溶液混合后一起投入至粉碎机中粉碎,同时加入有效SO2浓度为25mg/L~100mg/L的亚硫酸盐溶液;乙醇溶液为鲜魔芋的重量的1-3倍,物料中乙醇的浓度大于或等于30%;将粉碎后的物料送入砂轮磨中进一步粉碎;
b将步骤a中经砂轮磨粉碎后的物料投入带滤网的离心机中,可溶性物质及小颗粒杂质在离心力的作用下穿过滤网随溶剂分离出,魔芋精粉留在滤网上,再取体积浓度为30%的乙醇溶液洗涤滤网内的魔芋精粉,离心分离,将所得的魔芋精粉真空干燥;
c将干燥后的魔芋精粉投入至浸提罐内,加入体积浓度大于或等于30%的乙醇溶液浸提,然后经粗磨机研磨,输送至旋液分离器,分离出淀粉、色素、无机盐;再加入体积浓度为30%的乙醇溶液清洗、离心分离,研磨机研磨,离心脱水,微波干燥。
以上的魔芋精粉各项指标如下:
产品纯度≥90.5%;黏度≥28000 mPa•S;水分≤10.0%;灰分≤3%;含沙量≤0.04%。
现代科学分析证明,魔芋特有的主要成分是葡甘露聚糖,葡甘露聚糖化学结构是一种非离子型水溶性的高分子多糖,是目前发现的最优良的可溶性膳食纤维多糖之一。另外,魔芋还含有其它的多糖、淀粉、蛋白质、矿物质、微量元素如锌、锰、镁、铁、钙、钾和17 种氨基酸及多种维生素;茶多酚是从天然植物茶叶中分离提取出来多酚类化合物的复合体,资源丰富,具有多种保健功能和药理效应,如降血脂、降血压、降血糖、防止动脉硬化和血栓形成、保护肝脏等功效;燕麦中蛋白质质量分数高达20%,氨基酸含量均衡,含多种不饱和脂肪酸,富含钙、磷、铁、维生素B1和B2等多种营养素,对高血脂和糖尿病具有一定的预防与治疗作用;乳清蛋白是一类利用现代生产工艺从牛奶中提取出来的蛋白质,以其纯度高,消化吸收率高、氨基酸组成最合理,含有生物活性多肤包括乳球蛋白、乳清蛋白、免疫球蛋白、乳铁蛋白和多种分解多肽等诸多优点而被认为是“蛋白之王”,在心血管、糖尿病、婴儿营养、抗衰老、提高免疫、改善体质等诸多方面具有显著作用;
低聚木糖是以富含木聚糖的植物(如玉米芯、蔗渣、棉籽糖、麦鼓、桦木等)为原料,通过木聚糖酶水解,分离精制而得的一类非消化性低聚糖,具有调节肠道菌群、润肠通便、提高免疫力、降低血压、血清胆固醇及血糖等功效;
维生素B6又称吡哆素,其包括吡哆醇、吡哆醛及吡哆胺,在体内以磷酸酯的形式存在,是一种水溶性维生素,为人体内某些辅酶的组成成分,参与氨基酸、糖原、脂肪酸等多种代谢反应;
麦芽糖醇是一种新型的功能性甜味剂,由于其具有低热量、非龋齿性、难消化性、促进钙的吸收等多种生理特性,是常用的调味剂;选择麦芽糊精、β-环状糊精作为稳定剂,其中麦芽糊精可改善产品冲调性,β-环状糊精可使物质稳定化,同时β-环状糊精还可消除或减轻食品的异味;富马酸亚铁、葡萄糖酸锌分别是人体可吸收的铁和锌的化合物,补充矿物质和微量元素;利用果蔬粉综合调整产品风味。
本发明的有益效果在于,本发明的代餐粉,不仅为人体提供了全面均衡的营养,具有热量低,富含膳食纤维,含有补充人体维持正常功能必需的蛋白质、氨基酸、维生素和微量元素,而且还具有多种保健功能和药理效应,如降血脂、降血压、降血糖、减肥等功效。

实施例1
多功能魔芋代餐粉的制备方法,具体如下:
按以下的重量比例取各原料:
步骤1原料的预处理:
分别按以上表格中的比例取魔芋精粉、茶多酚、燕麦粉、乳清蛋白粉、低聚木糖、维生素B6、麦芽糖醇、麦芽糊精、β-环状糊精、葡萄糖酸锌、富马酸亚铁、柠檬粉,经缓冲区域除去外包装进入备料室,过60目筛备用。
以上是以柠檬粉为例,也可以是其它的果蔬粉,比如蓝莓粉、香橙粉、苹果粉、南瓜粉、菠萝粉、草莓粉、猕猴桃粉、山楂粉、荔枝粉、南瓜粉、番茄粉、菠菜粉、胡萝卜粉、冬瓜粉等等,也可以是各种果蔬粉的混合物。
魔芋精粉的制备方法如下:
a取新鲜的洗净的鲜魔芋,去皮,切块,然后与乙醇溶液混合后一起投入至粉碎机中粉碎,同时加入有效SO2浓度为25mg/L~100mg/L的亚硫酸盐溶液;乙醇溶液为鲜魔芋的重量的1-3倍,物料中乙醇的浓度大于或等于30%;将粉碎后的物料送入砂轮磨中进一步粉碎;
b将步骤a中经砂轮磨粉碎后的物料投入带滤网的离心机中,可溶性物质及小颗粒杂质在离心力的作用下穿过滤网随溶剂分离出,魔芋精粉留在滤网上,再取体积浓度为30%的乙醇溶液洗涤滤网内的魔芋精粉,离心分离,将所得的魔芋精粉真空干燥;
c将干燥后的魔芋精粉投入至浸提罐内,加入体积浓度大于或等于30%的乙醇溶液浸提,然后经粗磨机研磨,输送至旋液分离器,分离出淀粉、色素、无机盐;再加入体积浓度为30%的乙醇溶液清洗、离心分离,研磨机研磨,离心脱水,微波干燥。
以上的魔芋精粉各项指标如下:
产品纯度90.7%;黏度28300 mPa•S;水分9.6%;灰分2.4%;含沙量0.03%。
步骤2 称量:
按照生产要求,依据产品配方,计算各原辅料的投料量,然后准确称量。称量后的原料分别装入洁净、干燥的容器内,并贴上标签,标明品名、规格、编号、重量、日期、操作者等。转入下步工序。
步骤3 配料、混合
将称量好的魔芋精粉、茶多酚、燕麦粉、乳清蛋白粉、低聚木糖、维生素B6、麦芽糖醇、麦芽糊精、β-环状糊精、葡萄糖酸锌、富马酸亚铁、柠檬粉进行总混合。将混合好的物品置洁净、干燥的有盖容器中,标明品名、规格、编号、重量、日期、操作者等,并及时送到中间站。
步骤4 灌装
检查粉末包装机,确认辅助零部件安装符合包装要求。将物料用粉末包装机进行灌装,每包20g,装样量差异不超过±5%。用聚酯/铝/聚乙烯药品包装用复合膜对混合物进行包装。
生产过程中应随时注意对装样量差异情况进行多次的抽查,并对设备进料进行调整、控制。出开机用空袋调整至外观与密封性合格后,加物料调整包装装量,每1-3分钟检查装量与密封性,合格后5-10分钟检查一次,至装量稳定后,每30分钟检查一次并记录。
按操作规程要求做好机械和场地的清洁卫生,加工场所无其他杂物,每批次前后要做好清场工作,并做好生产记录。
步骤5 外包装
按批包装指令单领取包装材料,并核对数量,检查包装材料质量,整齐码放在包装材料存放区。接到合格检验报告单后方可进行包装。从洁净区中间站领取内包装合格的待包品,核对标签与实物是否相符,通过传递窗进入外包装间。
按操作规程要求做好机械和场地的清洁卫生,加工场所无其它杂物,每批次前后要做好清场工作,并做好生产记录。
步骤6质检入库
由QA人员核对批号、生产日期、有效期、标签等内容,QC人员对成品按企业标准进行检验。
质检合格后入库,并按规定贮藏条件保存。
对比例1:
用市售普通魔芋精粉取代本专利新开发的魔芋精粉,其余原料不变。各原料的配比如下,其余的步骤执行对比例1。
对比例2:
用膳食纤维取代魔芋精粉,其余原料不变。各原料的配比如下,其余的步骤执行对比例2。
对比例3:
大豆蛋白粉取代乳清蛋白粉,其余原料不变。各原料的配比如下,其余的步骤执行对比例3。
本发明与对比例1-3的产品对小鼠糖耐量的影响
取SPF级健康ICR小鼠(雌性,体重24~28g)50只,采用尾静脉注射四氧嘧啶诱导制备高血糖小鼠模型,将小鼠随机分为5组,分别为对照组、实施例1产品组、对比例1-3产品组。将相应样品分别配制成浓度为13.5mg/mL的溶液,样品各组均按20mL/kg·bw灌胃,对照组给予相同剂量的蒸馏水,每日一次,持续30d。试验前后分别称量各组别小鼠体重,试验结束时各组小鼠禁食5h,测定给葡萄糖前(即0h)血糖值,对照组给予同体积蒸馏水,20min后各组按2.0g/kg·bw经口给予葡萄糖,取尾血测定给葡萄糖后各组0.5、2h的血糖值,观察对照组与各样品溶液组给葡萄糖后各时间点(0、0.5、2h)血糖值及血糖曲线下面积的变化,试验结果如下表所示:
本发明与对比例1-3的产品对小鼠降血脂功能的影响
取SPF级健康SD大鼠(雄性,体重200±20g)50只,采用高脂饲料(78.70%基础饲料、10%蛋黄粉、10%猪油、1%胆固醇、0.3%胆酸)喂养制备成高胆固醇脂代谢紊乱动物模型,造模两周后不禁食尾部采血,根据TC水平将模型对照组随机分成5组,包括对照组、实施例1产品组、对比例1-3产品组。实施例1产品组、对比例1-3产品组每天经口给予100mg/kg·bw受试样品,并定期称量体重,灌胃给予两周后于实验结束时不禁食采血,采血后尽快分离血清,测定血清TC、TG、LDL-C、HDL-C水平。试验结果如下表所示:
从以上的数据中可以看出,本发明中将特定重量配比的魔芋精粉、茶多酚、燕麦粉、乳清蛋白粉、低聚木糖、维生素B6、麦芽糖醇、麦芽糊精、β-环状糊精、葡萄糖酸锌、富马酸亚铁、柠檬粉相结合,其降血糖、降血脂、减轻体重效果要明显的优于对比文件1-3中的配比组合,是本配方的最佳搭配比例,是本发明人付出了创造性的劳动所得到。

(3)将干燥后的魔芋精粉投入至浸提罐内,加入体积浓度大于或等于30%的乙醇溶液浸提,然后经粗磨机研磨,输送至旋液分离器,分离出淀粉、色素、无机盐;再加入体积浓度为30%的乙醇溶液清洗、离心分离,研磨机研磨,离心脱水,微波干燥;
所述魔芋精粉产品纯度≥90.5%,黏度≥28000mPa•S;水分≤10.0%;灰分≤3%;含沙量≤0.04%。
2.如权利要求1所述的一种多功能魔芋代餐粉的制备方法,包括下述的步骤:
(1)按以下的重量份数比例取各原料:
魔芋精粉:300-400、茶多酚:10-20、燕麦粉:1100-1300 、乳清蛋白粉:500-650 、低聚木糖:80-120、维生素B6:0.1-0.5 、麦芽糖醇:50-100 、麦芽糊精:50-100 、β-环状糊精:10-30、葡萄糖酸锌:2-5、富马酸亚铁:10-25、果蔬粉:50-80;
(2)将魔芋精粉、茶多酚、燕麦粉、乳清蛋白粉、低聚木糖、维生素B6、麦芽糖醇、麦芽糊精、β-环状糊精、葡萄糖酸锌、富马酸亚铁、果蔬粉过60-100目筛;
(3) 将步骤(2)中的原料混合后包装。
3.如权利要求2所述的一种多功能魔芋代餐粉的制备方法,其特征在于,
将步骤(3)中的物料用粉末包装机进行灌装,每包25g,装样量差异不超过±5%,用聚酯/铝/聚乙烯药品包装用复合膜对混合物进行包装。
