Abstract
Patente de Invenção "COMPOSIçãO EMULSIFICADA áCIDA DE óLEO-EM-áGUA". Caracterizada pelo fato de que é descrita uma composição emulsificada ácida de óleo-em-água, compreendendo uma fase de óleo possuindo um conteúdo de diglicerídeos de 30 de % de peso ou maior e uma gema, na qual uma proporção de lisofosfolipídeos com relação à totalidade de fosfolipídeos é de no mínimo 15% em termos de uma quantidade de fósforo. A composição possui excelentes estabilidade de armazenagem, aparência, sabor e propriedades físicas mesmo contendo diglicerídeos em uma concentração elevada sem decréscimo da quantidade de gema.
