Description
本発明は、抗菌組成物、特に、食品を消毒する点で有用な抗菌組成物に関する。本発明の組成物は、オクタン酸、酸味料、カップリング剤、任意の緩衝剤及び水を含む。本発明の組成物は、GRAS又は食品添加原料からなる。
食品の加工、製造及び包装中に、食品は、消費に不適当な食品をつくる微生物と出くわすことがある。微生物は、食品自体、食品表面及び/又は周囲の環境から発生することがある。微生物は、病原性微生物(例えば、リステリア・モノサイトゲネス(Listeria monocytogenes)、腸管出血性大腸菌、サルモネラ等)から、最終食品の味、色及び/又は匂いに影響を与え得る損傷生物まで広がり得る(例えば、シュードモナス(Pseudomonas)、アシネトバクター(Acinetobacter)、モラクセラ(Moraxella)、アルカリゲネス(Alcaligenes)、フラボバクテリウム(Flavobacterium)、エルウィニア(Erwinia)等)。微生物は、肉、鶏肉、魚及び貝、チーズ、果物及び野菜、及び加工調理済み食品を含む様々な食品に影響を与え得る。あるレベルでの、食品に接触している微生物の存在は、低品質食品についての消費者の認識から、規制上の調査及び許可、食品由来の疾病及び死亡までの全てを引き起こすことがある。
本発明がなされたことはこの背景と反対である。
驚くべきことに、食品に本発明の抗菌組成物を適用することによって、食品に接触する微生物が減少され得る、ことを発見した。本発明の抗菌組成物は、オクタン酸、酸味料
カップリング剤、任意の緩衝剤及び水を含む。本発明の抗菌組成物は、好ましくは、有利である食品用又はGRAS成分からなる。なぜなら、それらは先に安全であると証明され、敏感に反応する表面、例えば後で濯がれる必要のない食品、に適用され得るからである。抗菌組成物の食品への適用は、食品の微生物の存在を効果的に減少させる好ましい方法である。また、水で注ぐ必要のないことは、濯ぎ中の再汚染の可能性、及び微生物が増殖するための湿った環境の存在をとり除く。更に、ある方法で使用されるときには、抗菌組成物は、食品に残存し、長期間、抗菌効果を提供し続けることができる。例えば、抗菌組成物は、食品が包装された直後まで、又は食品の寿命中、抗菌効果を提供し続けることができる。
本発明は、抗菌組成物、特に、食品を消毒することにおいて有用である抗菌組成物に関する。本発明の組成物は、オクタン酸、酸味料、カップリング剤、任意の緩衝剤及び水を含む。本発明の組成物は、GRAS又は食品添加原料からなる。当然のことながら、本明細書に記載の本発明の様々な実施態様は、様々な独自の実施態様を創作するために組み合わせることができ、そして、これらは、依然として本発明の範囲内に入る。更に、当然のことながら、本明細書に記載の例は、他に言及しない限り、記載した実施態様の任意と組み合わせて使用することができる。
以下の定義された用語について、異なった定義がクレーム又は本明細書中の他の箇所で記載されていない限り、これらの定義を適用する。
本発明は、一般的に、抗菌組成物、特に食品を消毒することにおいて有用である抗菌組成物に関する。本発明の組成物は、オクタン酸、酸味料、カップリング剤、任意の緩衝剤、及び水を含む。本発明の組成物は、好ましくは、GARS又は食品添加原料を用いて形成される。
抗菌組成物は、活性な抗菌剤として、C6〜C22の脂肪酸、特にオクタン酸を含む。オクタン酸は抗菌活性を提供するばかりでなく、食品用公定化学品集による「食品用」及び米国食品医薬品庁による「食品添加物」であると考えられる。抗菌性と直接的な食品的適用とのこの組合せは、オクタン酸を、特に食品への適用に役立たせる。
抗菌組成物は、組成物のpHを調整するための1以上の酸味料を含む。本発明で使用される酸味料は、好ましくは、好適なGRAS又は食品添加原料であると考えられる。好適なGRAS又は食品添加酸味料の非-限定的な例は、乳酸、リン酸、硫酸、アジピン酸、酒石酸、コハク酸、酢酸、プロピオン酸、クエン酸、リンゴ酸、硫酸ナトリウム(sodium acid sulfate)及びそれらの混合物を含む。酸味料は、好ましくは、リン酸又はクエン酸である。
抗菌組成物は、場合により、1以上の緩衝剤を含む。緩衝剤は、好ましくは、組成物中で使用される酸味料の共役塩基である。更に、緩衝剤は、好ましくは、GRAS又は食品添加原料であると考えられる。緩衝剤は、酸味料の塩の形態で組成物に直接添加し、又は酸味料に中和塩基を加えることによって形成することができる。例えば、緩衝剤が組成物中でつくられる場合には、中和塩基は、対応する緩衝塩を形成するように酸味料に加えられるべきである。中和塩基は、好ましくは、GRAS又は食品添加物であると考えられる。好適な中和塩基の非限定的な例は、水酸化ナトリウム、水酸化カリウム、ケイ酸塩、第三リン酸ナトリウム等を含む。
緩衝剤は、好ましくは、クエン酸ナトリウム又はクエン酸カリウムと組合せたクエン酸である。
抗菌組成物は、溶液中に組成物の原料を維持するための1以上のカップリング剤を含む。カップリング剤は、好ましくは、GRAS又は食品添加原料である。好適なカップリング剤の非限定的な例は、プロピレングリコールエステル、グリセロールエステル、ポリオキシエチレングリセロールエステル、ポリグリセロールエステル、ソルビタンエステル、ポリオキシエチレンソルビタンエステル、ポリオキシエチレン-ポリオキシプロピレンポリマー、スルホン酸塩、コハク酸ジオクチルナトリウム、乳酸ステアロイル、及び複合エステル、例えば、アセチルグリセリド、酢酸グリセリド、乳酸グリセリド、クエン酸グリセリド、コハク酸グリセリド又はジアセチル酒石酸グリセリドを含む。カップリング剤は、好ましくは、ソルビタンエステル、例えばポリオキシエチレン(20)ソルビタンモノオレエート(ポリソルベート 80として商業的に入手可能)、ポリオキシエチレン(20)ソルビタンモノステアレート(ポリソルベート 60として商業的に入手可能)、及びポリオキシエチレン(20)ソルビタンラウレート(ポリソルベート 20として商業的に入手可能)である。
抗菌組成物は、組成物の効力を更新し又はその他の利点を与える追加の機能性成分を含むことがある。含まれ得る追加の機能性成分の例は、長鎖の飽和又は不飽和脂肪酸(例えば、C6〜C22)、酸化剤、担体、キレート化剤、屈水性誘発物質、増粘剤及び/又はゲル化剤、発泡剤、フィルム-形成剤、界面活性剤、カップリング剤、酸味料、増強物質、風味助剤、香料、色素等を含む。追加の機能性成分はいずれも、好ましくは、GRAS又は食品用成分である。
組成物は、場合により、長鎖脂肪酸、特に、C6〜C22脂肪酸を含むことがある。脂肪酸は、末端カルボキシル基(-COOH)を有する6〜22個の炭素原子を有するアルキル基からなる。アルキル鎖炭素原子の全てが単結合によって結合される脂肪酸は、飽和である。炭素原子間に1以上の二重結合を有する脂肪酸は、不飽和であり得る。飽和脂肪酸の非限定的例は、ヘキサン酸(C6)、オクタン酸(C8)、ノナン酸(C9)、デカン酸(C10)、ラウリン酸(C12)、ミリスチン酸(C14)、パルミチン酸(C16)、ステアリン酸(C18)、アラキン酸(C20)、べヘル酸(C22)等を含む。不飽和脂肪酸の非限定的例は、パルミトリル酸 (C16:1)、オレイン酸 (C18:1)、リノール酸 (C18:2)、リノレン酸 (C18:3)、アラキドン酸 (C20:1) 等を含む。
組成物は、場合により、酸化剤を含むことがある。酸化剤の非限定的例は、過酸化合物、例えば有機及び無機過酸化物、過酸、過エステル、及びそれらの混合物を含む。無機化酸化物の非限定的例は、以下:過酸過水素、その塩、及び他の無機酸、又は過炭酸塩、過硫酸塩及び過ホウ酸塩のような塩を含む。有機過酸化物の非限定的例は、以下:ベンゾイル過酸化物、tert-ブチルベンゾイル過酸化物、並びに他のアルキル及び/又はアリール過酸化物を含む。過酸の非限定的例は、以下:過ギ酸、過酢酸、過乳酸、過グリコール酸、クロロ過安息香酸、過ヘプタン酸、過オクタン酸、過デカン酸、過クエン酸、過安息香酸を含む。過エステル過酸の非限定的例は、以下:二価酸、モノエステル二価酸又はジエステルから得られるモノエステル過酸(例えば、アジピン酸、コハク酸、グルタル酸、セバシン酸、又はマロン酸/エステル、及びそれらの混合物)を含む。
組成物は、場合により、担体又は溶媒を含むことがある。担体は、水又は他の溶媒、例えば、アルコール又はポリオールでよい。メタノール、エタノール、プロパノール及びイソプロパノールに例示される低分子量の一級又は二級アルコールは、好適である。一価アルコールは、界面活性剤を溶解するために好ましいが、ポリオール、例えば約2〜約6個の炭素原子及び約2〜約6個の水酸基を含むもの(例えば、プロピレングリコール、エチレングリコール、グリセリン、及び1,2-プロパンジオール)も使用できる。
本発明の組成物は、場合により、硬成分(hardness components)及び用水(service water)の有害な効果を減少させるのに役立ち、及び生成物の安定性を改善する、多価金属の錯化剤又はキレート化剤を含む。キレート化剤又は金属イオン封鎖剤は、効果的に複合化し、活性成分との不適当な相互作用からかかるイオンを除くことができ、よって消毒剤の性能を増加させる。有機及び無機キレート化剤はいずれも使用できる。無機キレート化剤は、トリポリリン酸ナトリウムのような化合物、及び他の高級直鎖及び環状ポリリン酸種を含む。有機キレート化剤は、ポリマー性及び低分子のキレート化剤を含む。ポリマー性キレート化剤は、一般的に、ポリアニオン性組成物、例えばポリアクリル酸化合物を含む。アミノリン酸塩及びホスホン酸塩も、本発明の化合物におけるキレート化剤としての使用に好適であり、エチレンジアミン (テトラメチレンリン酸塩)、ニトリロトリスメチレンリン酸塩、ジエチレントリアミン (ペンタメチレンリン酸塩) を含む。これらのアミノリン酸塩は、一般的に、8個未満の炭素原子を有するアルキル基又はアルカリ性基を含む。
組成物は、場合により、増粘剤又はゲル化剤を含む。本発明において有用な増粘剤は、適用表面上に汚染残渣、すなわち、接触領域において食品又は他の敏感な製品とは適合しない成分、を残さないものである。
組成物は、場合により、発泡剤又は発泡界面活性剤を含むことがある。発泡界面活性剤は、非イオン性、アニオン性又はカチオン性でよい。有用な界面活性剤の種類の例は、以下:アルコールエトキシレート、アルコールエトキシレートカルボキシレート、アミンオキシド、アルキル硫酸塩、アルキルエーテル硫酸塩、スルホン酸塩、四級アンモニウム化合物、アルキルサルコキシン、ベタイン及びアルキルアミドを含むが、これらに限定されない。
本発明の組成物は、粘性を高め、又は厚くし、及び処理される表面に固着する水性処理を引き起こすための、1以上のレオロジー変更剤を含んでもよい。固着は、組成物を、長期間、一時的及び住み着いている病原菌と接触し続けさせることができる。それによって、微生物学的効力を助け、過剰の滴下による浪費を防いでいる。レオロジー変更剤は、フィルム形成剤でもよく、又はフィルム形成剤と一緒に働いて、追加の保護を与えるバリアを形成してもよい。
組成物は、場合により、洗浄力、表面湿潤力及び抗菌力に役立つための界面活性剤を含む。好適な界面活性剤は、非イオン性界面活性剤、アニオン性界面活性剤、カチオン性界面活性剤、両性界面活性剤、アミンオキシド等を含む。
組成物は、場合により、増強物質、例えば、テルペノイドを含む。テルペノイドは、イソプレン(2-メチルブタ-1,3-ジエン)単位からなる炭素骨格を含む分子構造を有する材料として定義される。イソプレンは、5個の炭素原子を含み、そのため、任意のテルペノイドの炭素原子数は、5の倍数である。テルペノイドは、細菌及び真菌の細胞による、抗菌性化合物及び防腐剤の取り込みを促進するのに役立ち、よって、抗菌化合物又は防腐剤の効力を増加させる、と考えられる。本明細書に参考としてその全体が援用される、米国特許第6,319,958号明細書及びドイツ特許第DE 195 23 320号明細書を参照。テルペノイドの非-限定的な例は、α-テルピネン、シネオール、シトラール、シトロネラル、シトロネロール、ファルネソール、ゲラニオール、リモネン、リナロール、メトネ、ネロリドル、テルピネオール、カンフェン、メントン、ミルセン、ネロール、テトラヒドロゲラニオール、テトラヒドロリナロール、アプリトン、及びビサボロールを含む。テルペノイドは、好ましくは、ファルネソール、ネロリドル、ビサボロール又はアプリトンである。
組成物は、食品に所望の風味を与えるための、又は望ましくない風味をマスクするための風味助剤を含むことがある。風味助剤の非-限定的な例は、マリネ、テンダライザー、及び典型的に食品と関連するスパイスを含む。
本明細書で用いられる用語「食品」又は「食物」は、ヒト又は哺乳動物によって消費され得る任意の食物又は飲料の品目を意味する。「食品」又は「食物」の非-限定的な例は、以下を含む:すぐに食べられる(「RTE」)肉製品及び鶏肉製品、加工された肉製品及び鶏肉製品、調理済の肉製品及び鶏肉製品を含む肉製品、並びに牛肉、豚肉及び鶏肉製品を含む生の肉製品及び鶏肉製品;調理済の及び生の魚、えび及び貝を含む魚製品;丸ごと又はカットされた果物及び野菜、及び調理済の又は生の果物及び野菜を含む製品;ピッツァ;できあがったパン及びパン生地;チーズ;卵及び卵製品、及び予め作られたサンドウィッチのような予め作られた食品。本発明は、特に、肉製品及び鶏肉製品に有用である。肉製品の具体的な例は、RTE調製食料品又はランチョンミート、例えば七面鳥、ハム、及びローストビーフ、ホットドッグ及びソーセージを含む。加えて、本発明は、ベーコン、及び予め作られた、予め組み合わされた、又は予め包装された食事、例えばTV食及び電子レンジで調理可能な主菜(micro waveable entrees)又は食事で、使用され得る。
抗菌組成物は、食品の包装前、食品の包装後、又は食品の包装と実質的に同時に食品に適用することができる。あるいは、組成物は、包装なしに食品に適用することができる。
以下は、本発明の方法で使用されるオクタン酸組成物の例であって、オクタン組成物は、模擬の収縮トンネルを食品が通過することによって活性化される。
以下の実施例は、RTEオーブンロースト七面鳥胸肉に接触しているL.モノサイトゲネスを減少させることにおける、1.0%オクタン酸の効力を決定した。そこでは、オクタン酸は、食品の、模擬の浸漬型収縮トンネル通過を模倣することにより活性化された。本実施例のために、カップラーとして3%ポリソルベート20を用いる1%オクタン酸の溶液を調製し、2.55%クエン酸を用いて酸性にした。4つの試験溶液を調製し、1.08%以下の水酸化ナトリウムを用いて、各pHをpH 2〜pH 5の異なったpHに調整した。リン酸緩衝希釈水に懸濁した、ATCC 19112、ATCC 19114、ATCC 19115、ATCC 7644、及びNCTC 10890を含む5種類のL.モノサイトゲネス株の当量混合物を接種材料として使用した。試料表面を50マイクロリットルの接種材料で点-接種した。接種材料を殺菌済みの曲がったガラス製ロッドで延ばした。その後、5℃で10分間保存し、細菌を張り付けた。接種した七面鳥試料を収縮バッグに移した。15ミリリットルのオクタン酸調合物をバッグに加え、直ちに、真空-包装し、200°Fに加熱した水に10秒間浸漬し(処理試料)、又は2秒間浸漬した(非処理対照試料)。1処理当たり3回反復した。試料を5℃で2時間保存し、その21日後に、L.モノサイトゲネスの集団を分析した。バーモント大学の培養液の50ミリリットルを各バッグに加えた。RTE七面鳥胸肉を50回、回転させ、得られた懸濁液を改変オックスフォード培地アガーに播いた。プレートを35℃で72時間インキュベートし、その後、L.モノサイトゲネスを計数した。
以下の実施例は、本発明の方法において使用される場合に、七面鳥のフランクフルトソーセージに接触しているリステリア・モノサイトゲネスを死滅させることにおける、オクタン溶液の効力を決定した。そこでは、オクタン酸組成物は、食品の、模擬の浸漬型収縮トンネルの通過を模倣することによって活性化された。
以下の実施例は、ローストビーフに接触しているL.モノサイトゲネスに対する1.0%オクタン酸溶液の効力を決定した。
Claims (8)
- すぐに食べられる肉製品又は鳥製品への適用のための抗菌組成物であって:
(a) 0.1 重量%〜5 重量%のオクタン酸;
(b) クエン酸、リン酸及びこれらの混合物から成る群から選択される酸味料;
(c) クエン酸塩、リン酸塩及びこれらの混合物から成る群から選択される緩衝剤;
(d) 0.05 重量%〜10 重量%の、ソルビタンエステルとアルキルポリグリコシドの混合物;及び
(e) 水、プロピレングリコール及びこれらの混合物から成る群から選択される担体から成り、
ここで、該組成物はGRAS又は食品添加成分である物質のみを含み、そして該組成物は、食品が包装され、かつ抗菌組成物を活性化する熱に曝露された後に、食品上に残るように適用されることを特徴とする、組成物。 - 前記オクタン酸が、オクタン酸のエステル又は塩である、請求項1記載の組成物。
- 濃縮組成物である、請求項1記載の組成物。
- すぐに食べられる (ready-to-use) 組成物である、請求項1記載の組成物。
- 食品への適用のための抗菌組成物であって:
(a) 0.1 重量%〜5 重量%のオクタン酸;
(b) クエン酸、リン酸及びこれらの混合物から成る群から選択される酸味料;
(c) クエン酸塩、リン酸塩及びこれらの混合物から成る群から選択される緩衝剤;
(d) 0.05 重量%〜10 重量%の、ソルビタンエステルとアルキルポリグリコシドの混合物;及び
(e) 水、プロピレングリコール及びこれらの混合物から成る群から選択される担体から成り、
ここで、該組成物はGRAS又は食品添加成分である物質のみを含むことを特徴とする、組成物。 - 前記オクタン酸が、オクタン酸のエステル又は塩である、請求項5記載の組成物。
