Abstract

Reivindicacion 1: Una composicion láctea o de un sustituto lácteo liofilizada, aireada que comprende: un ingrediente lácteo; un emulsificador; un mejorador de la viscosidad; en donde dicha composicion láctea está pasteurizada. Reivindicacion 23:Un método de preparacion de un producto lácteo o de un sustituto lácteo liofilizado, aireado, que comprende los pasos de: (a) proveer una mezcla láctea o de sustitutos lácteos; (b) agregar un emulsificador a la mezcla; (c) procesar térmicamente lamezcla láctea o de sustitutos lácteos; (d) fermentar la mezcla (e) mezclar un gas con la mezcla; (f) airear simultáneamente el gas y la mezcla láctea o de sustitutos lácteos para formar un producto aireado; (g) formar porciones del producto aireadocon un tamano y forma predeterminados; (h) enfriar las porciones; y (i) liofilizar las porciones.
