Abstract
La presente invencion se relaciona a un metodo para preparar un producto alimenticio el cual comprende sabores, y a un metodo para reducir la perdida de los sabores en un producto con sabor debido a los tratamientos de calor. La perdida de sabores por evaporacion en altas temperaturas puede ser prevenida al aplicar soluciones de recubrimiento en las cuales se han mezclado agua y sabores encapsulados en 0.5% a 30% en peso de capsulas basadas en microorganismos, un componente de matriz y sabores encapsulados. La solucion de recubrimiento es aplicada en procesos de recubrimiento a alta temperatura o procesos que incluyen el tratamiento con calor que sigue a la etapa de recubrimiento y resulta en la retencion sorprenden de sabores en el producto alimenticio recubierto.
