[0002] 高血压是以体循环动脉压增高为主要表现的临床综合征是最常见的心血管疾病。据全国统计资料显示,我国现有高血压患者已达一亿,每年新增300万以上。高血压还会引起严重的中风、肾功能衰竭、左心室肥大、心率失常、动脉硬化、猝死等。它是破坏心、脑、肾器官的“无形杀手”。据全国卫生部门统计资料显示,我国现有高血压病患者已超过I亿人,每年新增300万人以上。
[0003] 高血压患者由于动脉压持续升高,引发全身小动脉硬化,从而影响组织器官的血液供应,造成各种严重的后果,成为高血压病的并发症。在高血压的各种并发症中,以心、脑、肾的损害最为显著。主要有脑血管意外、肾动脉硬化和尿毒症、高血压性心脏病、冠心病

[0004] 高血压的饮食原则主要包括有:(1)控制热能的摄入。提倡吃复合糖类,如淀粉、标准面粉、玉米、小米、燕麦等植物纤维较多的食物,促进肠道蠕动,有利于胆固醇的排泄。
(2)限制脂肪的摄入。膳食中应限制动物脂肪的摄入,烹调时多采用植物油。可多吃一些鱼,海鱼含有不饱和脂肪酸,能使胆固醇氧化,从而降低血浆胆固醇,预防中风。(3)适量摄入蛋白质。闻血压病人每日蛋白质的量为每公斤体重I克为宜。其中植物蛋白占50%,最好用大豆蛋白,大豆蛋白能防止脑卒中的发生。每周还应吃2-3次鱼类蛋白质,可改善血管弹性和通透性,增加尿钠排出,从而降低血压。(4)多吃含钾、钙丰富而含钠低的食物,如土豆、芋头、茄子、海带、莴笋、冬瓜、西瓜等。因钾盐能促使胆固醇的排泄,增加血管弹性,有利尿作用,有利于改善心肌收缩能力。含钙丰富的食品如牛奶、酸牛奶、芝麻酱、虾皮、绿色蔬菜等,对心血管有保护作用。(5)膳食宜清淡。适当的减少钠盐的摄入有助于降低血压,减少体内的钠水潴留。每日食盐的摄入量应在5克以下。(6)多吃绿色蔬菜和新鲜水果,有利于心肌代谢,改善心肌能力和血液循环,促使胆固醇的排泄,防止高血压病的发展。(7)忌食用兴奋神经系统的食物,如酒、浓茶、咖啡等,吸烟者应戒烟。

[0079] 用上述的馒头专用粉制备馒头,采用的制备方法是:
[0080] 第一步:按重量份计,取馒头专用粉1份,加入0.3~0.35份水,搅拌成面团,搅拌时间控制在10~15分钟;
[0081] 第二步:将第一步得到的面团放置在30~32°C、85%RH条件下的醒发箱,发酵30 ~40min ;
[0082] 第三步:将第二步得到的发酵面团中,加入0.2份的馒头粉、0.05~0.1份的水,搅拌、揉搓成面团;
[0083] 第四步:将第三步得到的面团放置在醒发箱中,在30~32°C、75%RH条件下发酵20 ~30min ;
[0084] 第五步:将第四步得到的发酵面团用蒸汽蒸制15~25min,停火后,取出放冷即可。
[0085] 采用SB/T10139-93《馒头用小麦粉》对以上实施例制备得到的北方馒头进行评价,请60名经过训练过的、有经验的面食评价师对以上北方馒头按标准进行评定打分,各指标项目得分取平均值。

[0088] 从表中可以看出,本发明提供的馒头粉制成馒头后,具有良好的口感和外观品质,虽然色泽一项得分不高,这主要是由于在面粉中加入了一些营养成分,导致与正常情况下制做的面粉具有一定的色泽差异,略呈金黄色。
[0089] 另外,通过实施例1~实施例3与对照例I相比可以看出,如果不在面粉中添加海参的制取物,馒头的弹韧性不好,这主要是由于海参中的胶质可以与面粉中的蛋白、淀粉等作用,加强面团的交联结构,提高馒头的韧性,使馒头更有咬劲。
[0090] 通过实施例1~实施例3与对照例2相比可以看出,如果不在面粉中添加糯米粉,同样也会导致馒头的弹韧性不好,这主要是由于糯米可以有效地提高面团之前的交联结构,使蒸制后的馒头更有咬劲和韧性,避免了其它成分与面粉之间形成的面团筋力不强的问题。
[0091] 通过实施例1~实施例3与对照例3相比可以看出,如果不在面粉中添加大豆分离蛋白,导致面团的外观不佳,馒头的整体形成不是特别蓬松,可能是由于大豆分离蛋白可以与面粉的淀粉、水分之间在和面的过程中,形成较为均匀的面筋结构,会影响到面粉发酵过程中形成足够而均匀的气泡,这一点通过“结构”一项的测试也可以同样证实出。另外,由于没有大豆分离蛋白,导致了面团的面筋量不足,从而导致制成馒头之后,结构较为松散,因此使馒头的韧性和咬劲不足。
[0092] 对高血压的治疗保健效果试验
[0093] 经过对765例高血压患者的饮用治疗统计,以该馒头粉制作馒头为主食,辅以其他治疗手段,血压值在正常范围的742例,各项指标稳定7例,无效12例,总有效率为98%,经过实验证明饮用此馒头粉配合其他治疗手段能够很好地控制患者的血压并且无不良反应。

[0095] 刘某,男,46岁,5余年高血压病史,以往住院用西药治疗,易复发,血压常在(160-180) / (95-100)mmHg,其苦难言,2006年起通过奥美沙坦酯进行高血压治疗,配合以该馒头粉为主食,至今已6年余,血压一直正常(110/70mmHg),从未复发,同时被高血压损害而扩大的左心也恢复正常。
[0096] 李某,男,63岁,患糖尿病8年,经过检查血压、血脂的指标较高,平时总有饥饿感口干并伴有手脚麻木症状,多饮、多食,血糖、血压值始终超出正常值,视物昏花、心肾功能异常身体非常虚弱,以该馒头粉配合降压药雷米普利治疗手段2年,血压、血脂、血糖值能够控制在正常值范围内,近半年内已经停止使用西药治疗,仍坚持以该馒头作为主食,上述症状消失,并没有其他不良反应。

1.一种高血压病人专用的馒头专用面粉,其特征在于,所述的馒头专用面粉的制备方法是:s1:取荸荠4kg,去皮后,榨汁,得荸荠汁;取藕4kg,洗净后,榨汁,得藕汁;取梨4kg,去皮去核后,榨汁,得梨汁;取芦根5kg,加水煎煮,弃去残渣,得芦根汁;将麦冬4kg洗净,放在沙锅内,加水上火煎出汁,取汁,得麦冬汁;将所述的荸荠汁、藕汁、梨汁、芦根汁、麦冬汁合并,浓缩后干燥,得到粉末I ;S2:取海带7kg、芹菜4kg、西瓜皮12kg、莲子4kg、山楂4kg、香蕉4kg、菠菜3kg、黑木耳3kg、海蜇皮3kg、桑叶3kg、菊花3kg、百合4kg、苦瓜4kg、白萝卜4kg、无花果4kg,分别切碎之后,混合均勻,在115°C下干燥5小时,粉碎后过200目筛,得粉末II ;S3:取黄柏6kg、知母8kg、炎杜仲3kg、灵芝3kg、茉莉花4kg、金银花4kg混合均勻,加水煎煮,浓缩煎液后干燥,得到粉末III ;S4:将绿茶10kg、核桃4kg、玄参4kg、玉米须3kg粉碎后过200目筛,得到粉末IV ;S5:将羚羊角粉6kg进行粉碎,过400目筛,得到粉末V ;S6:将海参30kg蒸熟,取出后,切成小块,在115°C下干燥5小时,再研磨过400目筛,得到粉末VI ;S7:取绿豆20kg和山药15kg,粉碎后过400目筛,得到粉末VII ;S8:将粉末1、粉末I1、粉末II1、粉末IV、粉末V、粉末V1、粉末VII以及中筋小麦粉400kg、玉米粉60kg、糯米粉30kg、木糖醇4kg、大豆分离蛋白30kg、朽1檬酸钠4kg、单硬脂酸甘油酯3kg、木薯粉4kg、羧甲基纤维素钠3kg、藻酸丙二醇酯3kg、酵母粉30kg混合均匀,即可得到馒头专用粉。
