Abstract

Un método para elaborar proteínas de suero en forma nanoparticuladas y con las proteínas de suero nanoparticuladas que se obtienen. Específicamente, la presente se refiere al uso de dichas proteínas de suero nanoparticuladas como emulsificantes, sustitutos de grassa, sustituto de caseína micelar, agentes blanqueadores, formadores de spuma, de textura y/o agentes de relleno.
