Abstract

"PROCESSO PARA A PREPARAçãO DE UMA BEBIDA ESTáVEL AO AMBIENTE ADEQUADA PARA ENCHIMENTO A FRIO". Processo para a preparação de bebida estável ao ambiente que é apropriada para enchimento a frio. O processo envolve adicionar a uma bebida pelo menos um adjunto de pasteurização que não possui uma atividade fungicida apreciável em uma temperatura entre O e 40 graus C, mas apresenta uma atividade fungicida quando aquecido a uma temperatura entre 40 e 65 graus C, e elevar a temperatura da bebida até uma temperatura entre 40 e 65 graus C com a finalidade de ativar a atividade fungicida do adjunto de pasteurização.
