Abstract

MÉTODO PARA PREPARAR UM COMPONENTE FLAVORIZANTE, PRODUTO ALIMENTÍCIO, COMPONENTE FLAVORIZANTE, E, MÉTODO PARA PREPARAR UM QUEIJO FLAVORIZADO. Um componente flavorizante de cheddar biogerado natural estabilizado, que pode ser usado para preparar produtos alimentícios tendo características flavorizadas de queijo de estilo tradicional, e é fornecido um processo para a fabricação do componente flavorizante de cheddar biogerado. O componente flavorizante de queijo é estabilizado contra o desenvolvimento de mícroorganísmos de deterioração ou patogênícos. O componente flavorizante de queijo estabilizado e obtido de uma fonte de bacteriocina como parte do processo de fermentação que acelera pelo menos parte do tempo de fermentação necessária para o desenvolvimento de flavor. A inclusão de barreiras m~ícrobianas secundárias são também fornecidas. Portanto, os tempos de produção podem ser significativamente reduzidos com relação ao componente flavorizante da presente invenção sem perda de flavor e enquanto melhora a estabilidade microbiana. O componente flavorízante pode ser usado no queijo processado, produtos tipo queijo processados, ou outros queijos. O componente flavorizante pode também ser usado como um sistema flavorizante natural em outros produtos alimentícios.
