Abstract

"COMPOSIçãO DE RECHEIO CREMOSO E MéTODO PARA PREPARá-LA". A presente invenção refere-se a uma composição de recheio cremoso que inclui: - uma fração lipídica composta de um óleo vegetal tendo um SFI de 0 em temperatura ambiente, uma fração de gordura saturada representando entre 0% e 5% p/p da fração lipídica total e uma fração de gordura parcialmente hidrogenada representando entre 0% e 1% p/p da fração lipídica total, - uma composição de adoçante em pó, - e uma fração de glúten de trigo tendo um aumento no teor de gliadina comparado ao teor de gliadina natural do glúten de trigo. A invenção refere-se adicionalmente a um método para preparação de tal composição de recheio cremoso e composições alimentícias que contêm essa composição de recheio cremoso.
