本发明属于饮料食品加工技术领域,具体公开了一种枣酪饮料专用稳定剂。由下列重量份的成分组成:亚麻籽胶10~20份、刺云实胶5~10份、辛葵酸甘油酯10~20份、糯米粉25~75份。本发明配方合理,选用的胶体价格适中,选择糯米粉作为填充剂,生产成本降低,而且经试验证实,产品的稳定性高。

技术领域
本发明属于饮料食品加工技术领域,具体涉及一种枣酪饮料专用稳定剂。
背景技术
近年来,随着生活水平的明显提高和消费者健康意识的增强以及饮料市场的快速发展,果汁饮料的发展突飞猛进,正逐渐成为一种新颖而又健康时尚的潮流。但由于果汁饮料成分的独特性,导致生产中出现诸多不稳定因素,如蛋白质的变性、沉淀,脂肪的上浮,纤维素的团结沉淀或絮凝以及矿物成分导致的整体变性以及分层或絮凝等,从而影响了该类产品的推广。所以,果汁饮料稳定剂在近几年的发展较快,目前果汁饮料用稳定剂主要由黄原胶、阿拉伯胶、果胶、瓜尔豆胶、CMC、刺槐豆胶、卡拉胶、肉桂胶、胶凝糖等食用胶体的一种或几种组成,有得还混合有乳化剂及磷酸盐。特别是枣果汁饮料,其稳定剂的主要成分多是黄原胶,价格较高,导致生产成本过高,并且饮料成品稳定性差,保质期较短。
发明内容
本发明的目的在于提供一种生产成本低、稳定效果较好的枣酪饮料专用稳定剂。
为实现上述目的,本发明采取的技术方案是:
一种枣酪饮料专用稳定剂,由下列重量份的成分组成:亚麻籽胶10~20份、刺云实胶5~10份、辛葵酸甘油酯10~20份、糯米粉25~75份。
制备方法:按重量份,将本发明中的成分通过简单混合至均匀即可!
本发明配方合理,选用的胶体价格适中,选择糯米粉作为填充剂,生产成本降低,而且经试验证实,产品的稳定性高。
具体实施方式
实施例1:
一种枣酪饮料专用稳定剂,由下列重量份的成分混合而成:亚麻籽胶20份、刺云实胶10份、辛葵酸甘油酯20份、糯米粉50份。
将本实施例的枣酪专用稳定剂应用到一种黑枣乌梅饮料中。具体地,100g黑枣乌梅饮料,由下述原料制备而成:黑枣60g、乌梅8g、黄精1g、枣酪专用稳定剂1g(亚麻籽胶0.2g、刺云实胶0.1g、辛葵酸甘油酯0.2g、糯米粉0.5g)、柠檬酸0.07g、维生素C 0.05g、食用香精0.1g,余量为水。所述食用香精为黑糖香精,采购自杭州杭曼香精有限公司,货号612022。
制备方法:
(1)将清洗过的黑枣、乌梅按比例混合,加入到已经烧开的沸水中合并预煮(煮软为度),去核,制浆,过滤,滤液入调配罐;
(2)将黄精用温水(70~80℃)浸泡,加入到已经烧开的沸水中预煮(煮软为度),制浆,过滤,滤液入调配罐;
(3)将枣酪专用稳定剂用温水(70~80℃)溶解后,入调配罐;
(4)将柠檬酸用水溶解后打入调配罐;
(5)将维生素C用水溶解后打入调配罐;
(6)将食用香精用水溶解后打入调配罐;
(7)在调配罐中加水,定容,混匀后经均质、脱气、杀菌和灌装得饮料成品。
同时,分别选用兄弟伊兰食品配料有限公司的HDZ-2 果汁稳定剂(2043) 1g和郑州海纳食品有限公司的1#稳定剂1g代替本实施例的枣酪专用稳定剂做对比试验,其它及制备方法同上。
常温保存,结果表明:使用本实施例枣酪专用稳定剂的饮料18个月(540天)内未发生分层现象,使用兄弟伊兰公司HDZ-2 果汁稳定剂(2043)的饮料分层发生在第381天,使用郑州海纳食品科贸有限公司的1#稳定剂的饮料分层发生在第422天。
实施例2:
一种枣酪饮料专用稳定剂,由下列重量份的成分混合而成:亚麻籽胶10份、刺云实胶5份、辛葵酸甘油酯10份、糯米粉75份。
同样将本实施例的枣酪专用稳定剂应用到一种黑枣乌梅饮料中。具体地,100g黑枣乌梅饮料,由下述原料制备而成:黑枣60g、乌梅8g、黄精1g、枣酪专用稳定剂1g(亚麻籽胶0.1g、刺云实胶0.05g、辛葵酸甘油酯0.1g、糯米粉0.75g)、柠檬酸0.07g、维生素C 0.05g、食用香精0.1g,余量为水;所述食用香精同实施例1。
饮料的制备方法同实施例1,常温保存,结果表明:使用本实施例枣酪专用稳定剂的饮料不分层的保质期达到458天。

1.一种枣酪饮料专用稳定剂,其特征在于由下列重量份的成分组成:亚麻籽胶10~20份、刺云实胶5~10份、辛癸酸甘油酯10~20份、糯米粉25~75份。
