本发明涉及食品生产领域,具体涉及一种香蕉干的生产方法。
背景技术
香蕉,热带水果之一,果肉细腻,风味独特,营养丰富,是人们喜爱的水果之一,有“快乐水果”之称。香蕉主要分布在东、西、南半球南北纬度30°以内的热带、亚热带地区。世界上栽培香蕉的国家有130个,以中美洲产量最多,其次是亚洲。我国是世界上栽培香蕉古老的国家之一,国外主栽的香蕉品种大多由中国传去。我国香蕉栽培主要分布在广东、广西、福建、台湾、云南和海南等地区,贵州、四川、重庆也有少量栽培。
香蕉属高热量水果,营养高、热量低,每100克果肉的热量仅达91卡路,据分析每100克果肉中含碳水化合物20克、蛋白质1.2克、脂肪0.6克;此外,还含富含钾、镁、硫胺素、核黄素和维生素A、B、C以及膳食纤维,其中维生素A能促进生长,增强对疾病的抵抗力,是维持正常的生殖力和视力所必需;硫胺素能抗脚气病,促进食欲、助消化,保护神经系统;核黄素能促进人体正常生长和发育。镁能让肌肉松弛,缓解压力。另外,香蕉也是淀粉质丰富的有益水果,味甘性寒,可清热润肠,促进肠胃蠕动,具有降血压、通便的功效。由于香蕉的消化、吸收相当好,因此从小孩到老年人,都能安心食用,并补给均衡营养,因此减肥者可以选择香蕉作为早餐食品,在一些热带地区香蕉甚至作为主要粮食。
香蕉除作鲜果食用外,还可加工其他产品,如利用其富含天然抗生素,制成抑制细菌繁殖,增加大肠里的乳酸杆菌,促进肠道蠕动排毒的食品;将香蕉制成香蕉粉,用于制作糕饼及面包,或者加工成罐头、果脯、香蕉干、果汁、香精等。

为解决上述问题,本发明提供了一种香蕉干的制备方法,其制得的香蕉干的营养价值更高,具有保健功效。
为实现上述目的,本发明采取的技术方案为:
一种香蕉干的制备方法,其特征在于,包括如下操作步骤:
S1:对香蕉进行去杂,将香蕉去皮后用液氮进行速冻,速冻后切成香蕉片,切片后置于真空冷冻干燥装置的料盘中进行升华干燥,使得香蕉脱除60~65%的水分;
S2:使用中草药提取液与奶粉、淀粉配置的糊状膏液对香蕉片的表面进行涂布,将涂布后的香蕉片置于微波干燥装置中进行微波干燥,直至香蕉片的水分的含量含降至8~10%;
S3:将上述香蕉片进行膨化处理,膨化处理后香蕉片中的含水量降至4~5%,然后真空包装成成品;
所述的中草药提取液由山楂、甘草、金银花、陈皮、枸杞、红枣、百合按照1∶0.02~0.03∶0.01~0.02∶0.1~0.15∶0.02~0.03∶0.05~0.1∶0.01~0.02的重量比例混合浸提得到的提取液,提取液的密度为1.08~1.12g/ml。
具体的方案为:
液氮的温度为-196℃,液氮喷淋冷冻的时间为2~2.5min。
真空冷冻干燥的真空度为20~70Pa,冷阱温度为-35~-30℃,加热温度控制为45~55℃,时间8~12h。
微波干燥的功率为4~6KW,真空度为40~100Pa。
香蕉片的厚度为0.3~0.5mm。
香蕉片涂布前,将香蕉片切成星形或月形。
中草药的搭配更为优选如下比例,亦即,所述的中草药提取液由山楂、甘草、金银花、陈皮、枸杞、红枣、百合按照1∶0.02∶0.02∶0.15∶0.02∶0.08∶0.01的重量比例混合浸提得到的提取液,提取液的密度为1.12g/ml。
上述方案中,在制备过程中加入由山楂、甘草、金银花、陈皮、枸杞、红枣、百合混合提取的提取液进行涂布,向香蕉片中添加这些中草药的活性组分,使得制得的香蕉片具有降火、养胃的功效。另外通过采用液氮速冻、真空冷冻干燥和微波干燥的相互结合,实现在较低温度下对香蕉进行干燥脱水处理,使得制得的香蕉片中的营养组分不被破坏,提高香蕉干的营养价值。另外通过微波干燥、液氮速冻、真空冷冻干燥有机结合,既能实现将香蕉片中的水分降至最低,又可克服单独使用其中一种操作手段导致脱水效果不理想或者操作时间过长的缺陷,提高香蕉干的生产效率和降低生产成本。

实施例1
对香蕉进行去杂,取香蕉10kg,将香蕉去皮后用液氮进行速冻,液氮的温度为-196℃,液氮喷淋冷冻的时间为2.5min,速冻后切成香蕉片,香蕉片的厚度为0.5mm,切片后置于真空冷冻干燥装置的料盘中进行升华干燥,控制真空冷冻干燥的真空度为70Pa,冷阱温度为-35℃,加热温度控制为55℃,时间12h,使得香蕉脱除65%的水分,然后将香蕉片切成星形或月形。;
将山楂、甘草、金银花、陈皮、枸杞、红枣、百合按照1∶0.02∶0.01∶0.1∶0.02∶0.05∶0.01的重量比例混合进行浸提,浸提得到密度为1.08g/ml的中草药提取液,将中草药提取液与奶粉、淀粉配置的糊状膏液,喷涂装置将糊状膏液对香蕉片的表面进行涂布,将涂布后的香蕉片置于微波干燥装置中进行微波干燥,控制微波干燥的功率为6KW,真空度为100Pa,直至香蕉片的水分的含量含降至10%;然后对上述香蕉片进行膨化处理,膨化处理后香蕉片中的含水量降至4%,然后真空包装成成品即可。
实施例2

将山楂、甘草、金银花、陈皮、枸杞、红枣、百合按照1∶0.02∶0.02∶0.15∶0.02∶0.08∶0.01的重量比例混合进行浸提,浸提得到密度为1.12g/ml的中草药提取液,将中草药提取液与奶粉、淀粉配置的糊状膏液,喷涂装置将糊状膏液对香蕉片的表面进行涂布,将涂布后的香蕉片置于微波干燥装置中进行微波干燥,控制微波干燥的功率为4KW,真空度为40Pa,直至香蕉片的水分的含量含降至8%;然后对上述香蕉片进行膨化处理,膨化处理后香蕉片中的含水量降至5%,然后真空包装成成品即可。
实施例3
对香蕉进行去杂,取香蕉10kg,将香蕉去皮后用液氮进行速冻,液氮的温度为-196℃,液氮喷淋冷冻的时间为2min,速冻后切成香蕉片,香蕉片的厚度为0.4mm,切片后置于真空冷冻干燥装置的料盘中进行升华干燥,控制真空冷冻干燥的真空度为50Pa,冷阱温度为-35℃,加热温度控制为45℃,时间10h,使得香蕉脱除60%的水分,然后将香蕉片切成星形或月形。;
将山楂、甘草、金银花、陈皮、枸杞、红枣、百合按照1∶0.03∶0.02∶0.15∶0.03∶0.1∶0.02的重量比例混合进行浸提,浸提得到密度为1.11g/ml的中草药提取液,将中草药提取液与奶粉、淀粉配置的糊状膏液,喷涂装置将糊状膏液对香蕉片的表面进行涂布,将涂布后的香蕉片置于微波干燥装置中进行微波干燥,控制微波干燥的功率为4KW,真空度为40Pa,直至香蕉片的水分的含量含降至8%;然后对上述香蕉片进行膨化处理,膨化处理后香蕉片中的含水量降至4%,然后真空包装成成品即可。
本发明中,在制备过程中加入由山楂、甘草、金银花、陈皮、枸杞、红枣、百合混合提取的提取液进行涂布,向香蕉片中添加这些中草药的活性组分,使得制得的香蕉片具有降火、养胃的功效。另外通过采用液氮速冻、真空冷冻干燥和微波干燥的相互结合,实现在较低温度下对香蕉进行干燥脱水处理,使得制得的香蕉片中的营养组分不被破坏,提高香蕉干的营养价值。另外通过微波干燥、液氮速冻、真空冷冻干燥有机结合,既能实现将香蕉片中的水分降至最低,又可克服单独使用其中一种操作手段导致脱水效果不理想或者操作时间过长的缺陷,提高香蕉干的生产效率和降低生产成本。总之,本发明提供的香蕉干的制备方法,其制得的香蕉干的营养价值更高,具有养胃降火之功效。
以上所述仅是本发明的优选实施方式,应当指出,对于本技术领域的普通技术人员来说,在不脱离本发明原理的前提下,还可以作出若干改进和润饰,这些改进和润饰也应视为本发明的保护范围。
Claims (7)
1.一种香蕉干的制备方法,其特征在于,包括如下操作步骤:
S1:对香蕉进行去杂,将香蕉去皮后用液氮进行速冻,速冻后切成香蕉片,切片后置于真空冷冻干燥装置的料盘中进行升华干燥,使得香蕉脱除60~65%的水分;
S2:使用中草药提取液与奶粉、淀粉配置的糊状膏液对香蕉片的表面进行涂布,将涂布后的香蕉片置于微波干燥装置中进行微波干燥,直至香蕉片的水分的含量含降至8~10%;
S3:将上述香蕉片进行膨化处理,膨化处理后香蕉片中的含水量降至4~5%,然后真空包装成成品;
所述的中草药提取液由山楂、甘草、金银花、陈皮、枸杞、红枣、百合按照1∶0.02~0.03∶0.01~0.02∶0.1~0.15∶0.02~0.03∶0.05~0.1∶0.01~0.02的重量比例混合浸提得到的提取液,提取液的密度为1.08~1.12g/ml。
2.如权利要求1所述的香蕉干的制备方法,其特征在于:液氮的温度为-196℃,液氮喷淋冷冻的时间为2~2.5min。
3.如权利要求1所述的香蕉干的制备方法,其特征在于:真空冷冻干燥的真空度为20~70Pa,冷阱温度为-35~-30℃,加热温度控制为45~55℃,时间8~12h。
4.如权利要求1所述的香蕉干的制备方法,其特征在于:微波干燥的功率为4~6KW,真空度为40~100Pa。
5.如权利要求1所述的香蕉干的制备方法,其特征在于:香蕉片的厚度为0.3~0.5mm。
6.如权利要求1所述的香蕉干的制备方法,其特征在于:香蕉片涂布前,将香蕉片切成星形或月形。
7.如权利要求1所述的香蕉干的制备方法,其特征在于:所述的中草药提取液由山楂、甘草、金银花、陈皮、枸杞、红枣、百合按照1∶0.02∶0.02∶0.15∶0.02∶0.08∶0.01的重量比例混合浸提得到的提取液,提取液的密度为1.12g/ml。
