本发明属于食品加工领域,特别是涉及一种复合怀山药粉及其制备方法。
背景技术
怀山药又名铁棍山药,因其生长地区为古怀庆府得名怀山。怀山药是一味珍贵的中药材,被历代医家所推崇,是药食兼用的良药佳肴。作为中药它可以制成多种丸药,如六味地黄丸等供人们食用。作为食物蔬菜,它细腻滑爽,别具风味,如拔丝山药、枣泥山药等。怀山药含皂苷、粘液质、胆碱、山药碱、淀粉、糖蛋白、自由氨基酸、多酚氧化酶、维生素C、碘质、16种氨基酸,还有硒、铁、铜、锌、锰、钙等多种微量元素。
随着山药栽培技术的提高及运输的高速发展,山药的产量也随之增长。现有山药多数为鲜食,最近两年逐渐有山药干片出现并活跃在市场上;然而鲜食怀山药需要消费者进行再加工,对于生活节奏快或没有时间的人群食用鲜食山药很是复杂,且山药干片的食用口感差,除可储存较长时间外食用依然复杂。
发明内容
本发明的目的就在于克服现有怀山药食用复杂的技术问题,提供了一种复合怀山药粉及其制备方法。
一种复合怀山药粉,其重量份配比如下:怀山药100~120份、黑豆15~25份、黑芝麻5~10份、核桃仁5~10份、红枸杞5~7份、黑枸杞5~7份、石斛2~3份。
优选的,所述怀山药为未处理的鲜怀山药。
优选的,所述红枸杞为干燥后的红枸杞。
优选的,所述黑枸杞为干燥后的黑枸杞。
优选的,所述石斛为炮制干燥后的石斛。
本发明还提供了一种复合怀山药粉的制备方法,包括以下工艺:
(1)怀山药制粉:按照重量份数称取所需鲜怀山药,将鲜怀山药清洗去皮后切片,切好片的鲜山药片及时放入浓度为0.3%的柠檬酸中浸泡;切片完成后,将浸泡的鲜怀山药片捞出沥干水分放入托盘中,放入微波真空干燥箱中进行干燥;干燥后的山药片冷却至室温后放入粉碎机中,得到怀山药粉;
(2)黑豆、黑芝麻、核桃仁制粉:按照重量份称取所需黑豆、黑芝麻、核桃仁;将黑豆、黑芝麻、核桃仁清洗,去除浮尘及杂质;清洗好的黑豆、黑芝麻、核桃仁在烘干机中干燥1h;干燥好的黑豆、黑芝麻、核桃仁分别炒熟;将炒熟好的黑豆、黑芝麻、核桃仁一同放入粉碎机中,得到黑豆、黑芝麻、核桃仁的混合粉;
(3)红枸杞、黑枸杞制粉:按照重量份称取所需红枸杞、黑枸杞;将红枸杞、黑枸杞清洗,去除浮尘及杂质;清洗干净的红枸杞和黑枸杞一同放入风干烘箱中风干;将风干好的红枸杞和黑枸杞一同放入粉碎机中,得到枸杞混合粉;
(4)石斛制粉:按照重量份称取所需石斛,将石斛放入粉碎机中粉碎成粉末,粉碎好的石斛粉送入微波灭菌干燥机进行微波灭菌;
(5)粉体混合:将上述制备好的怀山药粉,黑豆、黑芝麻、核桃仁的混合粉,枸杞混合粉,石斛粉放入粉末混料机中进行混合,得到复合怀山药粉;
(6)粉体杀菌:金混合好的复合怀山药粉送入杀菌室进行紫外线杀菌;
(7)封装:将杀菌后的复合山药粉使用厚度为8丝的纯铝材料进行封装保存。
优选的,所述微波真空干燥的真空度为0.95Mpa,干燥温度为50℃~60℃,干燥时间2小时。
优选的,所述风干烘箱干燥温度为40℃~50℃,干燥时间为1~2h。

黑豆味甘、性平,具有补脾、利水、解毒的功效;黑枸杞,味甘、性平,补肾益精,养肝明目,补血安神,生津止渴,润肺止咳;红枸杞,味甘、性平,养肝,滋肾,润肺;核桃味甘、性温,入肾、肺、大肠经。可补肾、固精强腰、温肺定喘、润肠通便;黑芝麻,味甘、性平。有滋补肝肾,益血润肠,通便,通乳的功能;石斛味甘、性平,具有益胃生津,滋阴清热之功效。本发明所采用的原料均为味甘性平类的,且大多数归肾经,对脾、胃、肝有良好的滋补效果。
从西医角度说:
怀山药粗富含蛋白质、淀粉、粗纤维。红枸杞中富含枸杞多糖、胡萝卜素,枸杞多糖是一种水溶性多糖,是枸杞中最主要的活性成分。现已有很多研究表明枸杞多糖具有促进免疫、抗衰老、抗肿瘤、清除自由基、抗疲劳、抗辐射、保肝、生殖功能保护和改善等作用。黑枸杞尤其含具有清除自由基、抗氧化功能的天然的花青素。核桃仁与黑芝麻中大量多不饱和脂肪酸,是一种对人体有益的脂肪酸,可降低血脂调节血栓。 石斛成分有石斛多糖、石斛碱、石斛胺。可降“三高”,抑制肿瘤。
从操作工艺来说:本发明根据不同的材料有不同的处理工艺,对怀山药来说,切片时浸泡柠檬酸防止了鲜怀山药片氧化变色,同时采用微波真空箱进行干燥,干燥温度低,真空度高,干燥时间短,大大提高了干燥效率,且减少能源的消耗。选择低温干燥能更好的保存怀山药中的维生素等一些对温度较为敏感的营养物质。
对黑豆、黑芝麻、核桃仁一起加工,原因在于此三种原料均需要炒至成熟才能良好的粉碎。芝麻与核桃为油性原料,同黑豆一起粉碎可有效地防止成团,且黑豆粉可将粉碎时黑芝麻与核桃仁溢出的油脂吸收,避免不必要的浪费。
红枸杞中富含胡萝卜素,黑枸杞中富含花青素,两种有益物质对温度都较为敏感,且枸杞中含糖量高,使用高温烘干易出糖粘连。使用低温风干枸杞,不仅良好的保留枸杞的活性物质,且风干后的枸杞较为酥脆易粉碎。
本发明采用的粉碎机为温控粉碎机,粉碎过程温度可控。在粉碎过程中注意控制温度在60℃以下,防止粉碎时温度过高破坏原材料的营养、风味及品质。
本发明具有以下有益效果:
1、本复合怀山粉经过多种原料配置,营养丰富,粉质细腻可直接使用开水或温水调和食用,方便快捷;
2、采用不同方法处理不同原材料,更好的保存原材料中的营养物质;
3、无添加任何添加剂及糖分,健康安全,可保存较长时间;
4、工艺生产过程可实现机械化,节约能源。
具体实施方式
下面以具体实施例对本发明作进一步描述,在此发明的示意性实施例以及说明用来解释本发明,但并不作为对本发明的限定。
实施例1
一种复合怀山药粉,按照以下步骤进行制作:
按以下重量份称取原材料:鲜怀山药100份、黑豆15份、黑芝麻5份、核桃仁5份、红枸杞5份、黑枸杞5份、石斛2份。
(1)怀山药制粉:将鲜怀山药清洗去皮后切片,切好片的鲜山药片及时放入浓度为0.3%的柠檬酸中浸泡;切片完成后,将浸泡的鲜怀山药片捞出沥干水分放入托盘中,放入微波真空干燥箱中进行干燥,微波真空干燥的真空度为0.95Mpa,干燥温度为50℃,干燥时间2小时;干燥后的山药片冷却至室温后放入粉碎机中,得到怀山药粉;
(2)黑豆、黑芝麻、核桃仁制粉:将黑豆、黑芝麻、核桃仁清洗,去除浮尘及杂质;清洗好的黑豆、黑芝麻、核桃仁在烘干机中干燥1h;干燥好的黑豆、黑芝麻、核桃仁分别炒熟;将炒熟好的黑豆、黑芝麻、核桃仁一同放入粉碎机中,得到黑豆、黑芝麻、核桃仁的混合粉;
(3)红枸杞、黑枸杞制粉:将红枸杞、黑枸杞清洗,去除浮尘及杂质;清洗干净的红枸杞和黑枸杞一同放入风干烘箱中风干,风干烘箱干燥温度为40℃,干燥时间为1h;将风干好的红枸杞和黑枸杞一同放入粉碎机中,得到枸杞混合粉;
(4)石斛制粉:将石斛放入粉碎机中粉碎成粉末,粉碎好的石斛粉送入微波灭菌干燥机进行微波灭菌;
(5)粉体混合:将上述制备好的怀山药粉,黑豆、黑芝麻、核桃仁的混合粉,枸杞混合粉,石斛粉放入粉末混料机中进行混合,得到复合怀山药粉;
(6)粉体杀菌:金混合好的复合怀山药粉送入杀菌室进行紫外线杀菌;
(7)封装:将杀菌后的复合山药粉使用厚度为8丝的纯铝材料进行封装保存。
实施例2
按以下重量份称取原材料:鲜怀山药110份、黑豆20份、黑芝麻7份、核桃仁7份、红枸杞6份、黑枸杞6份、石斛2.5份。
(1)怀山药制粉:将鲜怀山药清洗去皮后切片,切好片的鲜山药片及时放入浓度为0.3%的柠檬酸中浸泡;切片完成后,将浸泡的鲜怀山药片捞出沥干水分放入托盘中,放入微波真空干燥箱中进行干燥,微波真空干燥的真空度为0.95Mpa,干燥温度为55℃,干燥时间2小时;干燥后的山药片冷却至室温后放入粉碎机中,得到怀山药粉;
(2)黑豆、黑芝麻、核桃仁制粉:将黑豆、黑芝麻、核桃仁清洗,去除浮尘及杂质;清洗好的黑豆、黑芝麻、核桃仁在烘干机中干燥1h;干燥好的黑豆、黑芝麻、核桃仁分别炒熟;将炒熟好的黑豆、黑芝麻、核桃仁一同放入粉碎机中,得到黑豆、黑芝麻、核桃仁的混合粉;
(3)红枸杞、黑枸杞制粉:将红枸杞、黑枸杞清洗,去除浮尘及杂质;清洗干净的红枸杞和黑枸杞一同放入风干烘箱中风干,风干烘箱干燥温度为45℃,干燥时间为1.5h;将风干好的红枸杞和黑枸杞一同放入粉碎机中,得到枸杞混合粉;
(4)石斛制粉:将石斛放入粉碎机中粉碎成粉末,粉碎好的石斛粉送入微波灭菌干燥机进行微波灭菌;
(5)粉体混合:将上述制备好的怀山药粉,黑豆、黑芝麻、核桃仁的混合粉,枸杞混合粉,石斛粉放入粉末混料机中进行混合,得到复合怀山药粉;
(6)粉体杀菌:金混合好的复合怀山药粉送入杀菌室进行紫外线杀菌;
(7)封装:将杀菌后的复合山药粉使用厚度为8丝的纯铝材料进行封装保存。
实施例3
按以下重量份称取原材料:鲜怀山药120份、黑豆25份、黑芝麻10份、核桃仁10份、红枸杞7份、黑枸杞7份、石斛3份。
(1)怀山药制粉:将鲜怀山药清洗去皮后切片,切好片的鲜山药片及时放入浓度为0.3%的柠檬酸中浸泡;切片完成后,将浸泡的鲜怀山药片捞出沥干水分放入托盘中,放入微波真空干燥箱中进行干燥,微波真空干燥的真空度为0.95Mpa,干燥温度为60℃,干燥时间2小时;干燥后的山药片冷却至室温后放入粉碎机中,得到怀山药粉;

(3)红枸杞、黑枸杞制粉:将红枸杞、黑枸杞清洗,去除浮尘及杂质;清洗干净的红枸杞和黑枸杞一同放入风干烘箱中风干,风干烘箱干燥温度为50℃,干燥时间为2h;将风干好的红枸杞和黑枸杞一同放入粉碎机中,得到枸杞混合粉;
(4)石斛制粉:将石斛放入粉碎机中粉碎成粉末,粉碎好的石斛粉送入微波灭菌干燥机进行微波灭菌;
(5)粉体混合:将上述制备好的怀山药粉,黑豆、黑芝麻、核桃仁的混合粉,枸杞混合粉,石斛粉放入粉末混料机中进行混合,得到复合怀山药粉;
(6)粉体杀菌:金混合好的复合怀山药粉送入杀菌室进行紫外线杀菌;
(7)封装:将杀菌后的复合山药粉使用厚度为8丝的纯铝材料进行封装保存。
本发明的技术方案不限于上述具体实施例的限制,凡是根据本发明的技术方案做出的技术变形,均落入本发明的保护范围之内。
Claims (10)
1.一种复合怀山药粉,其特征在于,其重量份配比如下:怀山药100~120份、黑豆15~25份、黑芝麻5~10份、核桃仁5~10份、红枸杞5~7份、黑枸杞5~7份、石斛2~3份。
2.根据权利要求1所述的一种复合怀山药粉,其特征在于:所述怀山药为未处理的鲜怀山药。
3.根据权利要求1所述的一种复合怀山药粉,其特征在于:所述红枸杞为干燥后的红枸杞。
4.根据权利要求1所述的一种复合怀山药粉,其特征在于:所述黑枸杞为干燥后的黑枸杞。
5.根据权利要求1所述的一种复合怀山药粉,其特征在于:所述石斛为炮制干燥后的石斛。
6.如权利要求1-5任一项所述的一种复合怀山药粉的制备方法,其特征在于,包括以下工艺:
(1)怀山药制粉:按照重量份数称取所需鲜怀山药,将鲜怀山药清洗去皮后切片,切好片的鲜山药片及时放入浓度为0.3%的柠檬酸中浸泡;切片完成后,将浸泡的鲜怀山药片捞出沥干水分放入托盘中,放入微波真空干燥箱中进行干燥;干燥后的山药片冷却至室温后放入粉碎机中,得到怀山药粉;
(2)黑豆、黑芝麻、核桃仁制粉:按照重量份称取所需黑豆、黑芝麻、核桃仁;将黑豆、黑芝麻、核桃仁清洗,去除浮尘及杂质;清洗好的黑豆、黑芝麻、核桃仁在烘干机中干燥1h;干燥好的黑豆、黑芝麻、核桃仁分别炒熟;将炒熟好的黑豆、黑芝麻、核桃仁一同放入粉碎机中,得到黑豆、黑芝麻、核桃仁的混合粉;
(3)红枸杞、黑枸杞制粉:按照重量份称取所需红枸杞、黑枸杞;将红枸杞、黑枸杞清洗,去除浮尘及杂质;清洗干净的红枸杞和黑枸杞一同放入风干烘箱中风干;将风干好的红枸杞和黑枸杞一同放入粉碎机中,得到枸杞混合粉;
(4)石斛制粉:按照重量份称取所需石斛,将石斛放入粉碎机中粉碎成粉末,粉碎好的石斛粉送入微波灭菌干燥机进行微波灭菌;
(5)粉体混合:将上述制备好的怀山药粉,黑豆、黑芝麻、核桃仁的混合粉,枸杞混合粉,石斛粉放入粉末混料机中进行混合,得到复合怀山药粉;
(6)粉体杀菌:将混合好的复合怀山药粉送入杀菌室进行紫外线杀菌;
(7)封装:将杀菌后的复合山药粉使用厚度为8丝的纯铝材料进行封装保存。
7.根据权利要求6所述的一种复合怀山药粉的制备方法,其特征在于:所述微波真空干燥的真空度为0.95Mpa,干燥温度为50℃~60℃,干燥时间2小时。
8.根据权利要求6所述的一种复合怀山药粉的制备方法,其特征在于:所述风干烘箱干燥温度为40℃~50℃,干燥时间为1~2h。
9.根据权利要求6所述的一种复合怀山药粉的制备方法,其特征在于:所述粉碎机为温控粉碎机,粉碎过程温度可控。
10.根据权利要求6所述的一种复合怀山药粉的制备方法,其特征在于:所述经过封装的复合怀山药粉常温环境下可保存6个月,冷藏环境可保存12个月。
