Abstract

Patente de Invenção "PROCESSOS PARA TRATAR UMA SOLUçãO AQUOSA DE PROTEìNA E PARA PRODUZIR UM GêNERO ALIMENTìCIO à BASE DE CARNE, MISTURA DE SOLUçãO DE PROTEìNA/HIDROLISADO TRATADA COM CALOR, OU HIDROLISADO LìQUIDO TRATADO COM CALOR, GêNERO ALIMENTìCIO à BASE DE CARNE E USO DA MISTURA DE SOLUçãO DE PROTEìNA/HIDROLISADO TRATADA COM CALOR, OU DE HIDROLISADO LìQUIDO TRATADO COM CALOR". Um processo para tratar uma solução aquosa de proteína de modo a matar microorganismos que podem estar presentes dentro da mesma, mas sem causar coagulação, compreende: quer misturar a solução com suficiente hidrolisado de proteína enzimaticamente produzido (H1) para prevenir a coagulação da mistura quando a mistura é subsequentemente submetida ao tratamento com calor para matar microorganismos, e depois submeter a mistura a um tal tratamento com calor; quer usar uma ou mais enzimas para hidrolisar proteína na solução aquosa de proteína em uma extensão suficiente para prevenir a coagulação de o hidrolisado líquido (H2) resultante quanto ela é subsequentemente submetida a um tratamento com calor para matar microorganismos, e depois submeter o hidrolisado líquido H2 a um tal tratamento com calor. O uso de soluções aquosas de proteína tratadas deste modo na produção de um gênero alimentício, tal como gênero alimentício à base de carne, contribui muito significativamente para reduzir o risco de contaminação do alimentos por meio de microorganismos nocivos.
