Abstract
本发明公开了一种江淮风味营养八宝菜及其制备方法,是由腌渍青菜、黄花菜、冬笋、木耳、香菇、茶干、干胡萝卜丝、干白萝卜丝、干长杆菜丝、姜丝、豆腐皮、猪瘦肉、白糖、料酒、盐、香油、芝麻、菜油等原料组成。本发明有益效果为:八宝菜用于调味,具有清口解腻、增进食欲的功效;另外八宝菜中的有机酸营养成分被人体消化吸收后可调节人体内的酸碱平衡,防止血液的酸性偏高,有益身体健康。

本发明涉及食品加工领域,更确切地说是涉及一种八宝菜及其制备方法。
背景技术
八宝菜,是佛教斋菜演化而来,取名八宝,取意八宝吉祥,在我国南方地区有广泛的普及率,但各地的制法各不相同。八宝菜在安徽省皖江地区有着几百年的历史,顾名思义、代代相传,此菜家喻户晓,是每年春节的前两天每家必备的一道小菜,其营养丰富、方便食用、便于保管。八宝菜实为各种蔬菜腌制、晒制、酱制等不同处理方法加以各种豆制品以炸制亦或是煮熟等烹调方法作为原料,分别炒制再将混合炒制而成,营养丰富,搭配合理。用于调味,具有清口解腻、增进食欲的功效。
发明内容
本发明的目的是在于提供一种江淮风味营养八宝菜及其制备方法,丰富人们的日常生活。
为解决这一问题,本发明所采取的技术方案为:江淮风味营养八宝菜由以下重量份的原料组成:腌渍青菜100-104、黄花菜80-82、冬笋92-94、木耳25-26、香菇18-20、茶干75-76、干胡萝卜丝27-28、干白萝卜丝30-32、干长杆菜丝25-26、姜丝20-21、豆腐皮100-102、猪瘦肉85-86、白糖5-6、料酒3-4、盐7-8、香油2-3、芝麻1-2、菜油4-5、保健添加剂2-3、水适量。
其中保健添加剂由以下重量份的原料组成:玉米胚芽粉52-54、芡实粉20-21、荷花粉8-9、冻干苹果粉14-15、牛蒡叶粉11-12、菠萝叶2-3、三七花1-2、枳壳4-5、干姜2-3、人参叶4-5、黄连叶2-3、柏子仁1-2、水适量。
本发明的江淮风味营养八宝菜制备过程按以下步骤进行:
(1)将经过腌制好的青菜洗净切丝,黄花菜、冬笋、木耳、香菇泡发洗净后切细丝,干胡萝卜丝、干白萝卜丝、干长杆菜丝洗净泡发,茶干、豆腐皮、猪瘦肉洗净后分别切细丝备用;
(2)锅上火,倒入菜油,加入姜丝、猪瘦肉丝炒到八成熟,再依次加入除香油、芝麻之外的其他剩余成分,炒熟后关火冷却2-3分钟;
(3)将步骤(2)中炒制好的菜淋上香油、撒上芝麻后盛出装盘即可。
另外,保健添加剂的制作方法为:将菠萝叶、三七花、枳壳、干姜、人参叶、黄连叶、柏子仁加适量水煎煮1-2小时,滤去残渣后得中草药液,继续加热浓缩至原中草药液体积的十分之一;与其他剩余成分混合均匀后用小火翻炒至完全干燥既得。

江淮风味营养八宝菜,由以下重量份(克)的原料组成:
腌渍青菜100、黄花菜80、冬笋92、木耳25、香菇20、茶干75、干胡萝卜丝28、干白萝卜丝30、干长杆菜丝25、姜丝20、豆腐皮100、猪瘦肉85、白糖5、料酒3、盐8、香油2、芝麻1、菜油4、保健添加剂2、水适量。
其中保健添加剂由以下重量份(kg)的原料组成:玉米胚芽粉54、芡实粉20、荷花粉9、冻干苹果粉15、牛蒡叶粉12、菠萝叶3、三七花1、枳壳5、干姜2、人参叶5、黄连叶3、柏子仁1、水适量。
制备方法,包括如下步骤:
(1)将经过腌制好的青菜洗净切丝,黄花菜、冬笋、木耳、香菇泡发洗净后切细丝,干胡萝卜丝、干白萝卜丝、干长杆菜丝洗净泡发,茶干、豆腐皮、猪瘦肉洗净后分别切细丝备用;
(2)锅上火,倒入菜油,加入姜丝、猪瘦肉丝炒到八成熟,再依次加入除香油、芝麻之外的其他剩余成分,炒熟后关火冷却3分钟;

1.一种江淮风味营养八宝菜,其特征在于,由以下重量份的原料组成:腌渍青菜100-104、黄花菜80-82、冬笋92-94、木耳25-26、香菇18-20、茶干75-76、干胡萝卜丝27-28、干白萝卜丝30-32、干长杆菜丝25-26、姜丝20-21、豆腐皮100-102、猪瘦肉85-86、白糖5-6、料酒3-4、盐7-8、香油2-3、芝麻1-2、菜油4-5、保健添加剂2-3、水适量;其中保健添加剂由下列重量份的原料组成:玉米胚芽粉52-54、芡实粉20-21、荷花粉8-9、冻干苹果粉14-15、牛蒡叶粉11-12、菠萝叶2-3、三七花1-2、枳壳4-5、干姜2-3、人参叶4-5、黄连叶2-3、柏子仁1-2、水适量;制备方法为:将菠萝叶、三七花、枳壳、干姜、人参叶、黄连叶、柏子仁加适量水煎煮1-2小时,滤去残渣后得中草药液,继续加热浓缩至原中草药液体积的十分之一;与其他剩余成分混合均匀后用小火翻炒至完全干燥既得。
2.根据权利要求1所述的江淮风味营养八宝菜的制备方法,其特征在于:包括如下步骤:
(1)将经过腌制好的青菜洗净切丝,黄花菜、冬笋、木耳、香菇泡发洗净后切细丝,干胡萝卜丝、干白萝卜丝、干长杆菜丝洗净泡发,茶干、豆腐皮、猪瘦肉洗净后分别切细丝备用;
(2)锅上火,倒入菜油,加入姜丝、猪瘦肉丝炒到八成熟,再依次加入除香油、芝麻之外的其他剩余成分,炒熟后关火冷却2-3分钟;
(3)将步骤(2)中炒制好的菜淋上香油、撒上芝麻后盛出装盘即可。
