Abstract

"MéTODOS PARA TERMICAMENTE TRATAR UM PRODUTO, E, ALIMENTO". Um método para termicamente tratar um produto com o objetivo se obter o produto com as propriedades de produto desejadas, compreendendo as seguintes etapas: (a) determinar o valor de atividade de água que, para realizar o tratamento térmico é requerido para se obter o produto com propriedades desejadas; (b) contactar o produto com vapor de água, em uma temperatura aumentada e uma pressão de vapor saturado (p*) associada, enquanto que a temperatura sobre a superfície do produto é de 80-260<198>C; (c) ajustar a pressão de vapor (p) na etapa (b) de tal modo que p/p* seja igual ao valor de atividade de água determinado na etapa (a); e (d) manter por uma duração de tempo (t) as condições de processo mencionadas nas etapas (b) e (c) para obter o produto com as propriedades de produto desejadas.
