背景技术
带鱼富含脂肪、蛋白质、维生素A、不饱和脂肪酸、磷、钙、铁、碘等多种营养成分。带鱼性温,味甘,具有暖胃、泽肤、补气、养血、健美以及强心补肾、舒筋活血、消炎化痰、清脑止泻、消除疲劳、提精养神之功效。带鱼富含人体必需的多种矿物元素以及多种维生素,实为老人、儿童、孕产妇的理想滋补食品,尤其适宜气短乏力、久病体虚、血虚头晕、食少羸瘦、营养不良以及皮肤干燥者食用。此外,孕妇吃带鱼有利于胎儿脑组织发育;少儿多吃带鱼有益于提高智力;老人多吃带鱼则可以延缓大脑萎缩、预防老年痴呆;女性多吃带鱼,能使肌肤光滑润泽,长发乌黑,面容更加靓丽。带鱼味美营养,并且具有很好的食疗保健功效。
发明内容
本发明的目的是在于提供一种特色带鱼及其制备方法,方便人们的生活。
为解决这一问题,本发明所采取的技术方案为:特色带鱼由以下重量份的原料组成:鲜带鱼750-760、白萝卜720-725、猪油4-5、米醋12-13、甜面酱9-10、精盐7-8、味精1-2、花椒2-3、大料3-4、葱段1-2、姜片3-4、香菜段1-2、香油2-3、保健添加剂4-5、水适量。
其中保健添加剂由以下重量份的原料组成:玉米胚芽粉52-54、芡实粉20-21、荷花粉8-9、冻干苹果粉14-15、牛蒡叶粉11-12、菠萝叶2-3、三七花1-2、枳壳4-5、干姜2-3、人参叶4-5、柠檬草2-3、柏子仁1-2、水适量。
本发明的特色带鱼制备过程按以下步骤进行:
(1)将带鱼剖腹去掉内脏、杂物,洗净剁去鱼头及尾尖、鱼鳍,切成5-6厘米的带鱼段,撤上重量份一半的精盐、米醋腌渍20-30分钟;
(2)将白萝卜洗净,切去头尾部分,切块后用开水焯3-4分钟后备用;
(3)干净锅中加入猪油,烧至四、五成热时,投入葱段、姜片、花椒、大料,小火炒出香味,随即倒入甜面酱炒散,烹入除味精、香菜段、香油之外的其他剩余成分,注入适量水,倒入带鱼段、白萝卜,旺火烧沸后改用小火焖煮20-25分钟,待汤汁浓稠后,加入味精调味,淋入香油拌匀,撒上香菜段,盛出装盘即可。
另外,保健添加剂的制作方法为:将菠萝叶、三七花、枳壳、干姜、人参叶、柠檬草、柏子仁加适量水煎煮1-2小时,滤去残渣后得中草药液,继续加热浓缩至原中草药液体积的十分之一;与其他剩余成分混合均匀后用小火翻炒至完全干燥既得。

制备方法,包括如下步骤:
