Reivindicacion 1: Una molécula de ácido nucleico aislado que codifica una enzima delta-9 desaturasa que comprende una secuencia de aminoácidos al 80% idéntica a una secuencia seleccionada del grupo que consta de la SEC ID Nro.: 12, SEC ID Nro.: 13, SEC ID Nro.: 14, SEC ID Nro.: 50, SEC ID Nro.: 51, SEC ID Nro.: 52, SEC ID Nro.: 72, y SEC ID Nro.: 73. Reivindicacion 5, Una enzima delta-9 desaturasa aislada que comprende una secuencia de aminoácidos al menos 80% idéntica a una secuencia seleccionada del grupo que consta de la SEC ID Nro.: 12, SEC ID Nro.: 13, SEC ID Nro.: 14, SEC ID Nro.: 50, SEC ID Nro.: 51, SEC ID Nro.: 52, SEC ID Nro.: 72, y SEC ID Nro.: 73. Reivindicacion 6: Un polipéptido quimérico de delta-9 desaturasa que comprende la SEC ID Nro.: 72 y/o SEC ID Nro.: 73, donde el polipéptido además comprende una secuencia de aminoácidos seleccionada del grupo que consta de la SEC ID Nro.: 77 y SEC ID Nro.: 78. Reivindicacion 7: Un método para disminuir la cantidad de ácidos grasos saturados en una célula, que comprende: transformar una célula con la molécula de ácido nucleico de la reivindicacion 1, de manera que disminuya la cantidad de ácidos grasos saturados en la célula. Reivindicacion 18: Un método para crear un vegetal disenado genéticamente por ingeniería que comprende cantidades reducidas de ácidos grasos saturados en el vegetal en comparacion con el vegetal de tipo silvestre, y dicho método comprende: transformar un material vegetal con la molécula de ácido nucleico de la reivindicacion 1; y cultivar el material vegetal transformado para obtener una planta.
