Abstract

MÉTODO PARA PRODUZIR LEITE MODIFICADO. É estabelecido um método por meio do qual um produto lácteo que tenha uma textura rica e cremosa pode ser obtido por meio da redução ou remoção de um inibidor de reação para a proteína desamidase contida em um matéria de leite de partida tendo pouca história de calor para, por esse meio, tratar mais eficientemente e mais eficazmente o material de leite de partida tendo pouca história de calor com a proteína desamidase. Um material de leite de partida que tenha pouca história de calor é tratado com proteína desamidase após ou simultaneamente com um tratamento por meio do qual um inibidor da proteína desamidase possa ser reduzido (por exemplo, adição de um agente de quelação de cálcio).
