Abstract
本发明提供一种苹果桃金娘果醋饮料及其制备方法,包括以下重量份的组分:桃金娘果醋原液5-15份,苹果汁20-45份,甜味剂3-15份,乳酸钙8-15份制成;制备方法是先制备桃金娘果醋原液,然后将各组分混合煮沸过滤,最后均质、杀菌、包装成成品。本发明的苹果桃金娘果醋饮料不仅口感独特、营养丰富,还具有促进消化、增加食欲,美容养颜、生津止渴、消除疲劳的作用。

技术领域
本发明涉及一种果醋饮料,特别是一种苹果桃金娘果醋饮料及其制备方法。
背景技术
桃金娘(拉丁文名:Rhodomyrtustomentosa),别名:哆尼、岗菍、山菍、多莲、当梨根、稔子树、豆稔、仲尼、乌肚子、当泥。归肺经,味甘;涩;性平。全株供药用,有活血通络,收敛止泻,补虚止血的功效。桃金娘的浆果卵形,暗紫色,可食用,果期8-10月,初秋,是岗稔果熟时节。岗稔熟得紫色的时候最好吃,生津止渴,回味甘甜,舌头牙齿也会被染成紫黑色。
桃金娘果实含有较为全面的营养成分,其中含粗脂肪7.97%、粗蛋白6.21%、粗纤维34.97%、木质素31.76%、总糖18.53t%、还原糖15.52%、维生素C28.8%、维生素H10.19mg/100g、S一胡萝卜素0.388mg/100g,更有丰富的氨基酸,其中天门氡氨酸含量高达124.7mg/L、缬氨酸71.7mg/L、色氨酸44.2mg/L、丙氨酸43.9mg/L、谷氨酸42.7mg/L,而多种人体所需的矿物质中,钙、镁更高达56.10μg/g,果实的构成糖中大量的为中性单糖,尤其在鲜果中含有更高的果胶多糖。
目前桃金娘还处于野生阶段,对其开发利用还较少,仅限于果实的采摘、泡酒、根茎叶的干燥入药、泡酒等方面。
苹果(拉丁文名:Maluspumila),是最常见的水果,苹果树属于蔷薇科,落叶乔木,叶椭圆形,有锯齿。其果实球形,味甜,口感爽脆,且富含丰富的营养,是世界四大水果之冠。苹果通常为红色,不过也有黄色和绿色。苹果是一种低热量食物,每100克只产生60千卡热量。苹果中营养成份可溶性大,易被人体吸收,故有“活水”之称,其有利于溶解硫元素,使皮肤润滑柔嫩。苹果中含有较多的钾,能与人体过剩的钠盐结合,使之排出体外。当人体摄入钠盐过多时,吃些苹果,有利于平衡体内电解质。苹果中含有的磷和铁等元素,易被肠壁吸收,有补脑养血、宁神安眠作用。苹果的香气是治疗抑郁和压抑感的良药。苹果是美容佳品,既能减肥,又可使皮肤润滑柔嫩。有科学家和医师把苹果称为“全方位的健康水果”或称为“全科医生”。因为苹果的性味温和,含有丰富的碳水化合物、维生素和微量元素,有糖类、有机酸、果胶、蛋白质、钙、磷、钾、铁、维生素A、维生素B、维生素C和膳食纤维,另含有苹果酸,酒石酸,胡萝卜素,是所有蔬果中营养价值最接近完美的一个。
醋在我国具有悠久的酿造历史和厚重的饮食文化,醋不仅是人们生活中的调味品,还是历代“药食同源”的保健佳品。《本草纲目》记载:醋能消肿,散水气,杀邪毒,理诸药。果醋大多以水果直接发酵,在经适当调配后制成果醋饮料,可直接饮用。其酸中有甜,甜中带酸,既消解了纯醋的酸味,还带有果汁的甜香,喝起来非常爽口。
据统计,目前我国各种醋(包括粮食醋及果醋)的人均年消费量为0.19公斤,仅相当于日本的1/9,美国的1/7。因此,果醋产品在我国消费市场存在着巨大的潜力。目前国内常见的果醋品种主要是苹果醋,此外还有猕猴桃果醋、山楂、柑橘果醋等。为克服果醋的酸涩感,果醋饮料通常是以蔗糖、蜂蜜或者其它甜味剂与果醋原汁进行调配制成。无论是果醋还是相应的果醋饮料,目前产品的品种和口味选择都相当有限,难以满足消费者多样化、个性化的消费需求。
发明内容
本发明涉及一种果醋饮料,特别是一种苹果桃金娘果醋饮料及其制备方法,以制得口感独特、营养丰富、美容养颜的果醋饮料。
本发明采用的技术方案是:
一种苹果桃金娘果醋饮料,包括以下重量份组分:桃金娘果醋原液5-15份,苹果汁20-45份,甜味剂3-15份,乳酸钙8-15份。
一种苹果桃金娘果醋饮料的制备方法,其特征在于,包括以下步骤:
(1)制备桃金娘果醋原液;
(2)将以下重量份的组分混合:桃金娘果醋原液5-15份,苹果汁20-45份,甜味剂3-15份,乳酸钙8-15份,余量为水,混合煮沸1-2小时后过滤;
(3)将上述混合液均质、杀菌并包装成品。
作为本发明的进一步说明,所述第(1)步骤中桃金娘果醋原液的制备方法是:
制浆:挑选成熟度高的优质桃金娘果实,除去表面杂物,破碎打浆,加入一定量的果胶酶,室温下静置8-12小时酶解得到桃金娘果浆;
酒精发酵:在所得桃金娘果浆中加入活性干酵母进行发酵,活性干酵母加入量重量百分比为5-15%,发酵温度为20-40℃,发酵时间为3-7天,得到桃金娘果酒;
醋酸发酵:在桃金娘果酒中接入醋酸菌进行醋酸发酵,醋酸菌的接种量重量比为5-20%,发酵温度为20-40℃,发酵时间为10-20天,得到桃金娘果醋初产品;
过滤:将桃金娘果醋初产品过100-120目的筛;
调配:调节酸度在3-5%;
灭菌,即得桃金娘果醋原液。
作为本发明的进一步说明,所述调配使用水和柠檬酸进行调节。
作为本发明的进一步说明,所述甜味剂为红糖、蔗糖、蜂蜜、高果糖浆、甜菊糖、毛雷宁和索马丁中的任意一种或几种。
本发明的有益效果:
本发明提供的苹果桃金娘果醋饮料,口感独特、富有桃金娘清香味,、丰富了果醋产品的种类。
本发明甜酸适中,爽口不粘,能够消化脂肪和糖,不仅可以减肥,还可以促使营养素在体内的燃烧和提高热能利用率,促进身体健康,对于食欲不振的人群,能够促进肠胃蠕动、增进食欲,还能治疗贫血、体虚、神经衰弱等疾病。
本发明富含维生素、蛋白质、微量元素等,营养成分高,入胃后呈碱性,能调节血液的酸碱平衡,维持人体内环境的相对平衡,减少因体液酸化诱发的动脉硬化、高血脂、高血糖及高尿酸等多种疾病。
本发明具有清热利湿,凉咖散瘀,消肿解毒、防暑降温、生津止渴、消除疲劳的作用。
本发明还能抑制和降低人体衰老过程中过氧化脂质的形成,减少老年斑,延缓衰老,美容养颜的效果。
本方法发酵时间短,效率高,操作简单,能耗低、污染少。

制备实施例
实施例1:
一种苹果桃金娘果醋饮料的制备方法,其特征在于,包括以下步骤:
制备桃金娘果醋原液;
制浆:挑选成熟度高的优质桃金娘果实,除去表面杂物,破碎打浆,加入一定量的果胶酶,室温下静置8小时酶解得到桃金娘果浆;
酒精发酵:在所得桃金娘果浆中加入活性干酵母进行发酵,活性干酵母加入量重量百分比为5%,发酵温度为20℃,发酵时间为7天,得到桃金娘果酒;
醋酸发酵:在桃金娘果酒中接入醋酸菌进行醋酸发酵,醋酸菌的接种量重量比为5%,发酵温度为20℃,发酵时间为20天,得到桃金娘果醋初产品;
过滤:将桃金娘果醋初产品过100目的筛;
调配:用水和柠檬酸调节酸度在3%;
灭菌,即得桃金娘果醋原液。
(2)将以下重量份的组分混合调配:桃金娘果醋原液5份,苹果汁20份,蜂蜜15份,乳酸钙8份,水40份,混合煮沸1小时后过滤;
(3)将上述混合液均质、杀菌并包装成品。
实施例2:
一种苹果桃金娘果醋饮料的制备方法,其特征在于,包括以下步骤:
(1)制备桃金娘果醋原液;
制浆:挑选成熟度高的优质桃金娘果实,除去表面杂物,破碎打浆,加入一定量的果胶酶,室温下静置10小时酶解得到桃金娘果浆;
酒精发酵:在所得桃金娘果浆中加入活性干酵母进行发酵,活性干酵母加入量重量百分比为15%,发酵温度为30℃,发酵时间为5天,得到桃金娘果酒;
醋酸发酵:在桃金娘果酒中接入醋酸菌进行醋酸发酵,醋酸菌的接种量重量比为10%,发酵温度为40℃,发酵时间为10天,得到桃金娘果醋初产品;
过滤:将桃金娘果醋初产品过120目的筛;
调配:用水和柠檬酸调节酸度在5%;
灭菌,即得桃金娘果醋原液。
(2)将以下重量份的组分混合调配:桃金娘果醋原液10份,苹果汁30份,高果糖浆和甜菊糖15份,乳酸钙15份,水50份,混合煮沸2小时后过滤;
(3)将上述混合液均质、杀菌并包装成品。
实施例3:
一种苹果桃金娘果醋饮料的制备方法,其特征在于,包括以下步骤:
(1)制备桃金娘果醋原液;
制浆:挑选成熟度高的优质桃金娘果实,除去表面杂物,破碎打浆,加入一定量的果胶酶,室温下静置12小时酶解得到桃金娘果浆;
酒精发酵:在所得桃金娘果浆中加入活性干酵母进行发酵,活性干酵母加入量重量百分比为10%,发酵温度为40℃,发酵时间为3天,得到桃金娘果酒;
醋酸发酵:在桃金娘果酒中接入醋酸菌进行醋酸发酵,醋酸菌的接种量重量比为15%,发酵温度为30℃,发酵时间为15天,得到桃金娘果醋初产品;
过滤:将桃金娘果醋初产品过100目的筛;
调配:用水和柠檬酸调节酸度在4%;
灭菌,即得桃金娘果醋原液。
(2)将以下重量份的组分混合调配:桃金娘果醋原液15份,苹果汁45份,甜菊糖、毛雷宁、索马丁3份,乳酸钙12份,水60份,混合煮沸2小时后过滤;
(3)将上述混合液均质、杀菌并包装成品。
实施例4:
一种苹果桃金娘果醋饮料的制备方法,其特征在于,包括以下步骤:
(1)制备桃金娘果醋原液;
制浆:挑选成熟度高的优质桃金娘果实,除去表面杂物,破碎打浆,加入一定量的果胶酶,室温下静置10小时酶解得到桃金娘果浆;
酒精发酵:在所得桃金娘果浆中加入活性干酵母进行发酵,活性干酵母加入量重量百分比为10%,发酵温度为25℃,发酵时间为5天,得到桃金娘果酒;
醋酸发酵:在桃金娘果酒中接入醋酸菌进行醋酸发酵,醋酸菌的接种量重量比为15%,发酵温度为30℃,发酵时间为15天,得到桃金娘果醋初产品;
过滤:将桃金娘果醋初产品过120目的筛;
调配:用水和柠檬酸调节酸度在4%;
灭菌,即得桃金娘果醋原液。
(2)将以下重量份的组分混合调配:桃金娘果醋原液10份,苹果汁30份,红糖、蜂蜜10份,乳酸钙12份,水45份,混合煮沸1小时后过滤;
(3)将上述混合液均质、杀菌并包装成品。
二、试用实施例
试用例1
李X:男性,45岁,职业:销售经理,因应酬多,经常喝酒,体质肥胖,高血压、高血脂、肝气旺盛,口干舌燥、面部油腻、便秘。根据本人情况和接受程度,每天早晚各饮用实施例4的成品200ml,饮用10天后,大便顺畅,口内生津;饮用30天后,体重减轻,身体轻松,血压血脂有所降低。
试用例2
王X:女性,26岁,职业:文员,工作繁忙,经常加班,导致面部发黄、心烦气躁、气血虚弱、食欲不振、消瘦。根据本人情况和接受程度,每天早晚各饮用实施例4的成品200ml,饮用10天后,食欲增加;饮用30天后,气色红润,体重增加。
Claims (6)
1.一种苹果桃金娘果醋饮料,其特征在于,包括以下重量份组分:桃金娘果醋原液5-15份,苹果汁20-45份,甜味剂3-15份,乳酸钙8-15份。
2.根据权利要求1所述的苹果桃金娘果醋饮料1,其特征在于:所述甜味剂为红糖、蔗糖、蜂蜜、高果糖浆、甜菊糖、毛雷宁和索马丁中的任意一种或几种的混合物。
3.一种苹果桃金娘果醋饮料的制备方法,其特征在于,包括以下步骤:
(1)制备桃金娘果醋原液;
(2)将以下重量份的组分混合:桃金娘果醋原液5-15份,苹果汁20-45份,甜味剂3-15份,乳酸钙8-15份,余量为水,混合煮沸1-2小时后过滤;
(3)将上述混合液均质、杀菌并包装成品。
4.一种苹果桃金娘果醋饮料的制备方法,其特征在于,包括以下步骤:
(1)制备桃金娘果醋原液;
(2)将以下重量份的组分混合:桃金娘果醋原液10份,苹果汁30份,甜味剂10份,乳酸钙125份,余量为水,混合煮沸1小时后过滤;
(3)将上述混合液均质、杀菌并包装成品。
5.根据权利要求1所述的苹果桃金娘果醋饮料的制备方法,其特征在于:所述第(1)步骤中桃金娘果醋原液的制备方法是:
制浆:挑选成熟度高的优质桃金娘果实,除去表面杂物,破碎打浆,加入一定量的果胶酶,室温下静置8-12小时酶解得到桃金娘果浆;
酒精发酵:在所得桃金娘果浆中加入活性干酵母进行发酵,活性干酵母加入量重量百分比为5-15%,发酵温度为20-40℃,发酵时间为3-7天,得到桃金娘果酒;
醋酸发酵:在桃金娘果酒中接入醋酸菌进行醋酸发酵,醋酸菌的接种量重量比为5-20%,发酵温度为20-40℃,发酵时间为10-20天,得到桃金娘果醋初产品;
过滤:将桃金娘果醋初产品过100-120目的筛;
调配:调节酸度在3-5%;
灭菌,即得桃金娘果醋原液。
6.根据权利要求5所述的苹果桃金娘果醋饮料的制备方法,其特征在于:所述调配使用水和柠檬酸进行调节。
