Abstract
Método para producir un extracto de mosto, comprendiendo dicho método: a) remojar materiales de partida particulados, que contienen almidon y opcionalmente malteados con una corriente acuosa recirculada; b) calentar el mosto e hidrolizar enzimáticamente el almidon; c) transferir el mosto tratado térmicamente a un primer separador para su separacion en extracto de mosto y cebadilla; d) transferir la cebadilla a un primer recipiente de mezclado y mezclarla con agua de rociado; e) transferir la mezcla de cebadilla y agua de rociado a un segundo separador para eliminar la cebadilla; f) recircular una corriente acuosa del segundo separador a la etapa de remojado de la malta, en el que la densidad del extracto de mosto fermentable obtenido del primer separador se mantiene superior a los 1 5°P. El presente método ofrece la ventaja de que es altamente eficaz en cuanto al consumo de energía y los rendimientos de extraccion. Además, el presente método consigue una productividad extremadamente alta en el funcionamiento de la fábrica de cerveza. También proporciona un aparato para llevar a cabo el método anteriormente mencionado.
