Abstract
本发明提供了一种基于中草药的杨梅保鲜剂,其由多种植物源中药组成,具有使用方便、安全无毒、保鲜效果显著的特点。所述保鲜剂包括提取物清液和杨梅树叶提取物,其中提取物清液由丁香1-5%,甘草1-4%,金银花0.5%-3%,大黄0-2%,芦荟1-5%,杨梅酒1-5%,以及水76-95.5%制备而成,杨梅树叶提取物占提取物清液总重量的1-6%。本发明还提供了制备上述保鲜剂的方法,以及该保鲜剂在果蔬保鲜中的应用。
Description
技术领域
本发明涉及保鲜剂领域,尤其涉及一种适用于杨梅的保鲜剂及其制备方法。
背景技术
杨梅是我国南方的特有水果,主要分布在长江以南的江苏、浙江、福建、广东等省。杨梅果实具有酸甜多汁、风味浓郁、营养价值高等优点,并且富含蛋白质、脂肪、果糖、葡萄糖、氨基酸、柠檬酸、多种维生素以及铁钙、磷等多种矿物质。杨梅还具有医疗保健和药用价值,其果实、仁、叶、皮均具有药用价值而且还含有抗癌活性物质,对肿瘤细胞的生长具有一定的抑制作用。
然而杨梅主要产量集中在6月中、下旬的十几天时间内,适逢高温高湿的梅雨季节,由于果实柔软多汁、外果皮很薄,属于呼吸作用较强的水果,而且柱状突起易受伤害,极易变质,在普通室内贮藏,保质期极短。故有“一日变味,二日变色,三日变质”之说。杨梅的贮运问题己严重影响了当地果农的经济收入和当地农村的经济发展,成为制约杨梅产业发展的瓶颈,也成为当地政府和果农十分关注的课题。
目前存在多种对杨梅保鲜的方法,如郑永祥等人采用低温、气调保鲜可延长贮藏期,但不能抑制耐低温腐败菌的生长,而且贮藏期也不能过久。王益光等研究采用安全无毒化学药剂如壳聚糖处理和低温储存相结合的技术对杨梅进行涂膜处理,然而这种化学药剂又较大的影响了杨梅的口感。中国专利CN1582684“一种杨梅保鲜剂及节能贮运中的保鲜方法”采用A和B两类化学和微生物物质对杨梅进行保鲜。A物质包括山梨酸、脱氢醋酸钠等,B物质为乳酸链球菌素、溶菌酶。专利CN1513334“杨梅的贮藏保鲜方法”是在在淀粉中掺入10~30%CIO2粉末,制成缓释小包;贮藏于冰温库。但以上保鲜均沿用传统的化学保鲜剂,使用这些保鲜剂后杨梅的保鲜时间仍然超不过20多天,仍未得到一种长时间、低成本、无毒害的杨梅保鲜剂。
我国的中草药因其具有资源丰富、价格便宜、具有天然的杀菌抑菌等优点,日益受到科研工作者的青睐和重视,尤其受到果蔬保鲜领域科研工作者的广泛研究。中草药提取物能保鲜水果的原理在于,中草药中某些芸香科中的植物,其枝叶和果皮中所含的精油中的桂酚、龙脑、桉叶油素、丁香酚甲醚、芳樟醇、丁香酚、异丁香酚、丁香酚甲醚、香茅醇、蒿醇、辣薄荷酮、a-蒎醇、香芹酚、大茴香醚、苯甲醛、壬醛等均具有强烈抑杀微生物的活性。如柑桔属果皮中的未成熟精油,对柑桔类水果的指状青霉和意大利青霉有很强的抑杀作用;花椒属植物根中所含的生物碱对金色葡萄球菌、溶血性链球菌、大肠杆菌、变形杆菌等均有较好抑制作用;芥菜籽中的异硫氰酸烯内酯、肉桂中的桂醛都是起抑菌作用的有效成分;精油中的有效成分能透过细胞而进入菌体的内部,降低生物膜的稳定性,从而干扰了能量代谢的酶促反应。人们还发现九种中草药的提取液对黑曲霉、扩展青霉的抑制作用,丁香、肉桂的提取物可抑制黑曲霉和扩展青霉的孢子萌发,五倍子、川芎的提取物可抑制黑曲霉和扩展青霉的孢子形成。研究发现,有100多种中草药对白念球菌、伤寒和痢疾杆菌、耐甲氧西林的金黄色葡萄球菌、表皮葡萄球菌、大肠埃希菌、伤寒沙门菌、黑曲霉、黄曲霉、日本曲霉、杂色曲霉、产黄曲霉、毛壳菌、弯孢霉、枝孢霉、桔灰青霉、淋球菌、新型隐球菌等都具有较强的抑制作用。因此利用植物或中草药进行水果的保鲜是天然保鲜剂研究发展的方向,人们在这方面已进行了许多尝试。段翰英将金银花、大黄、高良姜的提取物应用到黄瓜的保鲜贮藏中,高海生报道用百部、虎帐、良姜、黄连素等中草药进行超临界提取,提取物配以淀粉、魔芋、卵磷脂等制成的中草药复合制剂,对苹果等果蔬具有较好的防腐保鲜作用。中国专利申请号为200510007591.6,名称为“以植物提取物为主成分防腐保鲜水果的方法”的发明专利,就以黄柏、虎杖、厚朴、松萝等中药提取物作为抑菌剂。申请号02109024.6,名称“一种果蔬保鲜剂的制作方法’的发明专利,含有明日叶、阿司匹林等药物,还含有大蒜等原料。申请号为93109734.7,名称为“食品防腐剂及其生产方法”的发明专利,以大蒜素作为抑菌剂。
以上研究水果保鲜的方法虽然很多,但由于杨梅果实柔软多汁、外果皮很薄,属于呼吸作用较强的水果,而且柱状突起易受伤害,极易变质,所以杨梅的中草药保鲜问题一直未见有相关报道。
发明内容
经长期对杨梅的生长、呼吸和霉变特性调查研究,本发明人经多年实践探索,研究出了专用的杨梅中草药保鲜剂,采用该保鲜剂并低温冷藏保存,可使杨梅保鲜储存在一个月以上。
本发明提供的基于中草药的杨梅保鲜剂,其由多种植物源中药组成,具有使用方便、安全无毒、保鲜效果显著的特点。该杨梅保鲜剂包括由丁香1-5%,甘草1-4%,金银花0.5%-3%,大黄0-2%,芦荟1-5%,杨梅酒1-5%,以及水76-95.5%制备而成的提取物清液以及基于提取物清液总重量1-6%的杨梅树叶提取物。
在本发明提供的一个具体实施例中,该保鲜剂包括由丁香2%,甘草4%,金银花2%,大黄1%,芦荟5%,杨梅酒4%,以及水82%制备而成的提取物清液,以及基于提取液清液总重量4%的杨梅树叶提取物。
在本发明提供的一个具体实施例中,该保鲜剂包括由丁香4%,甘草2%,金银花1%,大黄2%,芦荟3%,杨梅酒5%,以及水83%制备而成的提取物清液,以及基于所述提取液清液总重量3%的梅树叶提取物。
在本发明提供的一个具体实施例中,该保鲜剂包括由丁香5%,甘草1.5%,金银花3%,大黄1.5%,芦荟2%,杨梅酒3%,以及水84%制备而成的提取物清液,以及基于所述提取液清液总重量5%的杨梅树叶提取物。
在本发明提供的另一个具体实施例中,该保鲜剂包括由丁香1%,甘草4.5%,金银花3%,大黄2%,芦荟5%,杨梅酒3.5%,以及水81%制备而成的提取物清液,以及基于提取液清液总重量6%的杨梅树叶提取物。
本发明还提供了一种制备上述杨梅保鲜剂的方法,包括以下步骤:(1)按重量比例取丁香1-5%,甘草1-4%,金银花0.5%-3%,大黄0-2%,芦荟1-5%,杨梅酒1-5%,及水76-95.5%,经浸泡后,加热回流进行有效成分的提取,再过滤,得到提取物清液;(2)基于上述提取物清液的总重量,按重量比例取杨梅树叶提取物1-6%,与提取清液混合,制得本发明提供的杨梅保鲜剂。
本发明还提供了上述杨梅保鲜剂在果蔬保鲜中的应用,直接将保鲜剂喷洒在果蔬上,或者将其喷洒在树叶上,然后将树叶铺盖在果蔬上即可,然后对果蔬进行低温冷藏,通常冷藏的温度在4-5℃左右。通过将本发明提供的保鲜剂应用到果蔬产品中,可实现果蔬产品较长时间的保鲜。
具体实施方式
下面将对本发明的发明目的、技术方案和有益效果作进一步详细的说明。
应该指出,以下详细说明都是例示性的,旨在对所要求的本发明提供进一步的说明。除非另有指明,本文使用的所有技术和科学术语具有与本发明所属技术领域的普通技术人员通常理解的相同含义。
本发明提供的基于中草药的杨梅保鲜剂,其由多种植物源中药组成,现对其主要成分组成叙述如下:
丁香为桃金娘科植物,丁香花蕾挥发油的主要成分为丁香酚,即2-甲氧基-4-烯丙基苯酚,是极好的极性抗菌基团,具有抑菌、抗菌、防腐、消炎、杀菌、驱虫、镇痛等功效。丁香是我国卫生部公布的药食兼用植物材料,既能食用,又是名贵中药。
甘草是一种非常重要的药材,具有很好的抗氧化性和抗菌性。它含有多种黄酮类和类黄酮类物质的混合物,如甘草黄酮、羟基香豆酮、甘草异黄酮A、甘草异黄酮B等。这些物质可参与生物的生化反应,从而促进或干扰某些反应,而表现出多种生物活性,甘草提取物对黑曲霉、米曲霉、黑根霉、毛霉、拟青霉具有较好的抑制作用。
杨梅叶中含有二氢杨梅素,属于一种多酚羟基双氢黄酮醇,属黄酮类化合物。二氢杨梅素能清除氧自由基,抑制氧自由基对生物体的损害,阻止食品氧化变质。研究表明二氢杨梅素具有很好的抗菌作用,可通过破坏细胞壁及细胞膜的完整性,导致微生物细胞释放胞内成分,引起膜的电子传递、营养吸收、核苷酸合成及ATP活性等功能障碍,从而抑制微生物的生长。
金银花为常用中药,具有清热解毒、凉散风热之功效。金银花的主要化学成分是绿原酸、异绿原酸、白果酸、咖啡酸、本犀草素、木犀草素-7-葡萄甙、β一谷甾醇、豆甾醇及挥发油等,这些化学成分均对多种造成食品腐败的微生物具有较强的抑制活性和抗菌作用,对金黄色葡萄菌、白色葡萄球菌、溶血性链球菌、肺炎杆菌、脑膜炎双球菌、伤寒杆菌、副伤寒杆菌、大肠杆菌、痢疾杆菌、变形杆菌、百日咳杆菌、绿脓杆菌、结核杆菌、霍乱杆菌等多种革兰氏阳性菌和革兰氏阴性菌均有一定的抑菌作用。
大黄为蓼科草本植物,研究发现其主要有效成分为蒽醌衍生物。游离型的蒽醌衍生物有大黄酸、芦荟大黄素、大黄素甲醚和大黄酚等,大黄恩醌及其衍生物具有较强的抗菌活性。研究发现大黄通过影响核酸代谢从而抑制细菌生长和繁殖,其大黄鞣质因能凝固微生物体内的原生质以及对多种酶的作用,故对多种细菌、真菌及酵母菌有明显的抑制能力。
芦荟是单子叶植物纲百合目百合科中的芦荟属,是多年生肉质草本种子植物。芦荟提取物的抗菌活性在伤口愈合治疗中能够有效地抑制微生物感染。芦荟对对大肠杆菌、福氏痢疾杆菌、金色葡萄糖球菌、变形杆菌等具有较好的抑制作用。芦荟叶皮组织中的蒽醌类化合物是芦荟中主要的抗菌物质,其中的芦荟苷和芦荟大黄素抗菌能力最强,它们具有相同的蒽醌母环结构,芦荟苷对细菌细胞壁的亲和力更强,从而使它更容易作用并破坏菌体细胞壁的结构。实验表明芦荟苷能够直接作用于大肠杆菌,改变其细胞的形态。
本发明的目的是以如下方式实现的:基于中草药的杨梅保鲜剂,其由丁香、甘草、杨梅树叶提取物、金银花、芦荟、大黄、杨梅酒和水组成,各组分的重量百分比分别为:由丁香1-5%,甘草1-4%,金银花0.5%-3%,大黄0-2%,芦荟1-5%,杨梅酒1-5%,以及水76-95.5%制成的提取物清液,以及基于提取物清液总重量1-6%的杨梅树叶提取物。在不断的实践中发现,采用上述有效成分组成的保鲜剂,其保鲜效果非常显著,各中药成分之间具有协同作用,既能有效抗菌,又能保持果蔬的正常呼吸,有效防止水分的流失,具有显著的保鲜效果。
制备上述基于中草药的杨梅保鲜剂的方法是:(1)按重量比例取:丁香1-5%,甘草1-4%,金银花0.5%-3%,大黄0-2%,芦荟1-5%,杨梅酒1-5%,水76-95.5%,经浸泡后加热回流,对有效成分进行提取,然后过滤出固体物质,得到提取物清液;(2)基于上述提取物清液总重量,按重量比例取杨梅树叶提取物1-6%,与提取清液充分混合,得到本发明提供的杨梅保鲜剂。
杨梅保鲜剂的使用方法是:将保鲜剂喷洒在杨梅叶上,然后覆盖所需保鲜的杨梅上,进行低温冷藏;或者可以直接将杨梅保鲜剂直接喷洒在杨梅上,然后低温冷藏进行保鲜。除了可应用于杨梅的保鲜之外,本发明提供的保鲜剂还可用于其它果蔬的保鲜。
一、保鲜剂的制备
丁香,甘草,金银花,大黄,芦荟均从市场上购得;
杨梅酒可以从市场上购得,也可以自行酿造,自行酿造的方法如下:A.将新鲜杨梅制成碎浆;B.将新鲜杨梅碎浆、水和白糖放入预先配有发酵料的发酵容器内发酵,发酵容器内部保持与外部空气的连通,该发酵料是用早稻大米为原料制成,发酵所需的时间为七到九天,头两到三天将新鲜杨梅碎浆、白糖和发酵料的混合物每天搅拌二到四次,之后的五到六天需要将新鲜杨梅碎浆和发酵料的混合物每天搅拌一次;C.然后将发酵容器封闭,在接下来的几天内观察发酵容器底部有无大水泡快速大量上升,直到发酵容器底部没有大水泡上升,再打开发酵容器将容器内的液体过滤后就得到成品的杨梅酒。经过此方法酿造的杨梅酒的乙醇含量在20-30%左右,在杨梅酒中富含多种有机酸、果酸、维生素C等多种营养成分。本发明所采用的杨梅酒均为采用该方法自行酿造得到的杨梅酒。
杨梅树叶提取物:将新鲜的杨梅树叶洗干净,晾干后浸泡在乙醇24小时,收集乙醇浸泡液,旋转蒸发后得到杨梅树叶提取物。
比较例1
根据段翰英的报道,将金银花、大黄、高良姜的提取物制得保鲜剂,具体步骤可参考《中草药提取物在黄瓜保鲜上的应用研究》所披露的内容。
比较例2
根据高海生报道用百部、虎帐、良姜、黄连素等中草药进行超临界提取,提取物配以淀粉、魔芋、卵磷脂等制成的中草药复合制剂,具体实施步骤参考高海生发表的《利用中草药提取物保鲜果蔬》。

实施例1
按重量比例取丁香2%,甘草4%,金银花2%,大黄1%,芦荟5%,杨梅酒4%,水82%,浸泡一段时间后,进行加热回流,对有效成分进行提取,回流提取6-8小时后,将固体成分过滤,得到中草药提取物清液;
基于提取物清液总重量,按重量比例取杨梅树叶提取物4%,与上述中草药提取清液混合,得到中草药杨梅保鲜剂。
实施例2:
按重量比例取丁香4%,甘草2%,金银花1%,大黄2%,芦荟3%,杨梅酒5%,水83%,制备方法与实施例1相同,得到中草药提取物清液;
基于提取物清液总重量,按重量比例取杨梅树叶提取物3%,与上述中草药提取清液混合,得到中草药杨梅保鲜剂。
实施例3:
按重量比例取丁香5%,甘草1.5%,金银花3%,大黄1.5%,芦荟2%,杨梅酒3%,水84%,制备方法与实施例1相同,得到中草药提取物清液;
基于提取物清液总重量,按重量比例取杨梅树叶提取物5%,与上述中草药提取清液混合,得到中草药杨梅保鲜剂。
实施例4:
按重量比例取丁香1%,甘草4.5%,金银花3%,大黄2%,芦荟5%,杨梅酒3.5%,水81%,制备方法与实施例1相同,得到中草药提取物清液;
基于提取物清液总重量,按重量比例取杨梅树叶提取物6%,与上述中草药提取清液混合,得到中草药杨梅保鲜剂。
实施例5
按重量比例取丁香1%,甘草2.5%,金银花0.5%,芦荟5%,杨梅酒1.0%,水90%,制备方法与实施例1相同,得到中草药提取物清液;
基于提取物清液总重量,按重量比例取杨梅树叶提取物6%,与上述中草药提取清液混合,得到中草药杨梅保鲜剂。
二、保鲜效果实验
本实验采用对比法,通过将本发明制得的保鲜剂与比较例1-5制得的保鲜剂作比较来研究对杨梅的保鲜效果。
另外,将本发明提供的杨梅保鲜剂应用到其他果蔬中,同样获得了非常良好的保鲜效果。
实验方法:分别用比较例1-5以及本发明提供的实施例1-5制得的保鲜剂对当天采下来的杨梅进行处理,分别称重装袋并低温保藏,观察并记录杨梅的外观变化及失水率。未采用任何保鲜剂的杨梅作为空白对比例。
失水率计算公式:失水率=(开始的重量-保鲜后的重量)/开始的重量。
杨梅重量随时间变化如表1所示:

根据表1所示,空白袋由于在3-4天时就发生了腐烂现象,在第15天的时候就已经全部腐烂了,所以没有计算其失水率。比较例1-5所得保鲜剂处理过的杨梅在第45天的失水率在0.8-0.9之间,而实施例1-5制得的保鲜剂处理过的杨梅失水率在0.65-0.50之间,其明显低于比较例数值。可见,本发明提供的杨梅保鲜剂可明显降低杨梅水分的流失,可显著保持水果的新鲜可口。
在该试验过程中,杨梅外观随时间的变化而变化,具体变化情况随如表2所示:

从表2可以看出,比较例1-5所得保鲜剂在保鲜杨梅时,达到第40天后,杨梅全部腐烂,用实施例1-5所得保鲜剂进行保鲜处理后,杨梅在第40天后仅有一部分出现了霉变现象。
采用本发明实施例1制得的保鲜剂对表3所列果蔬进行保鲜处理。

根据上述实验可见,本发明制得的保鲜剂不仅仅对杨梅具有保鲜作用,同样对其他果蔬也具有非常显著的保鲜作用。
综上所述,本发明提供的杨梅保鲜剂及其制备方法具有下述优点:
1.本发明所采用的保鲜剂成分均为天然提取物,无任何毒副作用,食用时无需特别冲洗去除。
2.本发明制得的保鲜剂具有较长的保鲜时间,可有效阻止果蔬的水分流失,保持果蔬的新鲜可口。
3.制备本保鲜剂的方法简单易行,不需要特殊的实验设备及昂贵的有效成分即可制得,非常适合于在广大农村中推广应用。
4.本发明提供的保鲜剂使用方便,不需要涂膜等复杂工艺,仅需喷洒在果蔬产品上就可达到保鲜功效,便于果农操作。

Claims (6)
1.一种杨梅保鲜剂,其特征在于,所述保鲜剂包括提取物清液及杨梅树叶提取物,其中,所述提取物清液由丁香1-5%,甘草1-4%,金银花0.5%-3%,大黄0-2%,芦荟1-5%,杨梅酒1-5%,以及水76-95.5%制备而成;所述杨梅树叶提取物的重量占所述提取物清液总重量的1-6%,制备所述杨梅保鲜剂的方法具体包括以下步骤:
(1)按重量比例称取丁香1-5%,甘草1-4%,金银花0.5%-3%,大黄0-2%,芦荟1-5%,杨梅酒1-5%,水76-95.5%,经浸泡后加热提取,过滤,得到提取物清液;
(2)基于所述提取物清液总重量,按重量比例取杨梅树叶提取物1-6%,与所述提取物清液混合,得到所述杨梅保鲜剂。
2.根据权利要求1所述的杨梅保鲜剂,其特征在于,所述提取物清液由丁香2%,甘草4%,金银花2%,大黄1%,芦荟5%,杨梅酒4%,以及水82%制备而成;所述杨梅树叶提取物的重量占所述提取液清液总重量的4%。
3.根据权利要求1所述的杨梅保鲜剂,其特征在于,所述提取物清液由丁香4%,甘草2%,金银花1%,大黄2%,芦荟3%,杨梅酒5%,以及水83%制备而成;所述杨梅树叶提取物的重量占所述提取液清液总重量的3%。
4.根据权利要求1所述的杨梅保鲜剂,其特征在于,所述提取物清液由丁香5%,甘草1.5%,金银花3%,大黄1.5%,芦荟2%,杨梅酒3%,以及水84%制备而成;所述杨梅树叶提取物的重量占所述提取液清液总重量的5%。
5.制备权利要求1所述杨梅保鲜剂的方法,其特征在于,包括以下步骤:
(1)按重量比例称取丁香1-5%,甘草1-4%,金银花0.5%-3%,大黄0-2%,芦荟1-5%,杨梅酒1-5%,水76-95.5%,经浸泡后加热提取,过滤,得到提取物清液;
(2)基于所述提取物清液总重量,按重量比例取杨梅树叶提取物1-6%,与所述提取物清液混合,得到所述杨梅保鲜剂。
6.权利要求1-4任一项所述杨梅保鲜剂在果蔬产品保鲜中的应用,其特征在于,将所述杨梅保鲜剂直接喷洒在所述果蔬产品上进行保鲜,所述果蔬产品为杨梅、荔枝、草莓或者苹果。
