Abstract
"PROTEìNAS EXTRAìDAS DO SORO DO LEITE NANOPARTICULADAS". A presente invenção refere-se a um método para a produção de proteínas extraídas do soro do leite em forma nanoparticulada e as proteínas extraídas do soro do leite nanoparticulares então obtidas. Especificamente, a presente invenção inclui o uso dessas proteínas extraídas do soro do leite nanoparticulares como emulsificadores, substituto de gordura, branqueador, espumante, texturizador e/ou agentes de preenchimentos.
